• 3 potatoes, peeled and chopped
• 200g salmon (without skin),
cut into chunks
• 200g pollock, cut into chunks
• 100g shelled prawns
• 600ml milk
• 60g butter
• 40g plain flour
• 100g hot smoked salmon,
cut into chunks
• 100g sweetcorn
• Small handful of grated cheese
• 100g frozen peas
• 2 carrots, peeled and thinly sliced
• 1 tsp honey
• 1 tsp mixed herbs
• 1 tsp mint jelly
• Salt and black pepper
10 mins prep, 50 mins cooking
Ask an adult’s permission before you start.
Preheat the oven to 200C/392F.
Put the peeled potatoes into a pan,
cover with boiling water, and cook
for 10–14 minutes, or until tender.
Whilst the potatoes are bubbling away,
pour 600ml of milk into a pan and add the
fresh fish – salmon, pollock and prawns.
Cook the fish by poaching in the milk. Put the
pan of milk and fish onto a medium heat.
Once the milk is simmering (bubbling gently)
leave to poach for 3–4 minutes.
Use a large spoon to take the fish and prawns out of
the pan and pop into the pie dish. Check the fish for any
bones. Keep the milk to one side – you’ll need this later!
Time to get impressive – make a
creamy roux! Put 40g of the butter
into a saucepan and melt over a
medium heat. Add the flour, stirring
all the time, until it turns into a paste.
Gently pour the milk (that you cooked the fish in) into the
pan, while whisking all the time. Don’t worry if it looks a
bit lumpy, just keep stirring until it’s smooth and thick!
Add the sweetcorn and
hot smoked salmon to the
cooked fish in the pie dish.
Pour in the ravishing
roux, covering the
fish and sweetcorn.
Mash the potatoes with the remaining milk
and butter, and season with salt and pepper.
Top the pie dish mixture with the creamy potato.
Almost done! Finally sprinkle over
the cheese. Place your perfect pie
in the oven for 15–20 minutes, or
until golden and bubbling.
While the pie is cooking put your peas
and carrots on to boil for 2–3 minutes.
Stir carrots through with honey and mixed
herbs and peas with mint jelly. Remove the
golden pie from the oven and serve with
the peas and carrots. Voila! Fish in a Dish!
