CUSTOMER IN THE SPOTLIGHT!
Penny’s Cafe, Penn
Our Customer in the Spotlight this month is Penny’s Cafe from the Penn area of Wolverhampton.
Glynis Penny is the proud owner having just scooped a national award in this year’s ‘Best Breakfast Awards’.
Penny’s cafe only uses Blakemore wholesale products for their breakfasts, with Glynis commenting;
It is a great honour and achievement to win the award for Best Full English Breakfast in the UK in our own
category of Cafe’s, Coffee Bars and Farm Shops.
I can only put our success down to, hard work, sourcing the correct products and listening to our customers.
It has been difficult to find the right ingredients and has taken a lot of trials on certain products in order to
create out Full English Breakfast. We endeavour to ensure that all products are top quality and fresh. Our core
breakfast items are supplied by Blakemore Cash and Carry
in Wolverhampton who have helped us to maintain our
high standards of customer satisfaction by supplying us
with high quality products.

ALMOND-ROLLED
GOATS’ CHEESE
Watercress comes into season in April, when its peppery flavour will work in contrast to the rich goats’ cheese.
Preparation method
Ingredients
1. Preheat the oven to 200C/400F/Gas 6.
For the beetroot
250g/10½oz fresh beetroot
salt and freshly ground black pepper
75ml/3fl oz olive oil
1 tbsp balsamic vinegar
2. For the beetroot, cut the beetroot into cubes and
place into a bowl. Season well with salt and freshly
ground black pepper and drizzle
with the olive oil.
3. Place onto a baking tray and transfer to the oven to
roast for 30-40 minutes, or until soft.
For the goats’ cheese
vegetable oil, for deep frying
200g/7oz soft goats’ cheese
75g/3oz plain flour
200g/7oz flaked almonds
4. Remove from the oven and place into a bowl.
Drizzle with the balsamic vinegar and stir to coat.
5. For the goats’ cheese, half-fill a deep,
heavy-bottomed pan with the oil and heat until a
breadcrumb sizzles and turns brown when dropped
into it. (CAUTION: hot oil can be dangerous.
Do not leave unattended.)
6. Cut the goats’ cheese into eight equal pieces and
roll up into balls. Dredge the balls in the flour.
Less than 30 mins preparation time
10 to 30 mins cooking time
Serves 4
For the dressing
200g/7oz fresh basil leaves
75g/3oz smoked almonds
1 garlic clove
100g/3½oz parmesan cheese
100ml/3½fl oz olive oil
small handful watercress, to serve
7. Spread the flaked almonds out on a plate and roll the
cheese balls in the flaked almonds, pressing them into the cheese, to completely coat (don’t worry if the almond flakes break up a bit) .
8. Carefully add the cheese balls to the hot oil and deep-fry for about 30 seconds - one minute, or until golden-brown all over. Carefully
remove with a slotted spoon and drain onto kitchen paper.
9. For the dressing, place the basil, smoked almonds, garlic, parmesan and olive oil into a food processor and blend until smooth.
10. To serve, place a small amount of watercress onto each plate and place a piece of deep fried goats’ cheese on top. Place a few
cubes of beetroot around the cheese and spoon over a little of the dressing.
ROAST SHOULDER OF LAMB WITH HERBS AND HONEY
Forget about carving this easy slow-cooked pot roast – pull the fragrant, tender lamb from the bone, rustic style.
Preparation method
1. Preheat the oven to 200C/400F/Gas 6.
2. With the tip of a sharp knife, make shallow scores through the
outer layer of skin and fat of the lamb shoulder, but not into the
meat, cross-hatching the entire surface.

3. Mix the dried camomile, the thyme, rosemary, sage and oregano together in a bowl.
Season well with salt and freshly ground black pepper.
4. Press a handful of the herb mixture into the skin of the lamb, massaging it in well all
over the flesh of the lamb.
5. Sprinkle some of the herb mixture across the bottom of a casserole with a lid. Place
the lamb into the casserole, then squeeze the lemon juice over the top, before
sprinkling with any remaining herb mix.
6. Drizzle the honey over the top of the lamb and pour over a little olive oil.
7. Pour the water into the casserole, then put the lid on. Transfer to the oven and cook
for 2½ hours. Check the dish after one hour - the lamb should be taking on a little
colour. If the water has evaporated, add a little more to maintain the dish’s moisture.
8. After the 2½ hours cooking the lamb meat should pull away easily from the bone.
9. Remove from the oven and allow to rest for 4-5 minutes.
10. To serve, using a knife and fork, pull large pieces of meat away from the bone and
arrange on a large serving place. Drizzle the meat with any pan juices and allow
guests to help themselves.

1.4kg/3lb shoulder of lamb, trimmed
handful dried camomile (or contents of 4
camomile teabags)
½ bunch fresh thyme, leaves only
4 sprigs fresh rosemary, leaves only
12 fresh sage leaves, roughly chopped
1 tbsp dried oregano
salt and freshly ground black pepper
1 lemon, juice only
1 tbsp good Greek or wild flower clear honey
2 tbsp olive oil
125ml/4fl oz water

EASTER LEMON PAVLOVA
If you’re looking for something different for an Easter dessert, this stunning pavlova should
do the trick: lemon curd pavolva topped with mini-mounds of meringue and chocolate eggs.
Ingredients
For the meringue
6 free-range egg whites
350g/12oz caster sugar
2 tsp white wine vinegar
2 level tsp cornflour
For the candied lemon zest
100g/3½oz caster sugar, plus
extra for coating
the zest
4 lemons, zest only (in long
thin strips)
1. Preheat the oven to 160C/325F/Gas 3. Lay a piece of
baking paper on a baking tray and draw a 25cm/10in circle on it.
For the lemon curd filling
6 free-range egg yolks
350g/12oz caster sugar
4 lemons, juice only
225g/8oz butter
450ml/¾pint double
cream
To serve
30 chocolate mini-eggs
30 mins to 1 hour preparation time
Over 2 hours cooking time
Serves 6-8
2. Put the egg whites into a bowl and whisk on the fastest speed with an electric hand-whisk or in a
free-standing mixer until stiff. Gradually, still whisking on maximum speed, add generous
teaspoons of sugar until the mixture is stiff and shiny and stands in peaks.
3. Blend the vinegar and cornflour together in a cup and mix until smooth. Stir this into the
meringue mixture.
4. Spread half of the meringue mixture onto the paper to give a 25cm/10in circle. Fill a piping bag,
fitted with a rose nozzle, with the rest of the meringue mixture. Carefully pipe about 10 separate
little nests positioned equally around the edge of the circle.
5. Slide the meringue into the middle of the oven, turn the heat down to 150C/300F/Gas 2 and bake for 1½-2
hours (check after one hour), or until it easily comes off the paper. The pavlova will be a pale creamy colour
rather than white. Turn off the oven and leave the pavlova in the oven to become cold.
6. Meanwhile, make the lemon curd for the filling. Place a heatproof bowl over a pan of hot water, simmering
gently on the stove. Add the egg yolks, sugar and lemon juice to the bowl and whisk. Gradually add the
butter, whisking continually until it starts to thicken. It should coat the back of a spoon when it reaches the
correct consistency. It will firm up further once cooled.
7. Whisk the double cream in a large bowl until thickened, then swirl it through the cooled lemon curd.
8. Spoon the lemon curd and cream mixture into the middle of the pavlova and spread over the base of the
meringue nest. Spoon a lemon filling into each of the mini nests. Decorate by placing three chocolate minieggs in each of the 10 mini-nests around the edge of the dessert.
9. Put 100ml/3½fl oz water and the caster sugar in a pan. Bring to the boil, stirring. Add the zest and boil for
2-3 minutes, or until syrupy. Drain on parchment paper, roll in extra caster sugar and leave to dry in a warm
place for a couple of hours, or overnight. Place a delicate mound of candied zest in the middle of the pavlova,
and serve.
