Commodore's Comments
It is nice to see our members using the Club and outdoor amenities more
and more as we move towards the summer. On a recent Friday evening
the club was absolutely full. Our F&B Director Sandi Cates informed
me we had 6 events going on that evening. That’s amazing, and a credit
to our staff for being able to plan and execute so much fun.

Last month I mentioned we were undertaking a refresh of our Harbor
Grill restrooms. You should see that begin mid-May and please pardon
the inconvenience during the construction. A new project we are recommending is a renovation of the Main Clubhouse Kitchen. This update

is long overdue and will go a long way towards improving our dining serCommodore
vice. Please see Vice Commodore Braselton’s article for details elsewhere
in the Spray. This capital investment requires membership approval,
and you should already have received a ballot in the mail and an invitation to a Town Hall on
Thursday May 5th at 6pm. The Board, Chef, and GM will be on hand to present the kitchen
remodel and its benefits and to answer your questions. I hope you can attend.

Greetings
Dear Members and Guests,
Summer is near and so are
the plans for the Summer
Youth Program (SYP) and
Strictly Sailing Program
(SSP). Returninng this Robert Crissman
year to run the SYP is Ms. General Manager
Sara Joyce-Webb. Sara has
a tremendous background
including Brevard County Schools, the Sarasota
County Library and the City of Cocoa Beach as
Aquatic Manager. On the sailing side, Mr. Phil
Spetler will be returning to help lead a bigger,
and we believe better, program and options. To
help guide both programs by ensuring organized
fun and safe enviroment is Harbormaster, Captain Kenny Kooyenga.
Kenny, Sara and Phil, along with sailing volunteer Mr. Jon Williams, have met several times
and have coordinated options to suit your child's
needs. We will be hosting a registration open
house on Saturday, May 7th for you and your
kids to come meet the available counselors, sailing instructors and lifeguards. Staff will be on
hand to answer any questions or help you plan
your summer at EGYC!
By now you may have seen the mailing regarding
the long awaited kitchen renovation project. The
project is detailed in Commodore Braselton's article and I encourage all of you to read on and
plan on coming to one of the tours or Town Hall.
Recent personnel activities have prompted me to
be sure all of you, as well as our great staff know
how much I value the relationships we foster
here at the Club. The loss of Dawn Crooks in
the Harbor Grill and David Pelzman in the Dining Room were very disappointing to me and I,
along with Sandi Cates are searching for stellar
replacements. I don't take turnover lightly, and
know you don't either. I can assure you that every appropiate effort is made to minimize turnover. That being said I will again state, as I did
last fall, "one of my goals is to foster the team
work and pride among the staff to continue to
elevate the member experience!" Actually, it is
not just "one of" my goals, it is my primary goal!
Looking forward to a great May and kick off into
the summer!

Gerald & Linda Nelms
Gerald and Linda Nelms have been members of the EGYC since 1985: 30 years and 9
months! You have seen them quite often and
then suddenly they are missing in action, but
not really. They are just off globe-trotting in
Florida or other points beyond our borders,
like Canada, Spain, Jamaica, England, other
points of interest or at their mountain cabin
in Blowing Rock, NC.
When the Nelms originally joined the
EGYC, Gerald was a Physicist at the Patrick
Air Force Eastern Test Range working up to
a management position as Chief of Maintenance and Logistics Support Division for the
Eastern Range, managing sites from Newfoundland to Cape Kennedy, Antigua and
Ascension with around three hundred contractors working under him. Linda, worked
indirectly as a Contractor for the government with RCA, GE & CSS as an Electrical/Mechanical Design Draftsperson at Patrick Air Force Base. Since retiring, they’ve
enjoyed dabbling in real estate and property
management.
They have always enjoyed power and sail
boats and actively enjoy visits to many of
the other Clubs within the Florida Council of Yacht Clubs. They are often seen with
their friends, John and Sharon Haralson,
also members of the Club; They attend other
FCYC Club functions together, when possible.
Jerry and Linda enjoy the Formal Balls and
other functions that the yacht club puts on
and love what Chef Cook has done with
the menu. For many years, the Nelms have
played tennis here. Jerry still plays tennis at
the Club and other areas around town, but
Linda had knee surgery and has not played
tennis in a while. For many years Linda sponsored the American Business Women’s Association (ABWA) Dinner and Lunch group at
the EGYC, where she was selected Woman
of the Year in 1998! Linda also organizes the
Wonderful Wacky Women and Men’s Get
Together held every 4th Wednesday of the
month! Join this Wonderful Wacky / Get
Together and get to know Jerry and Linda, as
well as other members at the Club, over great
cuisine and a view!

everyone that our tennis courts will be closed

Black, Booze and Backhands:
Our popular event is back on Friday, May
13th at 6:00 pm. Open to all levels. Must
wear black! Come and join us for two hours of
tennis and get the opportunity to meet some
new friends. Signature bar in the Courtside
building.
Women’s Social Tennis:
Friday mornings 8-9:30 starting on May 6.
This is fun, social tennis for ladies that do not
belong to any of SCTL teams or for women
who do not get to play on Thursday league
play. The group will have two courts reserved
every week and it is open to anyone who would
like to play.
Mixed Doubles Social Tennis:
Wednesdays 5:30-7 pm starting on May 4.
Another opportunity for social, fun play. Open
to all levels, couples and singles. Just show up
and play. A great opportunity to socialize, get
to meet new people and play the game we love.
Two courts will be reserved for this group and
there maybe more down the road if we have
enough interest in it.

were seven food stations
and five wines they were
paired to. People strolled to each station and
choose the tasting of their choice from selected foods and wine. The attendees enjoyed the
beautifully played music by guitarist Dennis
Vasenin.
We are anticipating a crowd for our next Wine
Tasting on May 18th with the Wine Club. It
will be an Italian theme. This event features
a series of Tapas or small plates paired with
wines and includes educational interludes
from Chef Lance and our wine representative.
Voting for your favorite Tapas and Wine gives
you a say in next month's menus! Be a part
of helping to choose your club’s wines of the
month! Call now for reservations. There will
be limited seating.
On May 26th we will also host a Wine Dinner with a limitation of 50 reservations. We
will be featuring the high end Mondavi wines
celebrating their 50th Anniversary. Together
with the great wine selections, Chef Lance will
be pairing the wines with spectacular dishes
showcasing, as usual, his culinary team’s talent to entice each of you to want more with
each selected course.

12 years ago, the Walters family settled in at Indialantic after living around
the country at various latitudes and longitudes. The family is active with
daughters 15-year-old Emma and soon to be 13-year-old Ava; cheering on Emma as a competitive
swimmer and applauding Ava as a competitive soccer player. As parents, Kathe and Marty both
volunteer any way possible at the girls' schools. Professionally, Marty is a consultant in computer
security with PWC and Kathe is a Registered Nurse at Surgery Center of Melbourne. In each of
their professions, some days can prove especially taxing, but Marty and Kathe share smiles and their
great sense of humor generously. Relaxation is important to this family whether traveling together
to a big city, fishing, camping, or boating. The Walters attended an EGYC Open House Cocktail
Reception with a great sunset and enjoyed a Trial membership late in 2015. We are excited to

and has been better than we have seen in years. The mandatory captains meeting will be at the
Harbor Grill on Friday the 13th at 6:00 pm. Everyone is more than welcome to join us for the
weigh in on Saturday afternoon. There will be
live music, beer tubs and a great buffet for everyone to enjoy.
Marker 21: Commodore Reed said he wanted a
kick in the rear "Marker 21" party this year and
our committee is working hard on delivering this
for our Commodore. The party is going to be
on Saturday, June 4th. My wife Angela and her
friends Brandi Beckstein, Robin Panicola and
Mauricio Castellon guarantee a great party and
I even heard it might be "Pirate Themed". More

Main Clubhouse Kitchen Upgrade
One of the key findings of the extensive member survey and focus groups
conducted last year was the dissatisfaction with the speed and quality of our
dining at the Club. Of all the events, facilities and functions that our Club
performs, dining speed/quality of service stood out by far as the area, we as
members, thought the Club should improve. In response to this, the House
Committee started the process of finding out why our dining and service was
slow/unsatisfactory and how to improve it.

A new kitchen layout and new equipment plan has been completed that aims to address four main
areas of improvement to our service: Speed, Variety, Accuracy and Capacity.
Speed – This was the number one item that stood out in our member survey, we want our meals
served faster. The remodeled kitchen includes a dedicated hot appetizer area, which can also serve
as a ‘second line’ for larger banquet type functions. A new double sided ‘plate up’ station, with
hot plate racks, which will more than double our speed of larger banquet type functions. Most
importantly is a dedicated expediters station, a central point where during regular dining all meals
are picked up by wait staff (currently wait staff have multiple pick up points taking extra time).
Variety – The growing popularity of ‘tapas’ style dining, smaller servings of many different items,
has placed a strain on our current one hot line kitchen arrangement. By having a dedicated hot
appetizer station, the Club will be able to offer a greater variety of menu items. Currently there is
a balancing act of breadth of menu versus preparation resources available.
Accuracy – In all higher volume dining operations the expediter station is the heart of getting accurate and timely meals out of the kitchen. The expediter station is where all of the food prepared
for an order is gathered, checked for accuracy, final garnish added and assembled for the wait staff
to carry out. This area is usually run by the Chef, where quality and ticket times can be monitored
and managed on a constant basis during meal service.
Capacity – For larger Club functions and banquets, the proposed layout and equipment will
double our capacity for handling these events. The double sided ‘plate up’ line and new ‘second
line’ will provide much greater food production and preparation abilities. Additionally, the Club
will be better able to serve more events and venues at the same time (full Friday night clubhouse
and side room banquet at the same time, etc). After preparing and serving all this food, there are
a lot of dishes to clean, so a new upgraded dishwashing station is also part of the plan.
The proposed new layout relocates the Chef's Office to a location by the back door (frees up the
middle of the main kitchen where the office is currently) and adds a much needed storage room
off the north side of the building. Several doorways will be widened to permit better movement
to and from the kitchen as well.
The cost of the remodel of the kitchen is broken down as follows:

There is no cost increase in staff associated with the remodeled kitchen. We are adding one cook
for the new hot appetizer area, but savings in man hours in the dishwashing area with the new
equipment and overall efficiency gains will offset the new position cost. Funds for the improvements will be paid from our capital account which currently has a balance of $1.7mil and will not
affect member dues as capital funds are separate from operating funds.
A kitchen tour will be conducted April 28th from 12-1:30pm, if you would like to see the current
kitchen layout and see how the areas of improvement will work together.
Additionally, there is a Town Hall meeting for any questions or concerns on May 5th at 6pm,
which will also have a kitchen tour following the meeting.
Both the House Committee and Board of Governors unanimously approved the plans and bring
the proposal to the Membership for your approval. By the time you read this you should have
received your ballot. Completed ballots are due May 11th by 7pm.

will be held for the first time
ever at the St. Andrews Bay
Yacht Club in Panama City,
FL. In keeping with my articles to introduce EGYC
members to our reciprocal
clubs, here is an excerpt from
the club history on their website.

FCYC Director
The St. Andrews Bay Yacht Club is one of the oldest
and most prestigious yacht clubs on the Northern Gulf
Coast. The club, which had its first meeting in 1933
in the depth of the Great Depression, was formed by
a group of prominent business and professional leaders in Panama City. The first commodore was Major
Frank B. Wood. Among the charter members was H. L.
Sudduth, developer of the Cove residential area, who
donated the land where the clubhouse now stands. The
minutes of the organizational meeting in August 1933
indicate that future meetings would be held in the Dixie Sherman Hotel on the mezzanine level until a permanent clubhouse could be built. Other charter members were: M. J. Daffin, later longtime Sheriff of Bay
County; Thomas Sale, a prominent attorney who also
served as mayor of Panama City; Harry G. Fannin, a

Panama Machine and Supply Company.
The stationery of the Yacht Club in 1937 shows the
Commodore to be A. M. Lewis, the father of H. Mack
Lewis, the well known Panama City business and civic
leader who also served as commodore in the nineteen
sixties. Named on the letterhead as Honorary Commodore was Asa G. Candler, founder of the Coca Cola
Company of Atlanta; he had a summer home down the
street from the Club on Bunkers Cove Road. Candler
donated the cup which is competed for in the annual
Candler Regatta at which St. Andrews Bay Yacht Club
is host each year. The St. Andrews Bay Yacht Club is not only a boating
oriented club. There are many social activities carried
on during the year. The Club is also the scene of many
private parties and receptions. The Club has a superior dining room and bar that provides for its members
excellent fare six days a week. St. Andrews Bay Yacht
Club is a private club, membership in which is by invitation and approval of the Board of Governors. There
are presently approximately 325 members served by a
professional manager and staff of appx. 20.
The members of this old and distinguished Panama
City club are looking forward to the next 70+ years
at their beautiful location on St. Andrews Bay.

called “Mission Readiness” that he was supporting. Mission Readiness is an organization
comprised of approximately 600 retired officers
including Generals and Admirals who have
partnered with members of Congress to create
awareness for the importance of Pre-kindergarten early education to help develop our youth.

(Retired Army Captain)
Scott Robinson who is a local attorney in Viera gave a talk about his experiences as an Army
Captain serving in Iraq in 2007-8. He shared
his views on the why the USA is now having a
difficult time trying to stabilize the region. He
talked about the political and religious history
of Iraq and the conflicts between the Shiite and
Sunni Muslims. Captain Robinson was stationed at an Iraq police station (reserve unit)
and his job was to train and provide leadership
for the Iraq security forces.

CEO Canaveral Port Authority
In February 2016 Captain Murray joined the
Canaveral Port Authority as Chief Executive
Officer. Port Canaveral brings in $85.9 million
in revenue and has an operating budget of $752
million per year. The cruise line business accounts for 80% of the revenue with 4 million
passengers per year. There are also over 4 million tons per year from cargo, container, and
fuel distribution. Captain Murray also talked
about the $244 million expansion planned for
