The NFFF Training Academy has seen a major facelift in which we
welcomed Richard Wardell as our new Training & Accreditation
manager, Helen Brook also moved from membership to assist
Richard with training and also the Quality Award. The next part of the
facelift came in the actual refurbishment of the Training Academy. A

November saw the judging of the NFFF Fish and Chip Quality Award
‘Champion’ Award competition. We would like to say a huge thank
you to all the shops that entered this year and congratulations to our
three finalists who will join us at the National Fish & Chip Awards in
January. They are in alphabetical order Burton Road Chippy,
Fochabers Fish Bar and Towngate Fisheries.
The judging was tougher than ever and it shows just how much the
Quality Award is improving the industry. We would like to thank Sarah
Knowles from Takeout Insurance and Derek Dews from T Quality for
joining us as guest judges on the panel this year. We would encourage
all our Quality Award holding shops to enter next year. If you are an
NFFF member thinking of applying for the Quality Award turn to
pages 24 to 27 to see what the award means to our finalist and former
champion.
This is our last magazine for 2015 and we will be back in the New

A year with Frankie’s
Fish & Chips

I’m often asked why a small fish and chip shop on a large clump of
rock 150 miles out in the North Sea would enter the National Fish &
Chip Awards. The obvious answer is why not? We make very good
fish and chips and run a modern business with a 21st century
outlook. But then so do our colleagues in many other fish and chip
shops up and down the country.

disbelief.
It goes without saying that success in these awards gives a huge
boost to your business, and we’ve never been averse to a bit of glory
for Frankie’s. However, we think there has to be more to it than that.
So a major part of the rationale for entering was the role Frankie’s
plays in showcasing what we believe to be the best sustainably caught
and harvested seafood anywhere.
After the lunch there
was a round of media
interviews under hot
video lights, a
celebratory meal (not
Frankie’s staff with their awards
fish and chips!) and a
few drinks. And the
next day we were rushed to ITV’s studios for a live appearance on
Loose Women and back across the River Thames to visit Parliament.
Shetland is in the middle of some of the richest fishing grounds in
Europe, and the clean, clear waters just off our shores yield quality
fish that you really need to taste to appreciate. If we were able to
support those in our community who catch or harvest MSC crab,
haddock, mussels and scallops, so much the better.
And throughout, there were
hundreds of phone calls,
emails and Twitter and
Facebook messages of
congratulations to answer.
Another key element was the part we have played in promoting the
fish and chip trade in general. Despite living (and sometimes being
marooned!) in Shetland, we always try to attend trade events and
make a real effort to speak up for fish and chip shops, whether that
be in the media, to governments, directly to customers or to
suppliers.
Overnight, our profile had
been catapulted from alsoran to top dog. Everyone
wanted a piece of us – a few
words, a photograph, a
video clip. Such was the
thrill of winning that I’m
amazed I managed to say
anything coherent or look
presentable!
In the run-up to the 2015 awards, I refused to believe that we could
win the title of UK’s No.1 fish and chip shop. We had been runner-up
the previous year but the standard of competition is high – and it gets
better every year. We knew from Calum Richardson from The Bay in
Stonehaven and from the Fuscos from Quayside in Whitby (winners in
2013 and 2014 respectively) that success would change our lives and
our business markedly.
But by the time of the awards lunch at the London Lancaster Hotel on
20th January, I had more or less put the possibility out of my mind
(every now and then an image of us holding the trophy aloft would
lodge itself in my imagination, but I swiftly dismissed it). I kept
reminding myself that it was only six and a half years since we had
opened Frankie’s in our home village of Brae.
When we did win, our table went wild. There was joy, there were hugs,
there were tears. Friends and colleagues from the industry rushed
across to congratulate us even before we made it to the stage to

of everybody back home –
and in the shop in particular.
We had left our young staff
in charge at a time when our
success meant we were
deluged with customers.
I needn’t have worried. Those same staff are the real reason Frankie’s
has been such a success. They are dedicated and hard-working. They
view the problems and issues that inevitably arise as challenges to be
solved rather than obstacles that stand in their way.
So if we have learned anything this year, it is that we are extremely
lucky to have such committed people working for us!
One of the highlights of the year was watching as my very nervous
colleague Brian Kennedy did a live cooking demonstration at the

and the Fuscos and previous winners were right: our sales have
increased, interest from both the media and industry stakeholders
has become greater than ever and we are constantly in demand to
give our views, speak at events and write articles such as this one! All
of which we are glad to do.
The single biggest opportunity our win opened up for us was to go to
Japan, where (helped by Calum Richardson) I set up a pop-up Frankie’s
fish and chip shop in two Hankyu department stores, first in Fukuoka
and then in Osaka, as part of that company’s annual British Fair.
The Japanese are really enthusiastic, so we got a great reception as
people started coming into the store. I guess the nearest thing to fish
and chips most of them had probably tasted would be tempura, the
very light batter.
That said, at least two of our visitors on the first day said they were
returning after having enjoyed the Quayside’s fish and chips the year
before!
While we were busy in Fukuoka, it was nothing compared to the
situation we faced in Osaka. The Umeda store in Osaka is the home of
Hankyu, which is the equivalent of Harvey Nichols or Harrods in this
country, and is the chain’s biggest store.

we got to
Osaka. One

We exported all the fish and (blanched) potatoes to Japan and also
used the trip as a first outing for our new Frankie’s Finest Batter mix,
specially made by Middleton Food Products Ltd after a visit to the
shop by the company’s sales manager, Ryan Baker.
We now have 250g bags of the batter on sale in the shop and following
its launch at the Shetland Food Fair in November we received interest
from local shops in selling the product. As part of our commitment to
constantly improving the business, we are considering other
development ideas.
Our market in Shetland is very limited (the local population is 23,000,
the equivalent of a town the size of Arbroath, boosted by visitors from
around the world mainly in the summer months), but hopefully we
have helped with our success to raise the profile of the islands.
Judging by the number of people who have visited the shop from
places as far afield as Australia and Canada this year, we have
definitely put it on the fish and chip shop map!
And we won’t be stopping here. After all, we have a thriving business
and a thriving trade to promote. Fish and chips anyone?

The Workplace Pension

McWhinney’s Sausages –
it’s all going on!
As crazy as it sounds, that
Christmas, and 2015 drawing
to a close. Northern Ireland
is celebrating unprecedented
success along with Wales,
England and Ireland, as it
has just qualified for next
year’s European Qualifiers in France, a massive
achievement for a country with less than two million
people. Speaking of Northern Irish success stories, it’s
impossible not to consider the achievements of
McWhinney’s Sausages – one of the brands now famous
for punching well above its weight in the food industry
sector.
The company is reflecting on another hectic year, whilst
looking forward to an exciting 2016. It continues to go
against the grain by investing in its processes,
headquarters, factory and equipment, a process that was
kicked off in 2011 and has already paid dividends for the
company and its army of loyal customers. We spoke to
Managing Director and owner, Kevin McWhinney, to get
the lowdown on another bumper year for the company.

The company continues to directly champion its people
and customers in a big way. Throughout 2015 it has
maintained a recognition throughout the industry and
beyond for promoting its customers in this very
publication, heavily across social media, and in
newspapers across the UK and Ireland. McWhinney’s has
now given away literally thousands of pounds worth of
fantastic prizes to the general public via its Bigfoot
Sausages Facebook page, an amazing process given the
fact that those same people can’t actually buy the

products in supermarkets. As Kevin said, “it’s not about
the buying in stores that makes our famous giveaways so
important. We realise that the general public are our
biggest route to market, and if they walk into a chip shop,
café or restaurant and directly ask for a McWhinney’s
sausage, then that’s a massive win. We know for sure that

undertaken many shop
fits. From his years in
the industry Adrian has
picked up on what,

Adrian has built his ‘Midgleys’ brand throughout his shop fits and
says that it gives you the chance to start a fresh and build on the
experience you wish to give the consumer.
Meet Adrian
First and foremost every refit I have undertaken I have seen an
increase in trade. This isn’t down to luck though, when planning
to undertake a shop fit you must consider all options. You, your
staff, your customers, the community, the suppliers and the
products.
All these factors can have a major influence on your shop and how
the refit is undertaken. From my own experience you do need to
look at all these factors and be willing to listen to people such as
your shop fitters you have or are planning on hiring. These guys
are the experts and have a wealth of knowledge.

Sort out the shop fit clearly beforehand, a shop fit isn’t just the
time while the fitters are in the shop. It’s building up ideas,
contacts and relationships before you give the go ahead. Plan the

installed with a new digital menu also
ordered.
I first took ownership of Jolly’s Finest Fish
& Chips in 2012. I run the business with
the help of my son Gov Heer and staff, who
all take pride in what they do.
It soon became apparent that the lay out of
the shop was not practical for me to run a
successful business. So, in March 2015 I
placed an order for a new frying range. I
started an initial sketch of a new shop lay
out including locations for my new
equipment. Following advice from my
brother in law and a few sketches later, I
came to the conclusion that some walls
needed to come down and ceilings replaced.
I contacted some companies for quotes and once I had one I was
happy with, work commenced. The full refurbishment took 8 days
with everything taken back to bare brick walls and floors. New

Following the refurbishment I entered a
competition for the Best Fish & Chip Shop
in Sandwell. I am delighted to say that we
won and Jolly’s Finest Fish & Chips are
now the number one shop in Sandwell.
I take my job very seriously, using only top
quality products. I use cod that is delivered
to me fresh daily and I only ever use Maris
Piper for the chips, which my customers love.
The challenge of the refurbishment was amazing. I would like to
thank my brother-in-law Taka for the help he provided.

& Ball which took place at the Crieff Hydro
in Scotland, which was a fantastic event and
venue and would like to take this opportunity
to thank everyone involved.
So our year continues, in early summer we
received the accolade of the ‘most
sustainable fish menu’ in the World by the
MSC (Marine Stewardship Council). This was
in recognition that we have 12 MSC certified
species on our menu, which is the most in
the world.
The coverage we received from this was
incredible and the influx of sustainable fish loving customers increased once
again. This proves to me unquestionably that our customers are interested in
the sustainability and the welfare of our oceans.
To become MSC certified is now easier and cheaper and a fantastic way of
making a difference and displaying to your customers that you care about the
fish you serve.

Training
Review of 2015 and looking forward to 2016

The summer of 2015 saw the fantastic refurbishment of the NFFF
Training Academy. This was conducted by Elite Shopfitters who
produced an ultra-modern looking lecture room which is now bright
and has created a more relaxed environment for students to learn
in. Mallinson’s of Oldham also kindly installed a new traditional
counter style frying range in the frying room. This enabled us to
continue to offer students the opportunity of cooking on either a
traditional style frying range or a high efficiency frying range, which
is provided by Martyn Edwards/Frank Ford. Valuable contributions
towards the NFFF Training Academy were also provided by other
Associate Members including Drywite, EPOS Group, James T
Blakeman Co Ltd, Kerry Foodservice and Vandemoortele/P100.
For two days in early October, NFFF Regional
Directors and staff were on hand to showcase the
new facilities to Associate Members, NFFF
Members and local businesses. Rachel Tweedale,
2015 Drywite Young Fish Frier of the Year winner
showcased her skills on one of these two days whilst
Mark Corbally and Calum Lawton from Mister C’s,
2016 North East England winners for Independent
Takeaway Fish and Chip Shop of the Year, prepared

one-day and three-day training
courses which are accredited by
Seafish. Many students indicated
how much they appreciated the input
from award winning fish friers with
feedback including: “Excellent
delivery with realistic and real
business anecdotes. Thanks and
here’s to fun fish and chips!!” As well as being delivered at our Training
Academy in Leeds, both of these courses are now also being delivered
in Kilkeel, as our Northern Ireland Training Hub opened its doors to
students in 2015. A special thank you to Alan Hanna (NFFF Regional
Director) for his input into getting the Northern Ireland Training Hub
launched along with the support from Golden Glen Catering and
Middleton Foods.
Our training facilities in Leeds were used to host the semi-final judging
days for the Drywite Young Fish Frier of the Year competition in August
when enthusiastic young fish friers from across the UK demonstrated
their skills and knowledge. In May, September and October, Campden
BRI with fish frier Mark Drummond utilised the Training Academy to
conduct the preparation and cooking of fish, chip and mushy pea
samples for the Seafish Fish and Chips Nutritional
Analysis & Consumer Preferences Project. The
results should be available to the fish and chip
industry in early 2016 when fish friers can make
informed decisions about their cooked products.
In 2016 why not utilise our in-shop training package?
This package involves one of our award winning
trainers conducting six hours of training at an
individual’s business, at a date and time that is
convenient to the business. By adopting this approach means that the
students can be taught in an environment that they are used to working
in, with machinery and equipment that they feel comfortable with.
Another benefit of a fish and chip shop undertaking in-shop training is
that they can request for the trainer to focus on specific areas within
their business. Other plans for 2016 include the development of a
practical customer service skills training course along with more guest
fish friers at our three day training courses.

In Scotland, M Piper in East Lothian was unchanged at £120-£130/t but up to
£140/t for some local sales.

WARE
In the East, values were relative to fry quality, sample size and peel, with M
Piper, Sagitta, Ramos, Challenger, Victoria and Cabaret mostly £130-£160/t,
up to £170/t for the best. Agria and Markies were £150-£180/t up to £190/t,
with Divaa £180/t and a few Estima £120/t.
In the West, M Piper started at £110/t but was mainly £120/t, with Markies
£130/t and Ramos £110-£130/t. Wilja, Cabaret, Arcade, Sagitta, Victoria and
Divaa were £100-£120/t. Pembrokeshire M Piper and Miranda were £170/t to
regional outlets.
In the South, prices remained generally unchanged with a slow demand, and
frying quality was reported to be variable. Prices were generally £110-£120/t
In the East, steady trade with Desiree £180/t, Nadine £160/t and Marfona £120£140/t.
In the West, the principal variety was Wilja starting at £100/t but mainly £120/t.
In the South, white varieties included Estima at £100/t-£120/t and Marfona

overweight in the same period). In addition, about 1.3 billion tons of
foods are wasted every year.

a global food producer with attitude. Its size, soils, water and
agricultural heritage can deliver its own food security – and the

harnessed to the common cause. That we live in interesting times
is not simply an age-old Chinese proverb, it is the immediate backdrop to the British food and food-service industries. 2016 will be
another interesting year for British Fish & Chip shops.

2016 Wish List
Gregg Howard, NFFF President – I wish
for the public to recognise fish and chips
as the healthiest takeaway and with the
recent work carried out by Seafish and
Campden BRI at the NFFF HQ the
nutritional information will be clear for all to see.
Stuart Atkinson, NFFF Vice President –
I would love to see the media stop using
fish and chips as the image for stories on
salt, sugar, fats. When ever you see a
story within the media domain relating to
health risks in food a picture of fish and chips in
never far away.
Andrew Crook, NFFF Treasurer – The
last few years I have witnessed the fish
and chip shop industry undergoing a lot
of change. Gone, thankfully, are the days
of everyone worrying about what the
shop down the road is up to, we are working together
and helping each other to all become stronger. My
wish for 2016 is for things to continue on the path we
are going down as with a great product and great
people in the industry, how can we go wrong.
Craig Buckley, Regional Director for
England – My hopes would be for further
pushes to improve training for younger
people, increased member benefits for
NFFF members and to see generally
continue on from a successful year for our whole
industry.
Craig Maw, Regional Director for
England – My thoughts and hopes for the
coming year are: that more shops have
the Quality Award raising the profile of
their businesses and this fantastic
award. With more fish and chip shops become MSC

certified bringing sustainability to the forefront, and
that the two can work in a symbiotic relationship to
elevate more shops and the fish & chip industry to
new heights.
John Wild, Regional Director for
England – My hope and it may be
controversial, is that all and every
business in the land to pay VAT from the
first pound they earn. It would stop
people from trying to stay below the VAT threshold,
and possibly suppressing their income in order to do
so. A lower percentage from all instead of a higher
percentage from a few, would benefit all of us and
our economy!
Mike Smith, Regional Director for
England – My hope would be for a level
playing field for VAT that no shop pays
VAT until they reach the level for paying
it in other words we all get the first level
free of VAT.
Hugh Mantle, Regional Director for
England – My hope is to get Primary
Authority status for us on Food Safety.
Alan Hanna, Regional Director for
Northern Ireland – I would like to see
our trade to be recognised as a
profession and therefore a career path
that school leavers could take a proper 3
year apprenticeship.
John Penaluna, Regional Director for
Wales – I would like to see the NFFF
Quality Award recognised as the GO TO
standard for the public, media and all
Fish & Chip Shops.
