milk dominates the south - they thrive where cattle cannot. This nutty wheel has a richness and tang

An Italian American purveyor in San Francisco developed Dry Jack. In the 1930’s Tom Vella of Sonoma,
California perfected his own version. A cow’s milk, pressed then dried, soaked in brine for 3 days, then
aged for 7 months. The natural rind is preserved with a coating of oil, pepper & cocoa. An American treasure. Pair primarily with medium to full-bodied fruity red wine.

Giacomo, usually makes cow’s milk fresh mozzarella according to the demand to ensure freshness.
