Due to mitigating circumstances, the April issues never made it to
press...my computer crashed and had to be reformatted and reloaded, which threw a huge wrench into my publication schedule.
I have also been working on getting the PHofNC ID badges completed for distribution in time of the June 7th Concert. If I have
your photo, your badge will be available at the May social meeting.
PHofNC ID Badges Issued
PHofNC Members were requested to submit a
current head-shot photo, either digital or print,
and anyone who did so will receive their lanyard
and photo ID and club lanyard at the May and
June social meetings.
If you are unable to attend either of those meeting,
you can still receive yours by sending a
s.a.s.e.(multi-stamped, self-addressed 5x7 manila
envelope) to: Art Markart, 705 Highwater Place,
Fuquay-Varina, NC 27526.

PHofNC Provides Support to
Parrot Heads of North Carolina were represented
in force during the March UNC Telethon.
Fourteen members of the PHofNC manned the
phones between 2 and 7 p.m. on February 23 to
make all of us look good. The event was
coordinated by PH Liz Losey.
Perhaps you noticed the strange hats nesting
colorful parrots on your TV screen that rainy
afternoon as Lawrence Welk led his orchestra
between “commercials” for donations. (Art
Markart and Bruce “Doc” Crandall were asked to
sit up front so the cameras could pick up their
festive attire!)

Don’t miss this year’s Meeting of the Minds, Parrot Heads In Paradise Inc.'s (PHiP)
annual convention. To attend you must be a member in good standing of a Parrot Head
Club. Registration is open now and will close August 31 or at 3,500 registrations,
whichever occurs first.

PRE-CONCERT EVENTS IN THE PLANNING STAGES
“People who
think too much
before they act
don't act too
much.”
A PHUN pre-concert party in being planned for June 6 at
the Buckhead Saloon in Raleigh, beginning at 5 p.m. It
will feature trivia games (with a pair of tickets as the prize),
raffles (Margaritaville Frozen Concoction Maker, goody
baskets and a pair of tickets to the concert!) and
entertainment by the Rum Punch Pirates (6—9 p.m.) All
proceeds will be donated to Make-A-Wish Foundation.
A phantastic and phun concert
tailgating party in the Time Warner
Amphitheater parking lot is also in the
works for pre-concert Saturday, June 7. The club activities will
be set-up in a reserved area, so plan on wandering over and
joining the phestivities! As the venue
does not sanction tailgating,
discretion and good Parrot Head
behavior are encouraged for the
benefit of all. (We have a meeting set up with Walnut
Creek management, and we’ll keep you posted on any
additional developments.)

Recipe for a PHUN Time—Beergarita & Mango Ones
Ingredients for one
Beergarita
1 oz Jose Cuervo® Especial Gold Tequila
•
•
1 oz Triple Sec
•
1 oz Lime Juice
• 12 oz Bottle Corona®
Lager
Blending Instructions:
•
Mix all ingredients except the
lager in a blender with ice
•
Pour into a large pilsner/pint
glass, then add the Corona
(which should be chilled) over
the top
•
Garnish with a slice of lime, and
serve.
Chunky Guacamole
“Let me remind
you: We are
party people,
and things will
get better”
4 ripe avocados
3 limes, juiced
1/2 red onion, chopped
1 garlic clove, minced
2 serrano chiles, sliced thinly
1 big handful fresh cilantro, finely
chopped
Extra-virgin olive oil
Kosher salt and freshly ground black
pepper
Halve and pit the avocados. Scoop out
the flesh with a tablespoon into a
mixing bowl. Mash the avocados with a
fork, leaving them somewhat chunky.
Add the remaining ingredients, and
fold everything together to gently
mix. Lay a piece of plastic wrap right
on the surface of the guacamole so it
doesn't brown and refrigerate 1 hour
before serving.
Mango Margaritas
For the Mix:
1 1/4 pounds
fresh mangoes
1 cup water
1/2 cup sugar
Gray salt
For the drink:
3 cups ice
1 1/2 cups Mango Margarita Mix (above)
4 ounces tequila
2 ounces triple sec
Lime wedges
Peel and pit the mangoes and cut them
into large chunks. Place the mango in a
blender with the water, sugar, and a
pinch of salt. Blend until smooth. Taste
and add more sugar, if necessary.
Fill the blender with ice and add the
Mango Margarita Mix, tequila, and triple sec. Blend until smooth. Rub the rim
of a margarita glass with a lime wedge
and dip into Mint Salt to coat rim. Fill
glass and enjoy!
Mint Salt: Yield: about 1 cup
1 cup fresh mint leaves
1 cup gray salt or coarse sea salt
Clean and dry mint and roughly chop.
With a mortar and pestle, crush equal
parts fresh mint and salt.

Q2 PHofNC Charity
Established in 1980, the Food Bank of Central & Eastern
North Carolina is a non-profit organization that provides food
to people at risk of hunger in 34 counties in central and eastern
North Carolina.
Today, the Food Bank provides more than 2.7 million pounds
of food monthly to nearly 900 nonprofit, community-based,
emergency feeding programs (soup kitchens, food pantries,
homeless shelters, and elderly nutrition programs), serving
more than 400,000 individuals at risk of hunger.
That food comes from you and others like you. The PHofNC
has adopted the Food Bank of Central and Eastern North
Carolina as its Second Quarter Charity. Please bring your nonperishable contributions to any and all PHofNC functions between April 1 and June 30.
Items most needed include:
Canned Meals: Stews, Soups, Tuna, Ravioli, etc. (Pop-top cans a plus!)
Peanut Butter
Cereal
Canned Fruits and Vegetables
Rice, Pasta and Dried Beans
Hygiene Items: Toothpaste, Shaving Items, Soap, etc.
Infant Products: Diapers, Wipes, Formula, Infant Cereal
(Please - No loose glass and plastic jars of baby food as they will have to be discarded due to health regulations)
Paper Products: Toilet Paper, Paper Towels, etc.
