January 2014 HAPPY NEW YEAR! May you have a healthy, happy and prosperous 2014! A few brief reminders for 2014….. Our winter season is now in full swing and traffic has become very heavy. We would like to remind everyone that our speed limit throughout the community is 15 mph. Please remember children under the age of sixteen (16) are not permitted to drive golf carts without the accompaniment of an adult. Please be advised that two (2) vehicles are allowed to be parked on your site. This does not include your golf cart. In the RV Section you are permitted to store one boat, canoe, or Jet Ski up to 20ft. behind your unit. If you have a driveway, all vehicles must be parked on the driveway NOT in the grass. For our R.V. residents your Cost of Living Increase (CPI) is 1.7%. Your site rental for the November 1, 2014 to April 30, 2015 will increase by $50.00 for the season. Your site rental for the 2014/2015 season will be $3015.00. In order to reserve your particular requested site, a deposit of $1,000 is due at reservation time. Please note the remainder of the balance of $2,015.00 is due on or before October 1, 2014. Your reservation notice and rental agreements will be placed in your mailbox the beginning of February. If you have any questions or concerns please call or stop in at the administration office. Please note that any Vendor you decide to use for work on the outside of your home must have their Insurance and Liability Information on file at the Administration Office. Otherwise, Citrus Park will not permit them to work on the property. For any one intending to sell or transfer their home to someone else, please be advised that Citrus Park does not refund or reimburse the difference of the unused lot rental amounts to the seller. It is recommended that the seller consider this and perhaps incorporate this dollar amount into the selling price. All units listed for sale must have administration approval before Citrus Park will transfer lot/site to a new tenant. This can be accomplished with a simple notification phone call to the administration office. As a reminder, all post lights are to be left on every evening (year round) for street lighting and security reasons; it must be maintained in a working manner by each resident or renter. Reference: Rules and Regulations 8.5. As of December 3, 2013 Cindy Latesky has been licensed by the State of Florida, Department of Highway Safety and Motor Vehicles as a broker in Mobile Homes. This license allows Cindy to conduct and carry on business as a used Mobile Home Broker. THEREFORE, in order to comply with the State Department Regulations, the Citrus Park Administration will only recognize and recommend sales conducted by licensed professionals as Cindy Latesky. At the December General Meeting, vice-president Ralph King reminded residents to write out concerns and return them to any Board member. The Board will discuss your concerns and present them to management. Dennis has requested this procedure because it is more efficient than his receiving numerous queries on perhaps the same topic. We hope to meet regularly in the future with Dennis in order to keep our Park one of the best in Florida.Remember these guidelines for recycling. Plastic containers marked 1 to 7 can be recycled. Aluminum cans, steel cans, green, white and brown glass bottles can be recycled. The Ball League appreciates it if you put your aluminum cans in their bins between the recycling bins. Newsprint, magazines, cardboard and boxboard can be recycled except for waxed containers. Foil pie plates and pans can be recycled. Empty aerosol cans can be recycled unless they had toxic products inside. Fine paper goes in the Garden Street bin. Activities Department receives some money from this bin. Put all other metals and glass dishes in the trash dumpster. Large household items will be picked up by Veolia Waste Service. Call 334-1224. This number is on the cover of the Citrus Park Directory. Besides its delicious taste, it’s pretty much the only food that does not spoil while in an edible state. But why, exactly, doesn’t honey go bad? Honey has a lot of pretty incredible properties. It’s been used and investigated for medicinal properties for a long time, especially as a treatment for open wounds. Herodotus reported that the Babylonians buried their dead in honey, and Alexander the Great may have been embalmed in a coffin full of honey. The oldest honey ever found was unearthed in Georgia, and dates back over 5,000 years. So, if you found yourself in possession of some 5,000 year-old honey, could you eat it? Well. . . Chemical Properties of Honey Honey is a sugar. You may have heard all sorts of things about the health benefits of substituting honey for sugar, which may or may not be true. While honey isn’t the same as regular, granulated, white sugar, it’s still a sugar. And sugars are hygroscopic – they don’t contain much water in their natural state. And very few bacteria and microorganisms can live in the resulting low-moisture environment. Another thing that sets honey apart from other sugars is its acidity. Honey’s pH is between 3 and 4.5 (or, more precisely, 3.26-4.48), which also kills off anything trying to make a home in honey. And there are a few factors behind honey’s low moisture content, including: Bees First, bees contribute to the low water content of honey by flapping their wings to dry out nectar. Second, the way bees get nectar into honey combs is by vomiting it there. This sounds really gross, but the chemical makeup of bees’ stomachs also contributes to honey’s long shelf-life. Bees’ stomachs have the enzyme glucose oxidase, which is added to the honey when the nectar is regurgitated. The enzyme and nectar break mix to create gluconic acid and hydrogen peroxide. The hydrogen peroxide is also a hostile force for anything trying to grow in honey. (Although, maybe not that effective in your cuts.) Storage This is important. The fact that honey is hydroscopic means that it has little water in its natural state but can easily suck in water if its exposed to it. If it does that, it could spoil. So the final key to honey remaining unspoiled is making sure it’s well sealed and stored in a dry place. Crystallization Related to storage is the problem of crystallized honey. NOTE: Honey that’s crystallized is not necessarily spoiled. Americans apparently see crystallized honey as “wrong,” so large packers filter honey to remove any particles which may lead to crystallization. Raw honey and organic honey doesn’t go through the process, but that doesn’t mean it’s going to spoil. Also, different honey has different rates of crystallization. So it may just be that the honey you have is more prone to crystallization. So crystallization doesn’t mean there’s anything “wrong” with your honey — but if you don’t like it, the big tip is to not put your honey in the refrigerator. Below 52 °F, crystallization slows down, so feel free to freeze your honey. And at temperatures above 77 °F, honey resists crystallization best. But honey crystallizes most quickly at temperatures of between 50 and 59 °F. So, if you want to avoid having to heat your honey to remove crystals (apparently slow, indirect heat is best for that, by the way), avoid the refrigerator. Caveat: Infants So, yes, honey mostly doesn’t spoil. However, honey can contain spores of Clostridium botulinum. This isn’t harmful to adults and children over one year old, whose gastrointestinal tract is developed enough to deal with the spores. But children under one are at risk for infant botulism, so honey is not for your infant. So could you eat 5,000 year old honey? Well, if it’s spent that time sealed and stored against moisture, sure. If it’s crystallized, it’s not spoiled, just heat it up and put it in your food of choice. Unless you’re under one year old.
