for the Potatoes For the Bravas Sauce 12 large rooster potatoes Spanish smoked paprika Spanish hot paprika sea salt 400ml mayonnaise 150ml tomato sauce 1 tsp PX sherry vinegar 1 tsp Spanish hot paprika PATATAS BRAVAS bravas sauce (serves 4) Method 1. for the bravas sauce: Blend all ingredients in a food processor. Rest and chill for 1 hour before serving. 2. Wash and chop potatoes into cubes (no need to peel). Fry the cubed potatoes at 135˚C in a deep fat fryer until a cocktail stick can pass easily through the potato cube. 3. Season the potatoes in a bowl with sea salt and smoked paprika. Allow the potatoes to rest for 5 minutes. 4. Turn fryer up to 175˚C and fry potatoes until golden brown. 5. Season the potatoes with hot paprika and some more salt. 6. Serve hot with some Bravas Sauce. [ 229 ]
