Oyster Mushroom Sauté
Serves 4
This simple stir-fry is delicious over rice or as a topping for
your favorite sausage.
3 medium leeks
2 teaspoons extra virgin olive oil
½ cup dry Riesling
1 red Italian frying pepper
1 8-ounce package fresh oyster mushrooms
1 teaspoon tamari, diluted with ½ teaspoon water
Grated Parmesan cheese
1.Clean and slice leeks.
2.Heat olive oil in sauté pan, add leaks when hot, and
sauté for about 10 minutes.
3.Add a splash of Riesling if leeks begin to stick to pan.
4.Add another splash of wine, then add the oysters, followed a few minutes later by the pepper.
5.Add wine as needed (to the pan, silly)!
6.In last few minutes, add the tamari. Serve over rice
(optional), sprinkled with grated cheese.

We started working with Bob Barthel and Nino Ridgeway
more than 30 years ago, way before local was a buzzword.
Since that time, employees and shoppers alike wait for
the first, sweet apples (and pears) to arrive from their
