Bread Recommendation: Seeded Wholemeal or Multigrain
A smooth, waxy textured, slightly granular Dutch Gouda that is well matured for
around 18+ months. The resulting cheese has a deep, lingering mellow flavour with
hints of caramel and marmite on the palate. This is a fabulous cheese for cooking and
goes extremely well with pistachio and figs. It has won European Gold Medals.
Mayfield, East Sussex

Bread Recommendation: Wholemeal sourdough
The Mayfield is a lovely semi-hard 'hole-y' cheese from Sussex which has a sweet
and fruity texture, it melts beautifully in toasted sandwiches.
Gorgonzola Dolce, Piedmont

Bread Recommendation: Ciabatta Rustica
A gorgeous semi-hard blue cheese which will melt into a fondue-type texture when left
out to rest over several hours. It is a DOP product, meaning that the recipe and
production methods used are so fantastic, traditional and integral to the regional cuisine
that it has been granted protection by the Italian government! The taste itself is creamy
and sweet, without too much of the bite normally associated with a blue cheese.

Bread Recommendation: French Sourdough / Baguette Campaillette
Bleu d’Auvergne is one of the best known cheeses from the Auvergne region made
with pasteurised cows milk. With its reddish-orange crusty rind and firm supple, yet
moist creamy interior, it has a sharp clean taste. Aged for a period of two months, the
evenly spread blue-grey mould has hints of herbs and melted butter.
Winterdale Shaw Smoked

Bread Recommendation: Rye sourdough
This is Kent's very own cheddar. To mature this cheese, they wrap it in cloth and then
leave it in caves dug out of the North Downs. Then when it is ready it is oak smoked
for that additional woody smoked flavor. The flavor is not too strong but it is still a full
flavor. This is a perfect cheese for a cheeseboard.
Isle of Mull Cheddar

Bread Recommendation: Country Crusty White
Isle of Mull cheddar doesn't taste like any other cheddar and it doesn't look the same
either. It's a pale ivory colour with a very sharp, fruity tang, thanks to the unusual diet
of the cows that eat the fermented grain from the nearby Tobermory whisky distillery.
Made on Sgriob-ruadh farm, Isle of Mull cheddar is an artisans' cheese made with
traditional methods and unpasteurized, slightly alcoholic milk from the happiest cows
in Scotland. It goes very well with some cold meats and other antipasti.

Bread Recommendation: Try a selection of our crispbreads, wafers or biscuits
Suffolk Scrumpy is made with raw British Friesian cows’ milk and mixed with herbs,
cider and garlic. It’s a rindless hard cheese which has been matured for three months
and has an open and bouncy texture. The garlic, cider and herbs are gently blended
with the curd, so as the cheese matures, the added ingredients have time to infuse
and disperse their distinctive zingy flavours. A perfect Welsh Rarebit alternative, or an
exciting option on any cheeseboard.
Cropwell Bishop Classic Blue Stilton

Bread Recommendation: Country Crusty Multigrain
This Classic Blue Stilton has a rich tangy flavor that is created during its 12 week
ageing process. It has a velvety-soft texture that makes it melt in your mouth. This
cheese is crafted by hand, using methods that have changed little since the 17th
Century. It is made using vegetarian rennet, and around 78 litres of fresh, local milk.
With its tangy flavor this cheese goes very well with port or a dry sherry and
exceptionally well with a claret.

Bread Recommendation: Baguette Campaillette
Called “the holy grail of raw milk cheeses”, Mont d’Or (also called Vacherin Mont d’Or,
and Vacherin Haut-Doubs) is truly a spectacular cheese. It is a soft, rich, seasonal
cheese made from cow's milk in Switzerland or France, usually in villages of the Jura
region. The cheese has a soft, pale brown rind and a yielding texture. It is packed in a
circular spruce box, which both flavors the cheese and keeps it in shape (it can be
very runny when ripe). The flavor is rich and a little sweet, with grassy undertones.

Le Rustique Camembert

Bread Recommendation: French Sourdough
Le Rustique Camembert is made in Normandy, home of Camembert, using milk from
cows that graze on the region's lush green pastures. It owes its authentic earthywoody flavour and garlicky nose to the quality of its ingredients and the traditional
savoir-faire in its making. With its white bloomy rind and deliciously soft smooth centre,
Le Rustique Camembert is a must on any cheeseboard.
Brie de Meaux

Bread Recommendation: White sourdough/baguette Campaillette
Brie de Meaux, named after the town of Meaux, is a French cheese produced in the
region of Brie, located 50 kilometers to the east of Paris. This Brie has a milky yet rich
taste underlined by sweet and buttery flavors of mushrooms or truffles and almonds.
The cheese pairs perfectly with Champagne, a red Bordeaux or Bourgogne

Fresh bouquet with fruity overtones of apple and pear and an almost flowery hint of citrus. Plush

Fruity fragrance, with aromas of sun-dried hay. Assertive, rounded, well-orchestrated palate,
although at the same time stylishly crisp.
Passerina Marche IGT, Velenosi
Notes of white flowers and pear on the nose completed by a hint of grapefruit. Elegant wine fresh
and sapid with a fruity finish.
Pecorino Falerio DOC, Velenosi
Intense and refined noted of exotic fruit and citruses, acacia flowers and aromatic herbs. Complex
and harmonic bouquet. Fresh and yet soft the palate, very elegant.
Vermentino di Sardegna DOC, Cantina del Bovale
Intense and persistent fragrance with hints of peach and green apple. The palate is intense,
persistent and highly balanced.
Merlot Rubicone IGP, Branchini
The nose is fruity with notes of small red fruits and wild berries, hints of herbs and floral under
notes. The taste is soft with a good balance between mineral and tannins which are well blended
Montepulciano D’Abruzzo DOC, Frisio (Organic)
Intense notes of wild berries and sour cherries, lightly spiced with a great structure and good
balance. A rich and juicy red wine that is a good companion of rich meat dishes, meat sauces
based pasta and mature cheeses.
Cannonau di Sardegna DOC, Cantina del Bovale
Rich and persistent fragrance with hints of fruits and spices. In the mouth the wine is flavourfull
with a long lasting aftertaste.
Refosco COF DOC, Vigna Traverso
This is an extremely old autochthonous Friuli vine, with several known clones. Deep red in colour
with purplish tinges. Pervasive, vinous fragrance which recalls autumn leaves and raspberries.
Slightly tannic, crisp and sapid.
“Visciole” Wine and Cherries, Velenosi
Pleasant and intense, sensual and persistent strawberry, raspberry, ripe wild berries and jam
aromas; scents of peach and ripe pear. Soft in the mouth, highly persistent without losing
