Ingredients
30ml Midori
30ml Cointreau
30ml lemon juice
Double Strain
After shaking your cocktail, ensure there are no ice fragments in it by
straining it twice. A professionally made cocktail is simultaneously poured
through a ‘bar strainer’ placed directly on the shaker and a ‘fine strainer’
into the glass. Two tea strainers work well if you don’t have a bar strainer.
Great for a crystal clear Martini.
Method
1. Shake ingredients in a cocktail
shaker with ice.
2. Strain into a Martini glass.

Midori - the Japanese
word for ‘green’ - is the
sweet, melon-flavoured
liqueur behind the iconic
Japanese Slipper cocktail.
3. Garnish with a maraschino cherry.
To ‘muddle’ means to firmly press fruits, herbs or spices in the bottom of a
glass to release their flavour. A good alternative to a bar muddler is to use
the flat end of a rolling pin.
Chill a Glass

Before preparing a cocktail, simply fill the glass with ice so that it chills the
glass. Discard the ice just prior to pouring the cocktail. Commonly used for
a Martini.

Ingredients
Dissolve sugar in boiling water using equal parts sugar and water
(eg 1 cup of sugar dissolved in 1 cup of boiling water). Use spring or
filtered water to ensure best taste. Caster sugar dissolves easiest.
Method
Make a Shaker
1. Pour measures of Paraiso and
Midori over ice into a glass.
If you don’t have a cocktail shaker, a large, thick-walled jam jar is a
great substitute.
2. Top up with a mix of half cranberry
and half orange juice, and serve.
Keep it Cold
Shaking a cocktail on ice for a full 20 seconds or until the cocktail shaker
gets ‘iced up’ will ensure your cocktail will be super cold and provide
optimal presentation.

60ml pineapple juice
Juice of half a lime
2 dashes of Angostura Bitters
Method
1. Build, shake and strain over ice.
2. Garnish with 2 pineapple leaves.

8 fresh lime chunks
15ml sugar syrup
2 teaspoons of caster sugar
Method
1. Muddle lime chunks, caster sugar and
sugar syrup in a cocktail shaker.
2. Add ice and 42 Below Vodka and
shake vigorously for 20 seconds.
3. Pour into a large Rocks glass
and serve.
(No garnish required.)

45ml Jose Cuervo Tequila
120ml tomato juice
1 dash of Tabasco sauce
2 dashes of Worcestershire sauce
2 pinches of salt and pepper
Method
1. Add all ingredients into a tall glass
with ice and stir vigorously.
2. Garnish with a celery stick, lemon
wedge and pepper.

30ml fresh orange juice
1 fresh passionfruit
Method
1. Scoop out the flesh of the passionfruit
into a chilled Martini glass.
2. Add other ingredients to a cocktail
shaker and shake with ice.
3. Strain into the Martini glass.
4. Garnish with a passionfruit slice.
Method
1. Place ice into a cocktail shaker or
Boston glass.
2. Pour Vermouth over ice, stir, strain out
and discard Vermouth, keeping ice.
3. Add Grey Goose and stir.
4. Double strain into a chilled martini glass.
5. Garnish with fresh lemon peel or an
olive on a toothpick.

45ml Grey Goose L’Orange
10ml Grand Marnier
15ml sugar syrup
20ml cranberry juice
10ml fresh lime juice
Method
1. Pour all ingredients in order listed
into a cocktail shaker with ice.
2. Shake and strain into a chilled
martini glass.
3. Present with a twist of orange.
Method
1. Stir gin, lemon juice and sugar
syrup over crushed ice in a short
glass. Top with more crushed
ice and drizzle creme de cassis
over the top.
2. Garnish with a lemon slice and
blackberries.
British Spring Punch

60ml Hendrick’s Gin
30ml squeezed lemon juice
30ml elderflower liqueur
10ml creme de cassis
Piper-Heidsieck Champagne
Method
1. In a cocktail shaker with ice, shake
the Hendrick’s, lemon juice and
elderflower liqueur and pour into
glass and top with Champagne.
2. Crown with creme de cassis and
garnish with a wedge of lemon and
a handful of red currants.
