Note From the Editor
T
here’s a saying that goes like this:
“Travel is the only thing you buy that
makes you richer”. The ironic thing is that
I saw this quote for the first time online,
just after I arrived back in the United
States from a recent trip to Costa Rica.
My wife and I had been discussing how
different our perspectives were on the
trip as a whole and it occurred to me that
although we had different opinions on
our vacation, we still learned a great deal
about ourselves and our lives here back
in the U.S.
Traveling, and planning for travel, can
be an immensely rewarding experience,
but I get it when friends and family
say that it can also be a hassle or too
expensive. The planning stage can be
overwhelming, all on its own, and I don’t
yet know what it’s like planning a trip with
children but I’m sure that comes with its
own set of obstacles. However, if done
early, tenaciously and with persistence,
planning for a trip can be rewarding – like
a treasure hunt.
In this issue of Mercado Bilingüe we
spend a few pages talking about various
aspects of travel so that maybe we can
inspire some travel ideas within you. If
you’re looking for a place to go, make
sure to check out Robert Leal’s article on
which online booking tool can save you
the most money. The beauty of traveling
is that you don’t have to go far to discover
something new. With that in mind, we
dedicated a page this issue to compiling a
list of inexpensive places to visit right here
in Texas. If you’re feeling adventurous, our
resident “foodie”, gives her take on Costa
Rica in this issue and even provides you
with recipes to bring the flavor of Costa
Rica to you.
During my 4 hour flight to Costa Rica,
I read a paranormal romance novel
titled Lash: Broken Angel; putting any
jokes aside about a man reading a
romance novel, the story was actually
an entertaining supernatural thriller with
some mystery and thought provoking,
mind-bending psychology mixed in. I
read the book as research, before sitting
down to talk with author; L.G. Castillo
a professor of Counseling Psychology
at Texas A&M. We spoke about her use
of strong Latino characters and what
role her work plays in her writing. My
interview with her is on page 11 and
online at www.mercadobilingue.com.
I ran across another quote while putting
this issue of Mercado Bilingüe together.
This one is from St. Augustine and goes
like this “The world is a book and those
who do not travel read only one page.” I
couldn’t agree more. I take pictures of all
the places I traveled to, some of which are
included here, because I like reminding
myself to visit as many “pages’ in that
“book” of the world, as I possibly can.

T
raveling, if done right, can be
an adventure, a new experience
and an opportunity to discover the
world. Whether it’s to a neighboring
city or a country half way around
the world, traveling is something to
look forward to. Planning definitely
helps, but even then, there never
seems to be enough time to see and
do everything on your list.
My traveling adventures most
recently led me to the country of
Costa Rica. I knew very little about
this country other than the fact that
they spoke Spanish and that it was
sandwiched between the Pacific
Ocean and the Atlantic Ocean, but
being in Latin America, it had to

I planned for a 6-day trip starting
in the Arenal Region of Costa Rica,
home of the majestic Arenal Volcano
and café con altura, the coffee
grown in the highest elevations of
this region. The Arenal Volcano,
although
dormant,
provided
a beautiful background to the
surrounding jungle accompanied
by a symphony of wildlife sounds.
Everywhere I went, I encountered
friendly ‘Ticos (as the locals call
themselves) ready to strike up a
conversation and teach me about
their beautiful country.
My eyes feasted on rolling hills and
canyons blanketed with canopies
of various shades of green as I
drove through the countryside
exploring this beautiful nation. I
quickly realized that ‘Ticos (as the
locals call themselves) had found
a way to integrate themselves into
their natural surroundings and
learned how to appreciate nature by
preserving it and coexisting with it
rather than destroying its beauty and
resources. This was very apparent as
I witnessed the strength and beauty
of the La Fortuna Waterfall just a few
kilometers from the center of town.
My eyes feasted on rolling hills

After a few days of hiking through
a cloud forest and swimming in
the pristine waters of La Fortuna, I
headed west towards the coast in
the Guanacaste Region. I spent the
second half of my vacation taking
walks on the beach, kayaking and
relaxing under a palapa where I sat
admiring the glistening sun on the
ocean ripples and the melodic sound
of the crashing waves meeting land; it
looked like a picture from a post card.
All these activities made me work
up an appetite - luckily everywhere

being the Guaro Sour and the Gallo

Here are my takes on these two
delights for you to try.
Guaro Sour
Ingredients
2 shots Cacique Guaro
2 ounces Lime Juice
1 ½ teaspoons sugar
Ice
Lime Wedges for garnish
Directions
1. Add Cacique, Lime juice, and
sugar into a shaker. Top off with
ice.
2. Give it a couple of good shakes.
3. Pour into glass and garnish with
lime wedges.

Each morning I was greeted with a
hefty portion of delicious Gallo Pinto
during breakfast, accompanied by an
omelet and fresh fruit. Gallo Pinto is
a staple in ‘Tico cuisine consisting of
rice and black beans; it can be eaten
any time of day, but in Costa Rica it is
most commonly served for breakfast.
Here is my take on it for you to try.
Gallo Pinto
Ingredients
1 tablespoons vegetable oil
1 medium red bell pepper, finely
chopped
1 medium onion, finely chopped
2 garlic cloves, minced
3 cups cooked white rice
2 cups cooked black beans, drained
and rinsed
3- 4 tablespoons of Salsa Lizano or

Worcestershire sauce
Salt & freshly ground black pepper,
to taste
Several sprigs of fresh cilantro,
chopped
Directions
1. Heat oil in a large skillet over
medium heat.
2. Add chopped onion and sauté
until it just begins to soften and
turns color.
3. Add garlic and chopped red bell
pepper and sauté for about 5
minutes, or until onion is golden.
4. Add Salsa Lizano or
Worcestershire, and stir into
onion, pepper and garlic
mixture.
5. Next, add the beans and then
the rice.
6. Stir the rice and beans to evenly
combine and cook until mixture
is heated through.
7. Add salt and pepper to taste and
serve hot.
8. Garnish with a sprinkle of
chopped cilantro.
*Salsa Lizano is a typical Costa Rican
Sauce, you can find it on Amazon or
in the ethnic aisle of a grocery store

KIPP Destiny Pre-K?

you may me wonder what KIPP
Destiny is and what they have to
do with Mi Escuelita Preschool.
The short answer is: KIPP Destiny
is a charter school in southwest

Escuelita to offer free Pre-K classes
to preschool children who live near

My Big Crazy
Mexican Wedding
I
recently got engaged to my
best friend and the funniest person
I know. He always encourages me
and makes me feel special - I love him
a lot.
The thing is, my fiancé is also
white. He had some idea of what
my family was like--- he’s met and
likes my mom, dad and sister— but
I don’t think he’ll understand the
full scale of my culture until our
wedding reception.
The day after we got engaged (which
was on Cinco de Mayo, by the way),
I started talking to my mom about
the big day. I was planning a low-key
day with a midafternoon wedding
and a reception that included some
desserts, ending with me and my
new husband leaving by 5pm at the
latest. My mom had some different
ideas. “You and your sister are our
only daughters and your dad and I
want to celebrate.”
I knew what that meant. It meant
a huge reception. You know those
party invites that have a question
mark for the time the party will end?
I think that’s what my invitations will
look like. I can remember my college
graduation - 10 people attended
the graduation ceremony but 100
attended the party afterward.
My family likes to celebrate. And I
love that about them. I just don’t like
attention. I like to work behind the
scenes. I have a job at a church and
my responsibilities are exclusively
in the background. Sometimes I’ll
get recognition for my work and I
don’t like it because it means people
are looking at me. That’s what
my wedding will be like. I’m most
nervous about walking down the
aisle because that’s when everyone
in the room will really be looking at
me the most. The idea of that many
eyes on me scares me. I suggested to
my fiancé that maybe he should walk
down the aisle and he didn’t like that.
So I guess it will only be me.
And don’t even get me started on
the guest list. We were sitting down,
making the initial list, and my fiancé
counted up the number of family
members on his side of the family. It
came out to roughly 35 people. 35.
On both sides.
I made a list of family members too.
I have 66, just on my mom’s side.
That’s almost double what my fiancé
has on both sides and I haven’t even
added my dad’s family. That’s when
the stress began. My dad likes to
celebrate and he has already told
me that he is going to invite a lot
of people. I don’t know what that
number looks like. My fiancé and I
have a lot of friends so our guest list
is looking to be around 400+ people.
That’s outrageous to me. So much for
a low-key affair.
My family can’t wait to celebrate
the big day and I am slowly coming
around. I just have to accept that
it will be crazy and embrace the
happiness that my family brings to
me. At the end of the day, I know
they are all really excited for me and
that they’re happy to add another
member to our family.
