ROTARY CLUB OF
PLACENCIA NEWS
May was another busy month for the
Rotary Club of Placencia as we held one
of our favorite annual events, held
another Bingo game, prepared for
Lobsterfest, and made plans for Rotary
Year 2010 – 2011, which begins in July.
SENIOR LUNCH
Two years ago, Lydia Villanueva suggested that the Rotary Club of
Placencia host a lunch for the senior citizens. The event, held at
Cozy Corner, proved to be very popular with those attending and
the Rotarians that participated resulting in the second one being
held last year at Wendy’s with the guest list expanded. On May 16,
the third annual Senior Lunch was held at D’Tatch with over 40
seniors from Placencia Village and Seine Bight Village attending
including (we apologize for any names we may have missed) Jessie
Eiley, Joyce Eiley, Celia Muschamp, Sonia Leslie, Lucille
Villanueva, Carline Wiley, Louise Wade, Emma Westby, Mertis
Villanueva, Elise Leslie, Udith Westby, Marie Martin, Lilly Eiley,
Ruby Bull, Pearl Leslie, Hortence Cabral, Nick Nicolait, Lou
Nicolait, Evan Fairweather, Alma Fairweather, Edith Latchman,
Juan Caducio, Jim Weller, Bob Edmond, Suzanne Riegel,
Josephine Leslie, Lily Andrews, Lawrence Augustine, Olivia
Palacio, Petronino Alvarez, Florence Augustine, Rojelia Estrada,
Estelle Augustine, Balbina Guzman, Ina Martinez, Daniella

Rotary Club President Harald Wallen, Lydia Villanueva led the
blessing and a delicious lunch was served. After lunch, our
Mistress of Ceremonies Maretha McCullock led our guests through
several raffles and bingo games and prizes

The Placencia Breeze reported
last month about an ambitious
group of “locals” planning to
tackle Victoria’s Peak – the
tallest
mountain
in
Belize. Their journey turned
into quite an adventure.
The team left Placencia on a
clear Thursday morning. David
Vernon, Cassie Dial, Kristine
Small, Fiona Macfarlane &
Boris Mannsfeld were well
prepared and excited about the
adventure ahead.
Cassie
provided the vehicle. Curiosity
and years of desire to climb the
famous peak visible from
Placencia provided the fuel. We were off. Now or never!
After picking up our mandated guide – Carlos - & 2 more
teammates from Punta Gorda (Alison & Phillip) at Maya
Center we headed to the welcome center at the Cockscomb
Wildlife Reserve to start our trek. The team divided up the
food, bought some last minute Snickers bars (i.e. life
savers!), adjusted our packs so to make sure they weighed a
maximum of 30 pounds and fueled up on plenty of
water. We also split up the 3 dozen fresh Johnnycakes that
we picked up in Placencia. Off we were!
We all enjoyed a casual (i.e. warm up) four hour hike to the first
designated campsite at 12 KM (Kilometers). Creeks along the way
provided us with refreshing drinking water. Nuts, cheese, Johnny
cakes and chocolate kept us going. The sound of Howler Monkeys
and a fresh Jaguar track reminded us that we were in the middle
of nowhere and on our own. The campsite was very basic yet the
thatch covered gazebo was much appreciated. As we were hanging
our special jungle camping hammocks amongst the trees we were
startled by a flock of huge birds landing in the trees just above our
heads. Six amazing Scarlet Macaws decided to dine for an hour on
fruits in the trees right here at our camp site. WOW! The colors
they displayed were simply spectacular. Later while we were
relaxing in the nearby river the Macaws decided to say goodbye by
flying right over us and down the river. Later we all enjoyed a
nice well earned dinner (rice and beans), campfire stories &
entertainment (Boris trying to hang the food bag from a tree)
before calling it an early evening. We all slept like bears during
hibernation.
The next morning we got an early start. We quickly realized that
our well planned preparation for the trip was a bit
miscalculated. We had packed enough rice and beans and oatmeal
for not one trip to Victoria’s Peak but TEN! We decided to leave
some of the extra food and gear here to be picked up on our way
out. No need to carry more weight on our backs than absolutely
necessary.
As we were reorganizing our packs our well
experienced guide (50+ trips to Victoria’s Peak) just sat in

Off we were to the base camp at

kilometers. Could not be too
hard?! Think again. The day
consisted of hiking up one ridge,
down the other
side, filling up
with water in the
stream and then
hiking back up
the
other
side. Repeat this
for 4 hours in a
wet
muddy
jungle, add some
heavy jungle rain
and you get an
idea about the
excitement we all
experienced when
we
finally
reached the new
camp site for the
night. We quickly setup our “beds” (i.e. hammocks) underneath
the tree canopy, got a warm fire going to dry out our soaked shoes
and socks and fired up the camping stove so to get some warm tea
started. We were all pretty exhausted so we appreciated some
time to bathe in the refreshing waterfall, relax by the camp fire
and slowly watch the day come to an end.
Five am arrived quicker than anticipated. It was our big day to
hike to the top of Victoria’s Peak! Unfortunately some of us did
not sleep as much as desired since a group of 8 guys from Belize
City arrived the night before and they were loud and inconsiderate
as they camped in the same camp site.
We made a quick
breakfast of oatmeal, raisins and brown sugar, filled up our water
bottles, adjusted our packs and slipped on our now dry socks and
shoes. We were on our way to the top of Belize with only 11 hours
of rigorous jungle hiking ahead of us! This day was filled with
some extreme hiking, very slippery & muddy slopes and plenty of
creek crossings. 4 hours later we finally arrived at the base of
Victoria’s peak where the trail transformed from dirt to a rocky
creek bed. It was here where we encountered the 5 hikers from the
first group (4 stayed at camp and were too tired to even come this
far) returning. They decided not to go any further because they
thought the rocky section ahead of us was too challenging. They
told us we will not be able to make it to the summit. We thanked
them, rested a few minutes and moved on. 1 ½ hrs later we finally
reached the very start of the rock section that had put an end to
the previous group’s summit attempt. Our

was ok to proceed. We utilized a rope that David had brought so to
assist us through some of the questionable sections. The entire
team continued to advance in unison. We were now clinging to
the side of the mountain way above the tree canopy and our view
was like that of a hawk soaring over hundred year old hardwood
trees for as far as one could see. Amazing! We were cautious yet
optimistic until we reached a gnarly section that traversed the side
of the mountain. The 6” narrow foot path was carved out of a wall
of near vertical rock covered in yellow and green moss as soft as
cotton. Some of the team decided this was as far as they were
going to go.
Four team members decided to move forward as
Carlos assisted part of the team back down to the start of the
trail. Cassie, Philip and Alison continued on as Boris, who had
considerable mountain climbing experience and in possession of
some climbing equipment, led the way. At times we were
progressing amongst the clouds!

we had started the journey. We got a bit of a second wind when
Boris pulled out of his pack a surprise...Coconut rum & Pineapple
juice! Time to celebrate!
The next day we rose with the sun, applied duct tape to our
blisters, ate yet another round of oatmeal and slowly but surely
traced our original 2 day hike back to the visitor center in just one
day. It was long yet rewarding. We passed the 2 emergency
helicopter landing sites, a gazillion creeks, leaf cutter ants hard at
work, ancient trees and mother nature at its best – undisturbed,
resilient and in harmony. 11 hours later we were packed in the
pickup heading for the nearest bar with David still barefooted like
he was on the entire hike. Victoria’s Peak is truly one of Belize’s
ultimate adventures.
After traversing various severely exposed sections (“Don’t look
down!”) the team finally reached the vertical rock section with the
fixed rope. We had no idea what lied ahead, how long the section
was or what was involved. The guide was still far below. Boris
took the lead and climbed up the wet rock wall utilizing the
rope. How old was it? Would it hold? The team took turns and
one by one we made it to the rope’s end only to look down and
realize that had we fallen it would have been 30’ straight down to a
small landing and then another thousand feet straight down the
side of Victoria’s Peak. Ouch! 15 minutes later Cassie, Philip,
Alison and Boris were standing on top of Belize! WOW!
We enjoyed some spectacular views of the jungle below
when all of the sudden the mountain clouds started moving in. We
celebrated with a group hug, shot some video, signed the register
book and started heading back down when our guide arrived. 5
hours later (total time of 11 hours that day) we were all back at
base camp anxious to take our soaked shoes off and to allow our
aching feet to breath. We were all beat, proud of our
accomplishments, happy to have the day come to an end yet
nervous about the 19 km (12 mile) hike out the next day with

making this happen. Based upon the positive feedback we receive
from our guests and the pleasure we get as a Club putting on this
event, we hope to continue to do this every year and, possibly, look
in to some additional events for the people that have made this
Peninsula what it is, our senior citizens.
BINGO
On May 22, Bingo returned to the Paradise Resort as our monthly
game was held. Caller Kathy Anglin led the players through 15
games with the winners being Celia, Blu, Bill, Ivan, Sandra,
Kendra, Kim, Betty, Suzanne, Zazy, Miss Louise, Cheryl, Keith,
Cheryl, and a split pot with Cheryl and Bob. The money raised will
go to the Social Security Board’s “Ride Across Belize” (see next
section) and will be matched by the Social Security Board. We wish
to thank, once again, the Paradise Resort for providing the venue
for the evening and everyone that came out to play and support us.
The next Bingo game will be held in June, please watch the cable
TV local access channel, look for flyers around the Village, or listen
to LOVEFM for the date and time.
RIDE ACROSS BELIZE
On Sunday May 30, several members of the Rotary Club of
Placencia made the boat ride over to the junction to Independence
to assist the Social Security Board in the Ride Across Belize by
handing out water to the riders as they made their way from
Dangriga to Punta Gorda on the last leg of the ride. Unfortunately,
we arrived just as the last of the riders was passing through, but,
we were able to hand over the check for the funds raised at the last
bingo game, so it wasn’t a total loss. The money raised from this
year’s ride will be matched by the Social Security Board and all
proceeds will go to the Rotary Gift of Life
Program, which provides medical care to
children with heart problems. We are grateful
for the opportunity to assist in this important
fund raiser and hope that a significant
amount of money was raised for this worthy
cause.
UPCOMING EVENTS
With Rotary Year 2009-2010 coming to an
end, the Rotary Club of Placencia is preparing
for the transition to the new President and
the new Board of Directors by holding a joint
Board meeting and making arrangements for
the annual Handing Over Ceremony at the
beginning of July. For the rest of this Rotary
Year, work continues on the final planning for
our shared booth (with the Peninsula
Volunteer Fire Department) at Lobsterfest
and the finalizing of details for the
Scholarship Program (along with Mr.
Longsworth of Independence High School). In
addition, our monthly Bingo game will be
held with details to come (see above). Several
community projects have already been
identified for the coming Rotary Year, which
we will describe further when details are finalized, and larger
projects are being reviewed for possible funding from outside
sources, so, this next year shows promise to be our most successful
year to date.
OUR CLUB
As can be seen in these monthly articles, our 15 member club
accomplishes many things through the course of the year from
small community projects such as the cemetery cleanup to raising
funds (and obtaining funding from outside sources) for larger
projects such as the schools and the Peninsula Volunteer Fire
Department. We do all of these things, and have fun doing them, to
give back to our community and try to make it the best it can be,
but, without the help and support of the community, we are
limited in what we can accomplish. Please consider stopping by
one of our weekly meetings (Tuesdays at 12:30 PM at Yoli’s) to see
what we are doing, speak to any Rotarian with any questions you

The more people from the community that participate, the more we

Do you have the right nutrition combination to burn fat?
Last issue we talked about the importance of
mixing up your exercise routine, not doing the
same things over and over again. Now lets talk
about nutrition.
Lets start with some simple tips:
1. Drink 2 glasses of water right when you wake up. Then wait 15
– 30 minutes to eat
breakfast. This will get your metabolism
going for that day.
2. Make sure to eat 5 – 6 small meals throughout the day. NOT 2
– 3 large meals a day. Your metabolism will speed up by eating
this way.

Why not just count calories? I am not a big believer in counting
calories. All calories are different and burn fat at different rates.
Basing a diet only on calories makes it difficult to keep muscle and
burn fat. Yes, with a sudden strict calorie diet, you will lose some
fat at first, but that will slow down your metabolism. You will end
up gaining your weight back.
You need to focus on quality small meals with protein,
carbohydrates, and vegetables or fruit, for each meal.

of her peers from the 2nd Independence Junior College

Spotlight on Placencia BTIA - Rumfish Y Vino
A story of ‘kismet’, timing, and a little romance.

Rumfish y vino opened in
November of 2008.
John and I
married June 21st 2008 on
Ambergris Caye, Belize. I had
been traveling here for years
visiting my good friends who own
El Pescador Lodge there. Over
the years, I was offered a few
interesting job opportunities, none
of which ever panned out. In 2006
I was offered a job in Hopkins to
run a small resort. I was only a
few weeks away from my
departure date when the owners
called me to tell me they were
selling it and I would not be
moving to Belize to run their
resort after all.
I was devastated, but it was that night that John and I
had our first date. I cried into my wine glass that I
would not be moving to Belize, and yet finding
myself glad that I would be able to pursue this
budding romance! Two years later when John
proposed and asked me where I wanted to be
married, we both said at the same time- Belize! So
the plans were made, and we decided to honeymoon
in Placencia at Turtle Inn. I had heard about the
Placencia peninsula for years but had never been.
Additionally, I was in the wine business in California
and wanted to go somewhere that I knew I could
enjoy good wine (not to mention the fact that my
whole family was staying in San Pedro and who
wants to honeymoon with your family!!).
It so happened that I had known of the owners, Frank Gagliano and Yvette
Guild, of the Placencia Village Square through some different friends. At the
time Frank Gagliano also had a sailing charter company. It was my friends at
El Pescador (Yvette was their accountant) that suggested as we were leaving
to head to Placencia, that we should look them up. Perhaps we could go on a
day sail with him. And so we did. Although, we never did actually get to
sail, but we did get to talking. At the time, John and I were living in New
York City. Over the years we had both had jobs in the Food & Beverage
industry. John primarily in restaurant management, managing some of the
best restaurants in LA, and in NY he was in food distribution, and where I
worked for a wine & spirits supplier. We had a 'restaurant project’ in the
works too that we had put the project in the backburner until after our
wedding. It just so happened (unbeknownst to us) that our friends renowned
cookbook author Brigit Binns and her husband Actor Casey Biggs had also
booked at Turtle Inn after our wedding!
And so there they were on our honeymoon with us, and hearing the same
information we were from Mr. Gagliano which was, there is a great
restaurant location that is brand new and vacant, and he was looking for just
the right occupants. Attempting to respect our honeymoon and NOT do any
business (unusual for us as we were always looking for opportunity wherever
we went), we declined a trip to the village to check it out. It wasn’t until we
were standing outside of the Turtle Inn, luggage in hand, waiting for our taxi
to the airstrip that Frankie (Mr. Gagliano) screeched in and insisted, as our
friends had done incessantly all through breakfast, that we see the empty
space now known as Rumfish y vino. We had 30 minutes until our flight
departure, Frankie sent our bags to the airstrip, and called to say we would be
arriving just before takeoff, and then hurried us down to take a look. There
was not much said as we walked through, but inside John and I both knew,
this was our spot. Frankie was also flying to Belize City that morning, so he
met us at International, and it was there over a few Belikin that we drafted
the deal.
We flew back from Belize to our friend’s home in Upstate New York, the
same friends who were on our honeymoon with us. They did not have the
luxury of picking up and moving to Belize, but encouraged us to do it
without reservation. We sat on their screened in porch one afternoon when
we returned from our trip. We had planned on staying with them after our
honeymoon for a few days to work on our other restaurant project in there in
Upstate New York. Instead, we sat around thinking of names for our new
restaurant in Belize. We all agreed that we should incorporate rum, fish, and
wine…so, of course, we came up with Rumbar…Fishy Rum Bar…The
Winey Fish Bar…The Wishy Bum Bar…I actually can’t really remember
there was so many silly names, but we all came to “Rumbar” and sat with
that for a while. I was less than impressed because it sounded contrived and
because ‘wine’ was not involved in
the name. That would be a big part
of our offerings due to my insistence
on importing my own wines. John
decided to take a nap. The rest of us
hemmed and hawed over names. An
hour later he came out and said,
“Rumfish!” And I said, “Y vino!
And there it was- Rumfish y vino. Or,
rum, fish and wine!
Eight weeks later we arrived to
Placencia with our dog and a
container filled with everything you
need to outfit a restaurant on the water
right behind us, from the glassware to
the fabric…to the wine. And, eight
weeks after that, we officially opened
our doors.
Who makes Rumfish y vino what it is? In short,
John bust’s his ‘you-know-what’ seven days a
week, 10 hours a day. I was shoulder to shoulder
with him from the opening, until the spring when
I discovered I was pregnant and couldn’t be
around anything food related or otherwise
(terribly inconvenient in our business)! I was
really sick for months. All worth it, of course,
when we had our beautiful (and Belizean born)
baby girl, Libby, right smack dab in the middle
of high season three days before Christmas! So, I
give all my props to John. He continues to run
Rumfish tirelessly.
That being said, we couldn’t do any of it without
our fantastic and extremely committed staff. Our kitchen cranks out the best
and most timely food on the peninsula with great consistency, and our
servers provide excellent service that is noted time and time again on Trip
Advisor and in our own personal guest book at Rumfish. Without them, and
especially our incredible Chef Sam, we would be lost. Rumfish is what it is
because of them. Oh, and I should mention my Mother who spent 6 months
here caring for our baby (and us) while we worked like madmen during the
peak season! She just left this week to return to the states and I am on full
time Mommy duty which I love. I still manage to work a few nights a week
too.
Rumfish y Vino stands out because of our food, drinks, music, and
atmosphere. From what I read in our guest book- it’s a combination of things
that create a whole visceral experience. That was our goal and continues to
be our goal every day. Creating an atmosphere, an experience, that moves
people. I know that sounds silly, but people who come to Rumfish leave
feeling like they’ve had a complete experience. The breeze, the music, the
amazing cocktails and food…we strive for excellence in everything. The
best Pineapple Mojito, the best music, the best Ceviche, the best wine list, the
coldest draft beer, the most attentive service…etc. etc. Frankie pushed us
from day one on our concept and how to hone it and make it as specific as
possible. He helped us on many levels to pin point our potential and help us
make it a reality. But, really, I think what makes it so special is that for us
we are technically still on our honeymoon. Ok, yeah right!! No, really,
personally for me, I had such a desire to live in Belize for so many years, and
now I do! But, not as a single woman working for someone else. But
coming down with the man of my dreams, fulfilling my dream! And did I
mention I have a brand new beautiful baby! We are happy to be here and I
think we so enjoy what we do that people can feel that and want to be around
it.
We feel our biggest achievement is our broad appeal. So often you hear in
this business ‘you cannot be all things to all people’, but I think we have
come quite close. Our proudest moments at Rumfish are when we have a bar
filled with locals. It’s not the nights where we serve only a room full of
tourists that will be gone in a week that warms our hearts. But when the
room is sprinkled with all walks of life! The music is vibing…the beer and
wine flowing…our local fishermen are kicking back with a draft, next to
some of our local resort staff friends from Turtle Inn, Robert’s Grove, Chabil
Mar, or The Placencia, who are chatting with expats from Maya Beach, who
are sitting next to a couple on their honeymoon from San Diego, who are
talking to a group from Ontario they met that afternoon on a tour in Monkey
River, who’s guide is sitting there drinking a Mojito with them. It’s truly the
best!

Lish is 54yrs old. His trades are fisherman and
carpentry. He also has been a village council
member in the past.

Biography
Sinclair was born in Seine Bight and been living in
Seine Bight since 1985. He is the proud father of two
wonderful children.
A former student of
Independence High and later worked at the Belize
Central Prison now known as the Kolbe foundation.
Within the tourism sector he was previously an employee at the
Roberts Grove at the Habanero Marina Extension. He is proud to
be a member of the Seine Bight Village Council. His task that has
been given to him as a council member is the role of chairman of
the lands committees.

Biography
Franz Ramirez was born in Dangriga. His vocation
is as an entrepreneur. Spent his childhood visiting
his grandmother Aunt Chiggy who had the first
guesthouse in Seine Bight. Later moving to Seine
Bight as an adult. For many years he managed
along with his brother Krishner Ramirez the well known nightclub
Wamasa Bayabu on the beach in Seine Bight village, promoting
live bands from Dangriga and Belize City. He is currently the
Manager of Wamasa Watering Hole in Seine Bight; Franz has
always been a vibrant community activist. As a councilor of Seine
Bight Village Council he will work hand in hand with the people of
the community in every area of development, especially in
sanitation and infrastructure to help make Seine Bight a more
viable tourist destination.
Ms. Joyce Delvorine Mena Garcia

Biography
Joyce was born in Cayo District. Graduated from
Mopan Technical High, Benque Viiejo with High
School Diploma.
Following high school she
completed one year practical nursing at the Bliss School of nursing
in Belize City. She also worked part time for the general statistics
office in Belmopan. Moving to Seine Bight village in January 2001
and took up a new vocation within the peninsula’s tourism sector
housekeeping. She has worked for Lost Reef, Calico Jack’s, Maya
Breeze Inn and for the last five & half years she has working for
Drew & Karen Travers at” The Maine Stay “. Joyce is an avid
softball player having played International Softball representing
Belize in El Salvador, Guatemala and Columbia. Since 2008 she

clinic
at
the
Community Center in
Placencia.
Maddy was
there to greet everyone, get
the paperwork going and
answer any questions as the
pets and there owners
began to arrive. And arrive
they did! For those of you
who just have to know, here's some of what we did;
Cat Neuters - 3, Cat Spay - 5, Dog Spay - 2, Teeth Cleaning - 3,
Rabies - 27, 6/1 shots - 24, 4/1 – 9 shots
Special guest of PHS this month, 6 feral cats were spay/neutered,
bringing the total to 73 cats since the start of the Feral Cat
Program last October. The donations made to this program are
utilized for this service. It is nice to get this program back on track
after suffering a setback last month when Pat Rarrick, the head of
the program resigned unexpectedly. Her services as the Clinic
Coordinator and head of the Feral Cat Program will be sorely
missed. Special thanks to Debbie Coston and Shannon Romero for
their help in trapping and delivering this month’s felines.
It's the members and volunteers who are PHS. Some help at
clinics, others help with donations of their time or materials. A
call was recently put out for pillows, sheets and towels. The sheets
and towels are used at the clinics for every imaginable
purpose. The pillows will become stuffing in the new Dog Pillows
(Coming soon!). Special thanks to the Blue Crab, Toucan Lulu and
Graham Berrie for answering that call. And remember, PHS can
always use more. Drop them off at clinic or contact a PHS for
pickup. A special thanks to Jodie and Erin for the kennel they
donated.
Every month there will be a clinic special for current members of
PHS. This month it was 1/2 price Heart Guard Plus. Many of you
took advantage of the special and 14 new or renewed memberships
were purchased so that they could take advantage too. Other
membership benefits include; complementary pet pedicure at
monthly clinics, free Tropic Air emergency pet transportation to
Belize City for veterinary care (some restrictions apply), and email
updates for PHS info and events, adoption email updates. So if
you're not a member, maybe it's time you joined?
Everyone has been talking about how bad the fleas are lately. I
noticed many of the clinic patients were there for skin issues and
"sore spots", or just because of fleas. Hot spots on dogs and cats
are usually self inflicted sores that are red, wet and painful. Dogs
and cats will start scratching because of fleas, bug bites, or
allergies and open the skin to bacteria, which grows, spreads and a
hot spot develops These spots can become very large and grow
quite quickly.
Remember, pets with hot spots have another condition that started
the itching to begin with. The original problem needs to be dealt
with. If fleas are the culprit then a flea preventative needs to be
started. Something like Front line or similar products might work.
After treating the cause, the hot spot itself should be
addressed. An effective "home remedy" would be to mix 1/3
Listerine, 1/3 coconut oil and 1/3 water in a spray bottle. Spray on
affected area. In a severe case, infection is a serious danger and
veterinarian should be consulted.

Junior Volunteers, Evelyn and Kimberly from Seine Bight. Thank
you Robert’s Grove for you generously hosting Dr. Bennet this
month.

PICKLED PARROT 2010 CHILI COOK-OFF!

On Sunday, May 30, chili chefs
gathered at the Pickled Parrot
Restaurant in Plancencia for the 2010
Chili Cook-Off, sponsored by Old
Masters Rum (L&R Liquors) and
Wende Bryan owner of the Pickled
Parrot Restaurant. The entries were
hot, the beer was cold and the Old
Master Extra Mature Rum was
flowing!
1st Prize, the Golden Ladle and $50 gift
certificate, was won by Judy Mitchell. Judy is originally from
Alabama in the United States and has lived in Belize for
approximately 12 years. When Judy lived in Alabama, she used
pecans in her chili recipe but since she has been living in Belize,
she has replaced the pecans with cashews. Obviously, this
substitution works very well as it won Judy first prize!
Second Prize, $30 gift certificate, was won by the 2009 champion of
chili, Jerry Winters. Jerry does a beanless chili which is common to
Texas where he hails from, with lots of flavor and lots and lots of
heat! So much tasty heat, in fact, he won the Pickled Parrot’s
“Marie Sharp Award” which was awarded by popular vote to the
chef
who
used
Marie Sharp’s Hot
Sauce
in
their
recipe. A quote by
one of the judges
was “that last one
(Jerry’s) made the
back of my knees
sweat!”. What a
great slogan for
Marie Sharps! Jerry
won first prize in
last year’s Chili
Cook-off.
The chilies were available to everyone after the judging for $5 per
bowl with accompanying toppers, French bread from John the
Bakerman and corn bread. Of course, the Parrot still had lots of
cold water and beer to combat the hot chili bowls!
Pickled Parrot 2010 Chili Cook-off Marie Sharp
Award Winning Chili by Jerry Winters
“Rojo Grande” (beans optional)
1 bottle Belikin Beer
2lbs Beefmasters Ground Beef
1 small tin red enchilada sauce
2 tbsp chili powder
1 medium onion chopped
2 cloves of garlic chopped
1 pkg chili seasoning mix
1 small tin sliced jalapeno peppers
2 – 5 oz Marie Sharps Fiery Hot Habanaro Sauce
Salt to taste
In a slow cooker, add meat, beer, enchilada sauce and
chili powder. Cook on high for 2 and ½ hours.
Add remaining ingredients and continue cooking for 45
minutes.
Let stand overnight for flavours to blend. Bring to heat
next day and add more habanero sauce if needed!
Third Prize, $20 gift certificate, was awarded to a previous winner
from last year, Jack Linker. Congratulations Jack, two years
running for the prize!
Jim Menzies placed fourth with his chili by the judges and then his
recipe placed first in the popular vote. Mary Toy came in fifth
winning a coveted red cap. 3 honourable mentions went to Cheryl
Hanks, Russell Cyzernicki and Denise Williams. Thanks to
everyone for participating.
All participants received an Old Master/Pickled Parrot t-shirt.
This included the judges of the contest; Allyson Smith, Jodie Karr
and Lisa Hendershot-Harding. Thanks so much to you, what a
great job! We made sure they had lots of water between tastings.
Erin Park and Bagel Bob were the “Price Waterhouse” people of
the festivities…counted them twice to make sure the results were

2. All fish must be weighed-in same day as caught.
3. Fish may not be transferred from one boat to another boat.

The project took us almost three weeks to complete. We would
work from 7am until 11am, when we would have no choice, but to

Way Back When - Post Office in Placencia

From this phone I
would share all my
adventures
from
living in Belize
with my family. It
was from this very
phone I informed
my parents I was
getting
married
and staying in Belize!
The first few years I lived
in Placencia there was not
much going on, to say the
least!
Our power came
from the Co-op’s icehouse
generator. Our water came
from shallow wells dug into
the land next to our homes.
Phones were a luxury only
a handful of people had.
We had no T.V. The road
was a narrow, dirt strip
running down the backside
of the village.
One of the most endearing
memories I have of old Placencia was the post office
run by Miss Janice down at
the point.
This multipurpose building served as
a bar, the post office, tourist information office and
village phone. The building
over-looked the harbor and
was the hub of “downtown”

I lived at the “far” end of the village and I was often home alone,
with my man off leading tours around the country. Most people
gathered socially at bars. As someone who didn’t drink and not
comfortable hanging out in a bar, the post office was my big social
outing. I looked forward to the days I went to check mail.
A few times a week, I would walk down the sidewalk to Miss
Janice’s place to look for any letters from home and post what I
had written. Letters from home, which took about a month to
reach, were precious. We had no e-mail, no faxes. We didn’t even
have a phone in our home. Cell phones and computers were some
futuristic gadgets we couldn’t have imagined here in Placencia.
The community phone was in a plastic bubble on the side of the
open-air
building. This was not a pay phone. Ms. Janice
would call back the operator after each call to get the charges.
Every couple weeks I’d make a call home. . Of course, nothing was

and chat with Miss
Janice and whoever else was at
the bar.
Miss
Janice seemed to
have all the news
you could need. If
it was happening,
she knew about it.
1990’s
I probably learned
half of what I
know about living in Placencia from sitting at the post office talking with her. She was post mistress, phone operator, bar tender,
tourism information officer and general information bureau all
rolled into one wooden shack on the waterfront. To top that off
she was also a Justice of the Peace who officiated at my wedding!
Miss Janice could truly multitask like no one else on earth. She
was like our own Wizard of Oz running Placencia from behind the
wooden counter!
I can’t even remember when that multi-purpose building gradually
lost its purpose. I guess more and more residents had phones in
their homes. The post office moved into it’s own building. The bar,
however, it still stands and is still operated by Ms. Janice! JByrds. The building has changed over the years, but the location
is the same.
