Beef ranches, these are the chunks of beef that chefs
love. Not only are they super affordable (even when
they’re not on sale), but these select cuts are also
some of the most flavorful options for slow roasting,
tender braising and unique preparations as in
the Korean Beef recipe below. Ask our meat

Korean-Style Beef
• 4 pound beef bottom round,
top round or cross rib roast
• 2 medium onions, cut into ¼” slices
• 8 to 10 garlic cloves, roughly chopped
• 2 cups tamari
• 1/4 cup brown sugar
• 1 cup white vinegar
• Pinch of red chile flakes (optional)
• 1/2 cup toasted sesame seeds (half saved for garnish)
• 3 to 5 green onions, thinly sliced (for garnish)

1. Wrap beef in plastic wrap and freeze for four to five hours.
2. Thinly slice frozen beef on the bias with a sharp knife. Slices
should be about 1/8” thick.
3. Combine garlic, tamari, brown sugar, vinegar, chile flakes and 1/4
cup of toasted sesame seeds in a large bowl. Add beef and onion
slices. Marinate for at least two hours, or overnight.
4. Preheat grill to medium-high. Cover the entire grill surface with tin
foil to prevent the meat and onions from falling into the fire. Puncture
the foil with a fork every inch or so to allow the marinade to drain and
the meat and onions to caramelize.
5. Remove beef and onions from bowl, saving the marinade. Grill
beef and onions on both sides until caramelized, two to three minutes
per side. (Alternatively, stir fry beef and onions over high heat for four
to six minutes.) Arrange beef and onions on a large serving platter.
6. Place marinade in a sauce pan and bring to a boil. Reduce heat
and simmer for five minutes. Pour marinade over meat and onions
or use as a dipping sauce.
7. Garnish beef with remaining sesame seeds and green onions.

Managing Your Body’s pH Balance
In high school chemistry, we learned that water has a
pH of 7.0, which is neutral. A pH below 7 is acidic and
a pH above 7 is alkaline. Our body’s optimum pH is
between 7.2 and 7.35. Too much sugar and processed
