A Chef’s Introduction to Our Men’s Cooking Club ! !The Teaching Kitchen at Soleil at Laurel Canyon Les Marmiton is a men’s cooking club that has 16 chapters is Canada and the U.S. with 4 chapters in the Atlanta area we now have over 100 members. The first chapter started ! ! in Montreal in 1977! There are over 800 members in the various North American chapters! ! Proud of Their Presentation The Canton Chapter now has 36 members, most living in the Active Adult community of Soleil at Laurel Canyon. The first meeting of the group that became Les Marmiton of Canton took place on a sunny Sunday in November of 2007 in a neighbor’s backyard. WINE PAIRINGS ! ! ! PREP WORK / PREP WORK ! The Canton Chapter is not only proud of our cooking but our active support for Charitable causes including supporting the UCCA’s efforts for the Atlanta Food Bank. Our Chapter also helps on fund raising for Angel House of North Georgia, a care center for young girls at risk. Our cooking events are held in Soleil of Laurel Canyon’s Clubhouse’s teaching kitchen (pictured on page 1), which has 6 student stations and chef station. We cook on the 2nd Tuesdays from September thru May and we already have guest chef’s thru March 2013. Members at Work ! ! ANGEL HOUSE FUND RAISING DINNER ! The Chefs who have cooked with us have contributed greatly to our knowledge of food preparation and every event has been enjoyable for both the chefs and our members. On average we prepare for 24 attending members plus the Chef and our able kitchen helper. We have a membership at Restaurant Depot and have become adapt at sourcing everything except unique items that our guest Chef may help source. Our international group has a website that our membership share. We have guest chefs and event menus stored along with photos from many of our events. Our archives at the bottom of the page shows 3 years of past events. ! TOASTING AN APPETIZER ! ! BEAUTIFUL The Monthly Event A typical event of Les Marmitons begins around five in the evening as members gather to meet the Chef, hear the Chef explain the gourmet menu created for the evening, and establish timelines for the meal preparation and share a glass of wine. ! Members attending are assigned to teams with one member serving as the team leader. Each team is responsible for preparing, cooking and serving one course under the direction and guidance of the guest chef. During preparation, the Chef circulates through the kitchen providing guidance and advice to each team. Team members for one course also have ample opportunity to learn the techniques and special preparation tips for the other courses. Except for the final, finishing touches, the major preparation is completed by 7:00 and first course is served. Each course is typically accompanied by a wine that has been specially selected to enhance the enjoyment of the food. During the course of the meal, the preparation and presentation of each course is explained by the team leader, the team members are introduced, and the Chef provides additional comments and constructive critique! When the final course is completed the members recognize the Chef for his or time, expertise and professionalism. Special attention is always given to the Chef’s restaurant and we raffle off $100.00’s worth of gift cards to the restaurant!
