entry port to Turkey (airport), look for
the visa desk (typically right before the
passport control). Present your
passport and $20.00 in cash and your
passport will be stamped with a single
entry visa.

WEATHER
The weather in Turkey is not as hot as
most people expect. In fact, most of
Northern and Eastern Turkey
experience snow in the winter. In the
summer though, the mercury rises and
pleasant days prevail, especially along
the Marmara, Aegean and
Mediterranean coastlines.
Although weather patterns vary in
Turkey, the climate in most major cities
may be compared to regions in the U.S.

CLOTHING
Comfortable casual clothes are
recommended. While touring, seasonal
comfortable clothing accompanied by
sensible walking shoes or sneakers is
advised. Please observe the proper
respect for any place of worship you
enter by not wearing shorts or
sleeveless shirts. Otherwise, both are
perfectly acceptable throughout
Turkey. During summer you will need
hats, sunscreen, and sunglasses.
Loose cotton clothing is the best.
Spring and autumn require layered
dressing. In the winter, especially

The unit of currency is the Turkish Lira
(TL). Traveler’s checks may be cashed
at all major hotels and banks. In
stores, major credit cards (especially
Visa and MasterCard) are widely
accepted. You can find ATMs
throughout Turkey where you can
withdraw cash with your credit card (or
debit card). There are currency
exchange offices in major cities and
touristic areas.

forget to get your 4 - digit pin code for
your credit and debit cards.

flights in the case that you may prefer
a different airline to use frequent flyer
miles or for any reason.

is considered safe to drink
in major cities. However,
since it’s heavily
chlorinated, we recommend

Geographically, Turkey straddles two continents, Europe and
Asia. It is situated at the outer edges of the Middle East, just to
the West of Iran, occupying Upper Mesopotamia and it is
surrounded by the Aegean and Mediterranean seas.
As such, Turkey is at the crossroads of
extremely diverse influences.
”
After having mixed their largely
shamanistic customs and traditions with
the Chinese, Indians and Iranians, by the
eleventh century, Turkish people found
themselves at the gates of Asia Minor, the
birthplace of several ancient civilizations,
like the Hittites, the Luwians, the Hurrians
and the Scythians.
In Asia Minor, Turks were also exposed to
Western influences through the
Phoenicians, Greeks, Romans and
Byzantines. When they combined all these
disparate elements with their recent
conversion to Islam, a unique mixture of
eastern and western know-how emerged.
That is how the Turkish cuisine came to be
a large synthesis of divergent elements.
Istanbul is at the heart of Armenian,
Jewish, Kurdish, Circassian, Arabic,
Russian, Balkan and Greek influences.

And it remains a major gastronomic
center with some exquisite specialties
that can only be found in the former
Ottoman capital.
A trip around Turkey is actually a
whimsical inventory of specific
regional culinary perspectives.
Whether at the market or at a private
home or in restaurants, you are
surrounded by the smells, colors and
endless variety of spices used in the
traditional cuisine.
On the Aegean coast, the "Zeytinyagli,"
dishes prepared with olive oil, get the
star billing and are served as
appetizers.
Fish also has a prominent place in that
region as well as different herbs
harvested in the countryside to be

used in salads and in tasty and original
dishes.
Rakı, an anise-based traditional
alcoholic beverage, usually
accompanies these delicious meals.
On the Mediterranean coast, fish and
sea food can be enjoyed by themselves
or as part of a meal that includes
regional kebabs such as Adana's.
In Central Anatolia, the breadbasket of
Turkey, the specialties center around
grain products. They can be used as
accompaniments, or to make puff
pastries "stuffed" with cheese, meat or
vegetables such as börek and pide; or
to make a ravioli-like pasta called
"mantı," which is often stuffed with
meat and served with a yogurt and
garlic sauce.
Lamb figures prominently in the
preparation of delicious dishes such as
"tandır" or "fırın kebabı" cooked slowly

Vegetables, which are produced in
large quantities in that region, are
used to prepare tasty soups (çorba)
and flavorful dishes.
In Eastern Turkey, a high altitude
region with harsh winters, local dishes
are frequently based on flour but also
include cheese and dairy products.
The Gaziantep region is one of the
three most famous gastronomical
regions in Turkey. Whether it is the hot
and cold appetizers called "meze" or
the infinite varieties of kebabs and
usually spicy meat dishes, the local
cuisine offers a symphony of flavors
that would make any gourmet very
happy. Needless to say, the meal will
always end with some desserts based
on pistachio or a "künefe" a tasty
specialty prepared by baking angel
hair pasta with a mild local cheese.
Going North towards the Black Sea,
you will discover various fish and fried
dishes prepared in different ways.
You will also discover vegetable
dishes, like the cabbage or cheese
specialties that make up a fairly rich
cuisine. This is in line with the high
calorie requirements of hard field
work typical of this region.
A little further southwest, by the
Syrian border, you find another Mecca
of gastronomy, Hatay and the
surrounding areas. The major
influences here come from the
neighboring country and equally from
the sizeable local Syriac community.
You will discover unique and highly
refined dishes there.
Returning back towards Istanbul,
another gastronomical center is
Bursa, famous for its Iskender kebab.
This is a dish composed of thin strips
of meat served with yogurt and spicy
clarified butter.
There are many different varieties of
eateries in Turkey, ranging from
"lokanta" which serve mostly home-style
meals, to "meyhane" which are taverns
where musicians will entertain you, as
well as seafood restaurants and "köfteci"
places. With such a wide selection, there
is something for every palate and every
budget.
Wherever you are in Turkey, you can have
"çay" (tea) any time of the day. That tea is
produced in Rize, in eastern Black Sea
region.
Turkish coffee is also part of the country's
heritage and after you enjoyed it, it could
also help you discover your future thanks

dishes prepared according to modern Turkish cuisine.
In fact, these dishes represent the rich and refined heritage of
Ottoman gastronomy. Some of them are a must.
Thus, we selected the best known and most popular of these
dishes for your enjoyment during our tours.
When Turkish cuisine is mentioned,
Westerners think of all those small
"kebab" restaurants that you see
everywhere in Europe. Unfortunately,
these places are far removed from the
best examples of Turkish cuisine.
"Kebab" means "grilled meat." You
find the term in the star dish "Döner
kebab" or in the spicy grills like the
"Adana Kebab" or the "Urfa Kebab"
etc. But this denomination could be
misleading as there are many dishes
which include other ingredients that
we also call "Kebab." The "Döner
Kebab" which can be directly
translated as the "Turning Kebab,"
consists of thinly sliced layers of meat
stacked on a vertical spit which rotates
in front of an open charcoal fire. As the
meat gets cooked, it is cut vertically in
thin slices. There are several varieties,

served with tomato sauce, yogurt and
Turkish flat bread called "pide."
In Turkey, the best known version is the
"Iskender Kebab" which we will get you to
taste in a large specialized restaurant in
Ankara. Still within the category of
"Kebab," we can mention the "Adana
Kebab" and "Urfa Kebab," which are
important specialties of the southeastern
cuisine. These are flat and thick skewers
of spicy minced lamb grilled on an open
charcoal fire. You will have the
opportunity to try several kinds of these
"Kebabs" at the last dinner of the tour in
Istanbul.
Among the other kinds of Kebab, the best
is undoubtedly the "Begendili Kebab":
Diced cubes of veal cooked in a tomato
sauce are placed on an eggplant puree.

eggplants on an open wood fire, peeling
them and mashing them before mixing
them with a cheese and béchamel
sauce. We reserved one for you for the
dinner at hotel Kalehan in Selcuk.
Another very original dish is the "Testi
Kebab" which is a specialty of Central
Anatolia region. The originality of this
dish stems from the way it is cooked:
the veal is slowly cooked with seasonal
fruits and other ingredients in a sealed
terracotta jug. The sealed jug
preserves all the flavors even when the
cooking temperatures get high. In the
end, the cook serves the dish by first
breaking the neck of the jug. This
culinary spectacle is foreseen for our
Cappadocia tour.
Eggplant occupies a privileged place in
the Turkish cuisine. Especially in the
summer, it is hard to imagine a meal
without eggplants and watermelons.
Besides these, in that season, you
typically find on a traditional table,
tomatoes, cucumbers, white cheese,
yogurt and fried vegetables.

The most popular eggplant dish is
undoubtedly the "Karnıyarık": These
are eggplants split lengthwise before
being fried lightly in olive oil. They are
then stuffed with minced meat cooked
with onions, tomatoes and peppers.
A "karnıyarık" is be eaten usually with
a tomato pilaf rice and a "cacık" which
is yogurt mixed with cucumbers and
mint. You will taste them at lunch
during our visit of Ephesus.
Another eggplant dish prepared with
olive oil is "Imam bayıldı." This one is
eaten cold just like all the other olive
oil dishes called "Zeytinyaglı" in the
Turkish cuisine: The eggplants are
split lengthwise before being lightly
fried in olive oil. This time they are
stuffed with onions, parsley, tomatoes
and peppers. This one entails light and
delicate flavors, perfect for a summer
dish. It is earmarked for lunch during
our stay in Istanbul.
During the same lunch in Istanbul, you
will discover the "Börek" and "Kadın
Budu Köfte": " the böreks are phyllo
pastry sheets stuffed with cheese,
spinach, minced meat or even potatoes
and either baked in the oven or fried.
You will find numerous varieties of
"börek" throughout our tour as wheat
flour is a staple for Turks.
Turkish cuisine includes some dishes
with very evocative names such as the
Vizier's Finger "Vezir Parmagi"
swallow's nest "Bülbül Yuvası"
woman's navel "Kadın Göbegi" or the
köfte (meatball) called woman's thigh.
One could cite many more. The "Kadın
budu köfte" are meatballs combined
with rice, which are then breaded and
fried. They are so delicious and light
that you can eat too many without
realizing.
It is rare to travel in Turkey without eating
"Dolma" (the stuffed vegetables). These
are vegetables stuffed either with meat
and eaten as a main course with a sauce;
or vegetables stuffed with rice, pine nuts,
raisins, onions and various spices cooked
with olive oil and eaten cold as appetizers.
The "Dolma" can be made by stuffing
tomatoes, peppers, zucchinis and
eggplants or by rolling the filling in vine
leaves or cabbage and chard leaves.
During your lunch in Istanbul, besides the
"Kadın Budu Köfte" you will have the
opportunity to taste "Dolmas" stuffed with
meat. On the other hand, when we go
through Ephesus, a delicious olive oil
"Dolma" dish will be served as appetizer.
It goes without saying that what we

and other desserts, represents a tiny
portion of the specialties of the Turkish
cuisine that you will discover during your

Great Mosque and Hospital of Divrigi, Sivas
was an important caravan station on the
main East–West trade route. The Old
Mosque, Old Bath and Süleyman Pasha
Medrese were built in 1322. During its
apogee in the 17th century, Safranbolu's
architecture influenced urban development
throughout much of the Ottoman Empire.

Thanks to its privileged geographical position
between the East and the West, Istanbul has
witnessed the rise and fall of many different
civilizations and has thus retained a unique
mixture of their culinary traditions.
The flavors of Istanbul can be discovered
throughout the day, so why not start with
breakfast, as Istanbulites enjoy
particularly their "kahvalti." A typical
Turkish breakfast consists of either
traditional bread or simit, this delicious
crusty little sesame bagel accompanied by
sheep cheese, black olives, tomatoes with
a touch of olive oil, and "kaymak" -clotted
cream- enjoyed either with honey or
strawberry jam.
This is helped along with black tea from
the Black Sea region, served in lovely
tulip-shaped glasses. When you have
breakfast with your family and friends,
typically you add to all this, "menemen,"
which is scrambled eggs mixed in with
previously sauteed chopped peppers and
diced tomatoes. The cafes and restaurants
in Bebek or Rumeli Hisari districts on the
European side are the best known
eateries in Istanbul for their breakfast.

Blue Mosque? There is a famous
nearby restaurant offering the köfte of
Sultanahmet, these small grilled
meatballs served with a bean salad.

The Turkish cuisine is famous for its
grilled meat dishes known as kebabs.
In fact, an excellent restaurant for
these kebabs is very close to the Spice
Market. It is also a great place to taste
Turkish pastries, including the famous
baklava topped with honey. The setting
is convivial and you have a superb view
of the Golden Horn and the Galata
Bridge.
Just across from the Spice Market,
on the shores of the Golden Horn, you
will find small boats, some of them
quite ornate, offering delicious fish

Kumkapi, Karaköy or Galatasaray.
While you are in the pedestrian district
of Kumkapi, you can taste different
mezze dishes which are typical of the
Mediterranean cuisine. Once you
crossed the Galata Bridge and admired
the magnificent view of the old city,
you can climb up to the old district of
Pera using a funicular that was
introduced in 1874. This is where you
will find the greatest variety of
restaurants in Istanbul.
There is one for all tastes and budgets:
street vendors hawking mussels
stuffed with rice; the Flower Arcade
with its dozens of restaurants where
you can taste Turkish wines while
enjoying appetizers; the brasseries at
the entrance of Galatasaray fish
market called Balik Pazari, where you
can have fried mussels accompanied
by beer; Turkish taverns known as
"meyhane" at Nevizade street; and
finally, the "refined meyhane" of
Asmalımescit, where you can drown
all the hardship of the day within a
glass of rakı, the local anise-based
alcoholic drink.
You also need to go to Ortaköy, by the
Bosphorus, to discover a Turkish fast
food specialty known as "kumpir."
This is a large oven-baked potato
topped with various ingredients like
carrots, corn, olives, peas,
mushrooms, pickled cucumber, cacik
and some mayonnaise or ketchup.
On the Asian side of Bosphorus, you
should not fail to visit Üsküdar, one of
the oldest Muslim districts in Istanbul
to discover different varieties of
traditional and even Ottoman cuisine.

southern and southeastern cuisines.
The animated market of Kadıköy is worth
a detour for its authentic ambiance and

there. There are also many fast food
