Ariana Savalas the very talented & beautiful, daughter of the beloved, famous Greek American actor, Telly Savalas will be our
guest, Celebrity Hostess. She will be on site to dazzle us with
her charm, beauty & amazing voice. Ariana sings both in Greek
& English and comes to us LIVE before her upcoming appearance on the X-Factor Live from Greece; where she will be a guest
performer, for Simon Cowell’s newest show. The Savalas legend

Spiros Nicholas “Steve” Pisanos, the
son of a subway motorman, came
to America in April 1938, as a crew
member on a Greek Merchant ship.
Arriving in Baltimore, Maryland and
unable to speak English, Steve found
his way to New York City, where he
worked in bakeries and restaurants.
As he earned money he started flying
lessons at Floyd Bennett Field. In August 1940, he settled in Plainfield, New
Jersey, his adopted home town, and continued flying lessons at Westfield Airport. He earned a private pilot’s license and, although still
a Greek national, in October 1941 he joined the British Royal Air
Force sponsored by the Clayton Knight Committee in New York City.
Steve began his military flight training at Polaris Flight Academy
in Glendale, California. Upon graduation, Pilot Officer Pisanos was
transferred to England where he completed RAF Officers Training
School at Cosford, England and OTU (Operational Training Unit) at
Old Sarum Aerodrome in Salisbury. Pilot Officer Pisanos was posted
to the 268 Fighter Squadron at Snailwell Aerodrome in Newmarket
flying P-51A’s. He later transferred to the 71 Eagle Squadron, one of
three Eagle squadrons in the RAF, comprised of American volunteers
flying Spitfires at Debden RAF Aerodrome. When the USAAF 4 Fighter Group absorbed the American members

“Ka-LOS EI-ltha-teh”!
It’s a Greek word, which means: “It’s great to see you!” With this word comes the
atmosphere of “philo-xeh-NI-a” - another Greek word, which means “treating a
visitor as a friend” (“philos” = friend / “xeh-nos” = stranger). These are words that
tie people together with a sense of community.
In truth, we do need each other. We at St. George Greek Orthodox Church are
proud to offer to our Palm Desert neighbors, as well as to the citizens of the greater
Coachella Valley, the opportunity to enjoy a taste of Greece. A “taste” of Greece not
only includes the delicious Greek cuisine, but also the music and life-style of the
Greek people, whose Orthodox Christian Faith; ancient philosophy and rich traditions all add up to a sincere appreciation of other people and of life itself.
You can see, then, that the greeting, “Ka-LOS EI-ltha-teh” is much more than a
simple “welcome”. It is an overwhelmingly glad welcome and an expression of
appreciation for individuals and for all people from everywhere throughout the
world, knowing that everyone has much to give to others, which makes us all members of a community. As such, it is an honor for all of us today to enjoy life together.

( Pisanos~ continued from page 1 ) of the Eagle Squadrons in September and October 1942, Pilot Officer Pisanos was commissioned a lieutenant in the U.S. Army Air Forces. On 3 May 1943, Lt. Pisanos was naturalized as an American citizen in London, England, becoming the first
individual in American history to be naturalized outside the Continental United States.
Flying his first mission in his P-47 “Miss Plainfield” out of Debden Aerodrome with the 334 Fighter Squadron, 4 Fighter Group, Lt. Pisanos,
“The Flying Greek,” scored his first victory on 21 May 1943, when he downed a German FW-190 over Ghent, Belgium. By 1 January 1944 he
had become an ace with five confirmed victories. On 5 March 1944, he obtained his 10 victory and while returning from that B-17 escort the mission to Limoges and Bordeaux, France , Steve experienced engine failure in his P-51B and crash-landed south of Le Havre. For six months he
evaded the Germans and worked with the French Resistance and the American OSS sabotaging the German war machine in occupied France.
Lt. Pisanos returned to England on 2 September 1944, following the liberation of Paris.
Upon returning to the United States, Captain Pisanos was assigned to the Flight Test Division at Wright Field, Ohio. He attended the USAF Test
Pilot School and subsequently served as a test pilot at Wright
Field and Muroc Lake, California, testing the YP-80 jet aircraft. During his career in the USAF, Steve graduated from
the
University of Maryland, attended the Air Command and
Staff College and the Air War College. In December 1973, after
a distinguished thirty years of service in the United States Air
Force, he retired with the rank of Colonel.

Palm Desert Greek Festival is not only a celebration for our

A large, 5-year study showed that
the people in their 70s who were the
most active and adhered the best to a
Mediterranean-style diet were 61–67
percent less likely to develop Alzheimer's disease compared with the least active and least Mediterranean-minded of the group.
Why a Walk Helps
First, let's look at the walking part of the equation. The most active in the study group got about an hour and a half of exercise weekly. That's just a
few 30-minute walks a week -- a pretty manageable commitment. Better yet, aim to walk 30 minutes every day. Here's more on why doing that
much will help maintain your memory and then some.
Mediterranean Magic
Now, let's look at the Greek diet. People with the lowest dementia risk ate the highest amounts of fruit, veggies, legumes, and fish, but less meat and
dairy products. Monounsaturated fats, like olive oil, also accounted for more of their fat intake than saturated fats. All very typical ratios in a Mediterranean-style diet that doctors and health experts alike recommend for all sorts of reasons. These nutrient-dense, healthy-fat-focused foods could help
protect brains against disease and cognitive decline and help protect the body from lots of other bad things, too.
We know that hearts "heart" a Mediterranean-style diet. But here's big news: so does your blood sugar.
Yep. Mediterranean fare, such as Greek Food-- rich in olive oil, vegetables, fruit, nuts, cereals, legumes, and fish -- may reduce your risk of developing diabetes. And not just a little.
Big-Time Benefit against Diabetes
In a recent 4-year Spanish study, people who strictly followed a Mediterranean-style diet lowered their odds of developing diabetes by a whopping 83
percent! And the protection was there even in people with diabetes risk factors, such as a family history of the disease, high blood pressure, older age,
higher body mass index, and a history of smoking. It's not clear why, but it seems that Mediterranean-type foods somehow thwart insulin resistance
and inflammation. All very, good news for your blood sugar. Eating a low-fat diet -- and eating healthful unsaturated fats when you do eat fat -- can
make your RealAge as much as 6 years younger. And that’s the “OPA” effect.

Bittersweet Chocolate Date Nut Baklava
Baklava has gone wild! One of our favorite catering deserts of all times. This
combination of bittersweet chocolate with the dates, cinnamon, and walnuts is utterly
delicious. The flavors are so rich I serve it alone with a cup of coffee, tea, or a glass of
wine or shot glass of Ouzo. Makes : 3o ( 2 1/2″ square pieces)
Use a sheet pan for this recipe. Cut recipe in half for a 1/2 sheet pan.
Syrup:
Chocolate Filling:
2 cups sugar
6 cups walnuts
1 cup water
12 ozs. bittersweet chocolate,
1/4 teaspoon ground cloves
coarsely chopped
1/4 teaspoon ground ginger
2 cups pitted dates
1/4 teaspoon ground allspice
4 tablespoons sugar
Place the ingredients in a small saucepan
2 tablespoons cinnamon
About 2 minutes.
2 eggs, slightly beate
and boil until sugar is dissolved.
2 sticks melted butter for the phyllo
Remove from heat and let cool.
1 box of pyhllo dough, thawed
Make the syrup and let cool. Set aside & make the Chocolate filing.
Place the walnuts, chopped chocolate, dates, sugar and cinnamon in a food processor and pulse on/off until nut mixture is coarsely
chopped. Transfer to a medium bowl and add the eggs. Mix well.
Butter the sheet pan.
Place 1/2 pound of the phyllo sheets on the bottom. (about 14 sheets) one by one, buttering each layer separately.
Add the chocolate-nut mixture. Then add remaining phyllo, buttering each layer.
Cut into 2 1/2 ” (or any size you would like), squares or so. Can be cut in diagonals, or diamonds too.
Bake for 45 minutes at 350 degree oven.
Pour syrup over the baklava immediately.
Let the baklava cool and serve.
Note: This can be ahead of time. Freeze before cooking, add syrup after baking.
I buy my chocolate bar at Trader Joes. Any brand phyllo will work however, I am now using
the organic phyllo from The Fillo Factory http://www.fillofactory.com/index.htm

On Friday, March 4, 2011, St. George Greek Orthodox Church of the Desert will host the 15th
Annual Palm Desert Festival. This year we have added more vendors for your shopping adventure. We have added additional tenting for shade and the comfort of those standing in lines. We
now have ala carte food service rather than a dinner line as in the past. To eliminate the hassle
of finding a parking space and the long walk to the festival, there will be complimentary shuttle
busses from the nearby, Palm DesertWestfield Mall, behind Macy's rear lot, to the festival
grounds and back.
What hasn’t changed is the spirit and enthusiastic love experienced at our festivals, the aroma
of Greek cooking and sounds of Greek music permiates the neighborhood. There is nothing like
dancing, eating, drinking fine wines and of course, a glass or two of Ouzo to set the mood for a
festive evening, living Greek.
Come early, stay late, enjoy the day with good friends and neighbors. Bring the kiddies and turn
them loose at the Kid’s Korner. This year we are extremely proud to present the International
Celebrity, Ariana Savalas as our host for the festival. She will dazzle the young and not so young
with her beautiful voice.

Savalas the very talented & beautiful, daughter of the famous
Greek-American actor, Telly Savalas will be our guest, Celebrity Host. She will be on site to dazzle us with her charm,
beauty & amazing sultry voice. Ariana sings both in Greek

Ariana Savalas; continuing in the show biz tradition of her
famous father is constantly entertained by the fascinating
stories about her famous father, legendary film, television
actor and Academy Award nominated Telly Savalas. The
man known to a generation of TV viewers simply as “Kojak”. Her memories, coupled
with the many recollections of her father’s friends, reflected that Telly was the consummate “Greek” gentleman who loved life and all it had to offer. He had strong “Kefi!”
Ariana may be only 24, but she’s a seasoned recording artist and vivacious live performer. “I’m a very old fashioned person and love the romantic tenderness and innocence
of that bygone musical era,” says Ariana. She continues, “It’s some of the sexiest music
ever recorded, and my voice just gravitates naturally to these songs. When you think
about their history, how many greats have sung them, it’s a true privilege to carry on in
that tradition.”
Ariana’s keen ability to bring a new youth back to the
old standards truly sets her apart from any artist her
age on today’s contemporary music scene. “I feel like I
have been given an amazing opportunity to bring this
timeless music to a younger audience,” she says. “It’s
a way to keep the music alive so that the current generation can better understand ‘the greatest generation’
that my dad, Telly had the good fortune in which to
grow up.”

Ariana’s was discovered at 16, by STARTRAX, a European recording company while
vacationing with her family in Austria. She recorded a song for fun at a mobile karaoke
station. It was brought to the attention of renowned European producer Jack White
(Laura Branigan’s Gloria & Solitaire). She recorded a single for them, followed by an EP
that the top Austrian pop radio stations promoted Ariana extensively. She performed
in Europe to crowds of fans and was featured on all of the top Austrian television entertainment shows with audiences totaling more than five million viewers. After touring Europe, Ariana was accepted by the Royal Academy of Dramatic Art in London to
study Shakespearean acting. After returning home to L.A. she auditioned and won the
title role of Miriam Shafer in the feature film “Miriam”, a true story of a Lithuanian
Holocaust survivor. Her latest film was Akrasia by Polish director Xavier Tatarkiewicz.
Ariana also recently guest-starred on the hit CBS television drama, Criminal Minds.
Ariana is a true Savalas. She comes to the Palm Desert Greek Festival for the benefit
of the Church, her heritage & her father’s legacy. Although not a member of St George,
Telly Savalas did occasionally attend services back in the day of the little house church
while staying in the desert. “I love singing Greek,” she says. “Being Greek is something
that I’m so proud of and I want to make our people proud and do right by my heritage.
So I will most certainly be including Greek music into my repertoire much more—songs
like Agape Me and Se’ Agapo—they’re really timeless music. Even if
you don’t speak a lick of Greek you still understand how beautiful
they are.”
Ariana will be accompanied by our own local, desert favorite
Kevin Henry, acclaimed musician, performer and owner of the
newly remoldeled “Nest” Bistro in Indian Wells along with his
beautiful wife, the iconic Dodi. Be sure to catch an amazing
performance with Ariana & Kevin Sunday afternoon to top off

Introducing
“Parnassos” the Palm Desert Greek Folk Dance – Youth Group
We’re proud & excited to announce the recent formation of a Greek Folk Dance program
for youth, ages 6-18. The mission of the Dance group is to offer an educational program devoted
to learning and perfecting historical Greek Folk dance. There are over 200 different styles of Greek
Folk Dance representing the various regions of Greece. The group is being professionally instructed
by Tina Theophilos, Dance Director. Her challenge is assuring that all the dances are authentic in
every detail from authentic regional costumes to the traditional music of the centuries.
The Palm Desert Greek Folk dancers function in association with the St George Greek
Orthodox church of Palm Desert and are in practice to compete at the annual FDF, a regional Folk
Dance Festival next Spring, 2012. Currently, over 1000
youth compete at FDF and over 10,000 participants attend.

15th Anniversary Palm Desert Greek Fest! 1997 to 2011
Welcome to our anniversary party! A Weekend in Greece! Can it really
be 15 years? Fifteen years ago the Saint George Greek Orthodox Church
community came together, under the direction of George Argyros, as
Festival Chairman to sponsor an authentic celebration in Greek culture. It
was also the inaugural year of our beautiful new church edifice. After,
nearly 2 decades of dinners, small festivals, fundraising & struggle the
St George Greek Orthodox Church of the Desert became a reality. Many
wonderful & devoted members, their friends & families have worked
tirelessly to bring the desert community an annual taste of Greece; a look
into the Greek way of life, our culture, traditions, history & above all faith,
as Orthodox Christians. We are very proud of the signature event we have
become and the deep love we have felt from so many new found “Greeks”
by the thousands. We would like to pause a moment & reflect back to 1997 in pictures.

dusted with powdered sugar. The Melomakarona, honey cookies with a hint of orange and topped with chopped walnuts. The traditional Koulourakia cookies we all grew up on and introducing two new treats for your pleasure, Diples, a

History About Orthodoxy
Eastern Orthodoxy and Roman Catholicism are the two oldest Christian faiths in existence. Until the year 1054, the two churches were united as the one
and only Christian Faith. Both churches share the honor of true Apostolic succession: Eastern Orthodox through the Apostle Andrew and Roman Catholic by way
of Apostle Peter.
Worldwide, there are over 170 million members of the Orthodox faith and growing.
The Orthodox liturgy practiced today has been tenaciously preserved in its original form for almost 2000 years. Here, at St. George the only difference is services
are typically 80% English and 20% Greek. Many Orthodox churches are culturally different; Greek, Russian, Lebanese, Korean, Ethiopian, Japanese, Romanian...,
but the faith is all identically, Orthodox. The Greek Orthodox Archdiocese of America, with over 6 million members, is under the ecclesiastical jurisdiction of the
Ecumenical Patriarch Bartholomew who is the 330th apostolic successor to the church founded in Constantinople by the Apostle Andrew.
Church tours are offered during the Greek Festival several times a day. Priests will be on hand to answer your questions.
We encourage everyone to take a church tour and enjoy the incredible beauty of our award winning, Byzantine mosaic icons and experience a taste of Orthodoxy.
