Medley)
Pinakbet is a vegetable medley usually compose of kalabasa,
ampalaya, talong, okra and sitaw, with pork and shrimp,cooked
in bagoong. It is an Ilocano original adopted by different
regions with different variations.
This recipe is a typical Ilonggo Pinakbet, simply delicious and
rice demanding viand. Try this and prepare to have a heavy meal
today.

Ingredients:
1/4 lb. Pork, sliced
10 – 12 pcs. medium shrimps, with head on and peeled
1/4 medium kalabasa (squash), peeled and sliced
1 small pack okra
1 medium talong (eggplant), sliced
Buttered Garlic Shrimp
1 medium ampalaya (bitter melon), sliced
Calamares (Fried Squid Rings)
Escabeche
12-15 pcs. sitaw (string beans), cut about 2-3 inches
long
Ginataang Pagi
5 tbsps. bagoong (shrimp paste)
Inihaw na Pompano
Kinamatisang Pusit
Paksiw na Dulong o Lubo-Lubo
(Silverfish)
Paksiw na Isda
3 cloves garlic, minced
1/2 cup red onions, sliced
3 tbsps. ginger, sliced thin
1 red tomato, sliced
Pinaputok na Isda
1 pc. pork flavored bouillon
Sarciadong Isda
2 cups water
Sardinas (Bangus Sardines)
Shrimp Tempura
Sinigang na Bangus sa Miso
Sinigang na Isda (Salmon Belly)
Sinigang na Isda (Salmon Head)
Sinigang na Pompano
Sinugba na Isda
Sisig na Pusit
Spanish-Style Bangus Sardines

Tortang Lubo-Lubo (Silverfish)

Cooking Directions:
1. Sauté in order garlic, onions, ginger and tomato. Add pork
and continue to sauté until light brown. Add shrimp and
continue to sauté until pink. Add shrimp paste.
2. Add water and bring to a boil. Continue to cook until pork
are tender. Add pork bouillon.
3. Add squash and cook until tender. Add the remaining
vegetables in order, ampalaya, sitaw, okra and eggplant.
Stir occasionally.
4. Cook in medium low fire until vegetables are cooked. Add
salt and pepper to taste. Do not overcook vegetables.
5. Serve hot with rice.
