Most used heat settings: And observe these tips: r Some foods require longer cooking time on the Heat-Minder Unit than when using two separate temperatures on a Standard Surface Unit. High (Hi)-to start most cogking, to bring foods to steaming, to heat fat or skillet for frying and to French-fry potatoes. Medium High (M.Hi)-for most deep fat frying and for most frying on the 6-inch units. . Avoid excessive stirring. Medium Low (M.Lo)-for frying and browning meats and for boiled icings and griddle cakes. Low (Lo)-to ffnish cooking large amounts of food, for uncovered meat and chicken after browning and for sauces and fudge. Simmer (Sim)-to finish most cookiqg and to braise covered meat after browning. Warm-to Turn control to desired cooking temperature. Automatically regulates heat so pan won't get too hot. Guards against burned or scorched foods! For best results: use flat-bottomed utensils of medium-weight metal with high heat conas aluminum. Should have ductivity-such keep food warm (set to arrow). r When frying breaded foods, crumbs may act as insulation in bottom of pan-turn to higher temperature. o Alrvays turn control Off when utensil is removed to prevent scorching when utensil is returned.
