MAX MARIOLA PRESENTS HIS WINTER MENU AT THE DEER CLUB FEATURING A GLOBETROTTING TOUR OF TASTE Rome, October, 2015 – The Deer Club lounge, restaurant and liquor bar at the D.O.M Hotel Rome reopened its doors on October 1 after the summer break, marking the start of the autumn season, with a new menu of international breath featuring a globetrotting tour of taste. Executive Chef Max Mariola has created a brand new menu in which traditional and seasonal Italian fare is accompanied by recipes that hail from every corner of the globe, starting from Brazil and then moving on to China, Japan and India, before finally taking in the Mediterranean with Greece and Italy. The idea was inspired by the chef’s great love for travelling and his desire to recreate at The Deer Club the dishes that impressed him the most. The result is a varied gastronomic offering that takes diners on a voyage of discovery through the world’s flavours as interpreted by Max Mariola, with the skill and technique that are distinctive features of his cooking. The new menu opens with the ‘Piatti’ or ‘dishes’ section. This broad selection includes ‘Sea bass ceviche served with fresh plantain chips’ from Brazil and Chinese ‘D.O.M. - Plings, steamed ravioli with soy sauce and spicy sprouts’, before evoke Mediterranean flavours with ‘Chicken Souvlaki accompanied by a Greek salad’. Then there are some typically Italian proposals made of seasonal products, but always with the chef’s personal twist on them, and vegetarian dishes like ‘Salad of roots and tubers with bacon, goat cheese and hazelnuts’, the evergreen ‘Fresh tagliolini pasta with shaved truffle and parmesan cheese’ and ‘Pumpkin “sformato” with melted cheese and mushrooms’. The main dishes in the ‘Piatti’ section are followed by Max Mariola’s ‘Fritti’ and ‘Sushi & Sashimi’. His ‘Fritti’ section opens with a recipe inspired by the Indian tradition, ‘Vegetable samosas served with a banana and tamarind sauce’, followed by the Arab classic ‘Eggplant falafel with a salad of celery, watercress and powdered beetroot’ and, from Malaysia, the ‘Fish-rolls with a sweet and sour curry sauce’. To conclude, what could be better than some tasty ‘Savory meat and “broccolini” pastries’? For his plentiful offering of Japanese ‘Sushi & Sashimi’, like ‘Veggie Rainbow roll with cucumber, avocado, mango, beetroot, carrot and cream cheese’ and ‘Aburi–Spicy Toro tuna steak’, the chef use quality Italian ingredients. The desserts in the ‘Dolci’ section complete the taste tour and, alongside the traditional ‘Mille feuille puff pastry with cream and chocolate’ and the exquisitely English ‘Walnut crumble with cream and fruit compote’, the chef has looked further afield with the Japanese dessert ‘Dorayaki with chestnut cream and violet gelato’ and the typically anglo-saxon ‘Banoffee Bread with melted chocolate, brie ice cream and mixed berries’. The elegant and relaxed spirit of The Deer Club offers guests a place to spend winter evenings in a cosmopolitan setting where art and design, both ancient and modern, come together in perfect harmony, recreating the intimate, relaxed and elegant atmosphere of a private home. The culinary creations of the chef will be accompanied by a sophisticated cocktail and liquor menu put together by the hotel’s expert barmen and DJ sets. **** CHEF MAX MARIOLA Chef Max Mariola was born in Rome but grew up in Nettuno, where he developed his passion for fish and became an expert on the subject. After studying art, he looked set to follow in his father’s footsteps and take over the family’s restoration workshop in Via della Vite in the center of Rome. But despite everyone’s expectations, the main influence on his professional career was his mother’s outstanding cooking. After various stints working for restaurants of the calibre of Il Castagnone at the Diana Park Hotel in Nemi, in 1994, and the Symposium in Cartoceto, in 1997, in 1999 Max Mariola was hired as assistant to chef Laura Ravioli on the highly reputed TV channel Gambero Rosso, where he went on to meet chef Fulvio Pierangelini, with whom he has worked with on numerous private events and ceremonies. The presenter of the highly popular TV programme “Cucine d’Italia” and a well-known face on the Gambero Rosso Channel, in recent years Max Mariola has acted as a consultant for various clients in the hospitality sector. From 2010 to 2013 he was executive chef at the Boscolo Hotels chain in Italy and Europe and in January 2013 he became executive chef at the D.O.M. Hotel Rome. THE DEER CLUB In a setting that matches the styling of the hotel, populated by satin-upholstered sofas, long partition curtains with nocturnal colour nuances, crystal glass chandeliers, three valuable “Ladies and Gentlemen” screenprints by Andy Warhol and huge Venetian style mirrors that solicit non verbal communication, The Deer Club lounge and restaurant welcomes guests every day, from cocktails to after dinner, bringing together art, fine cooking and the atmosphere of a typical New York liquor club in a unique scenario. The wall over the fireplace at one end of the dining room is dominated by an impressive hunting trophy in the form of a deer’s head, the symbol of Rione Regola, the storied seventh ward in Rome where the captivating Via Giulia is situated. D.O.M HOTEL Located in Via Giulia, one of the smart streets in the historical center of Rome and strategically positioned between Piazza Farnese, Trastevere, Piazza Navona, the Ghetto and San Pietro, the D.O.M. is a 5-star hotel in a storied building dating back to the 17th century.
