NIGHTLY CLIFF DIVING CEREMONY As the sun begins its slow dive into the ocean, torch
lighting signals the nightly cliff diving ceremony. Legend tells us the last chief of Maui, Kahekili (The
Thunderer), proved his spiritual strength by leaping from sacred Pu’u Keka’a to the Pacific. With sunset
painting the sky, a young cliff diver honors his heritage each evening by re-tracing footsteps in the sand on
Ka‘anapali Beach. A chant of old Hawai’i begins the progression of our warrior; the echo of the conch shell
announces his arrival. He leaves a trail of glowing torches surrounding the lagoon as he makes his way to
Black Rock. Upon reaching the summit, he offers his torch to the ocean below, casts his flower lei into the
sea; and finally takes the breathtaking dive from Black Rock into the rolling surf below. Enjoy this nightly

Our Executive Sous Chef Raymond Nicasio recently
competed as one of five finalists at the prestigious
Starwood Americas 2014 HOTchef Competition in San
Diego, California.
With the launch of the new Cliff Dive Grill and flame
grilled skewer menu, we asked Chef Ray to share with
us what inspired this menu: “You often see families
gathering on the beach having a good time grilling
their favorite food. This is the sense I am recreating at
Cliff Dive Grill. Food is always more enjoyable when
there is someone you can share it with.” explains Chef
Ray. The trick to creating these tantalizing flavors?
“We started marinating the beef, shrimp, chicken,
fish and vegetables with our house made marinades
24 hours in advance so that the flavor permeates
through the ingredients completely. We then assemble
the ingredients on a skewer with fresh vegetables.
Once cooked, the skewers are accompanied by three
sauces: Cilantro-Lime Honey, Kimchee Miso Aioli, and
Spicy BBQ sauce. Guests can enjoy creating their
own flavor combinations as they dip each skewers in
the sauces. I think that’s why people like it -it’s great
for sharing especially if you order Ke ali‘i or Kamali‘i
combo. Paired with our signature Black Rock Lager by
Maui Brew Co., it can’t be beat.” continues Chef Ray.

Craft Session on July 12. The Maui Craft Session is a
celebration of the craft industries of spirits, beer and
cigars. This annual event takes place on Sheraton
Maui’s Ocean Lawn, with legendary Pu’u Keka’a
as the backdrop. “The Maui Craft Session 2014 will
give aficionados and enthusiasts an opportunity to
taste spirit and beer styles that have been created
through time honored traditions for ages, and taste
them head-to-head with those that are produced
with techniques and methods of the present day,”
states Brandon Maeda, Director of Food & Beverage
at Sheraton Maui Resort & Spa. “The event will allow
our guests to re-discover and explore ‘Old World vs.
