NEW FINDS AND WINES TO LOOK OUT FOR
Welcome to the Classic Vintners Wine Portfolio
for 2012/13.
Other finds to look out for in this year’s Portfolio
Chile – Santa Alicia Reserva Sauvignon, Carmenere and a really
delicious Malbec.
In this year’s Portfolio, we have introduced many new
wines that are exclusive to Classic Vintners and also
exclusive to Bars, Restaurants and Pubs.
Feedback from our customers told us that there was an
increasing demand for more premium quality House
wines, both traditional varietal wines and also more
unusual and interesting varietals that match really
well with a wide range of foods.
I have selected three new ranges of premium quality
House wines, from Spain, Italy and France that I am
sure you will find of interest.
South Africa – Red & White Rhino varietals from a
winery that supports the Save the Rhino International Charity
with contributions from its sales of Rhino wines.
Also an excellent range from Franschhoek Estate – Shiraz, Merlot
& Sauvignon Blanc.
Australia – new range from the excellent Grant Burge winery
in Barossa - Shiraz, Chardonnay and Rose.
France – Pinot Noir and Viognier from Lunes Estates in the
Languedoc, a stunning Corbieres from Castelmaure and Picpoul
de Pinet from L’Ormarine.
Italy – super Barolo from Fontanafredda and delicious Gavi
from La Luciana.
Spain – full flavoured rich red from Bodegas Lozano in
Spain
La Mancha.
All 3 wines come from the Campo de Borja region in the North of
Spain, sitting just below the Rioja region.
New Zealand – fine stylish wines from Esk Valley –
Campo Castillo Garnacha red – full flavoured red but with soft
tannins and ripe fruit flavours.
Campo Castillo Viura white – delicious minerally white wine, dry
but with excellent fruit flavours and balance.
Campo Castillo Garnacha Rose - really fruity rose with lots of
strawberry fruit character.

Italy
Villa Calvino Sangiovese red (from Puglia) – full flavoured red,
great with rich tomato or bolognese sauces. Produced from the
same grape variety as Chianti.
Villa Calvino Catarratto white (from Sicily) – lovely aromatic
dry white with delicious peachy fruit character.
Villa Calvino Chiaretto rose (from Piemonte) – subtle dry rose
but with excellent fruit and good length of flavour.
Sauvignon and a great Merlot/Cabernet/Malbec blend

France
Fontaine de la Tour is a range of easy drinking fruity wines, all with
excellent varietal character, great on their own or with a variety of
different food styles.
Sauvignon Blanc – light dry fruity Sauvignon
Chardonnay – unoaked with delicious fruit flavours and good
length.
Syrah Rose – light dry but fruity rose
Grenache/Syrah – a delicious fruity blend with soft tannins – very
easy to drink !
Merlot – soft supple Merlot but with typical berry fruit character.
David has over 35 years Buying experience in the Wine Trade, Training
with Grants of St James’s and working for many large wine importers
and retailers, including Chalie Richards, Morrison’s, Greenalls (Parisa
Group) and Boutinot’s. David also ran his own Wine Bar and
Restaurant in the late 80’s in Surrey.

Alison has worked for the Classic Drinks Group since 2001 and was previously Wine Sales and Training Manager. She began working with wine
at Mitchell’s in 1992 where she became a Wine Sales Executive, moving
into a Wine Development role and then onto Wine Buying whilst with
Tavern Wholesale.

Graphic Design Manager
Graham has a comprehensive background in advertising and graphic
design, he is responsible for producing the groups corporate literature
including the design and production of customers wine lists and related
POS (mostly produced ‘in-house’). Graham also designs our annual
Wine Portfolio.

Producing your wine list together to increase
your profits...
Creating the correct wine offer for your outlet is one of
the most important things you can do. Your wine
choices represent you and your business; the wines you
offer should always be chosen with delighting your
customer in mind.
That’s why at Classic Vintners we provide help and
support through all stages of your list. We see it just
like building a relationship.
4. Choosing the theme and making initial commitments
Once we know the range and pricing that are right for the business
we can start to look at the design of the actual list. The look and
feel of your wine list is key, lots of customers will interact with it so
it’s important that it’s designed with them in mind. We have our
own in house design team that enables us to meet your needs and
wow your customers, we will have examples of previous lists to
share or we can work up a design totally from scratch, don’t worry
too much if you don’t have a design degree, again our team are
very experienced and will make sure you and your customer get
what they want. You can list by country, by grape varietal or even
by style. There’s no problem reproducing lists from other printers.
5. The rehearsal and last minute jitters It’s nearly the big
day, we will get proofs to you of your list, you can still make last
minute changes, maybe a price tweak here and there or an
additional wine that your customers have requested can still be
included. At this stage, or more usually after a change we can also
offer staff training, this will really focus your team on up selling the
more profitable wines in your cellar by communicating with
customers and recommending wines.
1. The first date Get in touch, and someone from Classic will
come and see you at a time to suit you, this will be at your venue.
We will chat with you about your business, your customers, your
current wine offer, and basically get to know you. In return all we
ask is that you put the kettle on! Don’t worry if you have limited
wine knowledge, our team have great knowledge, if you do know
lots about wine, that’s great too, we love talking about wine.
6. The big day You have your new list, your new wines and

foods, hotels, wedding venues etc. just to help the process along.

3. Planning the Wedding A stressful time for many, but not
when working with wine, this is when you get to start tasting. If you
are unsure about any of the wines the team will taste them with
you and give you information on the product and profitability.
With your Classic contact you will start to work on the layout of
the list, How many bins, red, white, rose split, House selections, by
the glass offers, tasting notes, pricing. You will have 100%
autonomy over what price you charge, our team will make
suggestions about what GP to aim for and what cash per bottle you
can command, they will share best practise from other customers
on how to make wine more profitable. You will be surprised
what a few tips on pricing, layout and selection can do for your
bottom line.

taking you through the latest trends and recommending wines of
the month that you in turn can recommend to your customer, we
will let you know about any additions to our portfolio too.
Remember, we don’t have to drink wine, but we choose to do so
because it’s enjoyable, you should enjoy selecting your wines and
your customers should enjoy drinking them, we should also enjoy
being your supplier. Getting your wine right will make a big
difference to your cash earnings. Now this is the hard part for a
Yorkshire man to say…….the above service is offered free

Boutique Hotels need to have a wine menu that has a good combination
of grape varietals, multiple countries of origin and varying price points.
Therefore I’ve chosen a combination of unusual wines along with some
firm favourites to accommodate a broad spectrum of patrons, both hotel
residents and restaurant visitors.

For a typical Country Pub I would recommend grape varieties
from New World, but keeping the price reasonable as people want good
value when they are dinning. I’ve added a few exclusive Classic Drinks
wines to extend the choice for the customer, and to offer the outlet a point
of difference.

Customers in City Centre Bars are not particularly food led, and it’s
likely the outlet will sell lots by the glass. The demographic of a City
Centre Bar is usually young, so I've gone with lots of New World and
trendy but recognisable varietals such as Australian Shiraz, Chilean
Merlot, Italian Pinot. For traditionalists I have chosen a great Rioja and
a Chablis as well as a great value high margin Prosecco.

The best wines for Asian Food outlets are those with moderate levels of
alcohol, softer tannin and sometimes off dry in style. It is a question of
harmony and balance within the context of hot, sour, salty and sweet
food sensations. I have picked a range of wines from our new extensive
portfolio which I think will pair well with Asian foods such as, Seifried
Estate Gewurztraminer from New Zealand and Viognier from Lunes
in the Languedoc.

FOR VARIOUS OUTLET STYLES
Classic Vintners offer a complete Wine List service to
any customer who buys their range exclusively from
Classic Vintners. This service is free of charge.
Free of charge promotional material available
includes bespoke:
Wine Lists are available in any style within A3 proportions.
Customers have the choice of many different styles of
wine list to choose from which can be personalised
with outlets name, logo and picture. All customers
have to do is contact our Telesales Dept or Territory
Manager and make an appointment to discuss the
various options.
Lists can be presented in portrait or landscape formats to freestand on tables or bar areas. The size of a list is determined by the
number of products and can carry an outlets identity or house
style, any colour can be matched from a pantone swatch. A choice
of gloss or matt laminate are available for a lists protection and
high quality finish.
Tent Cards are available for selected wine ranges, particularly
Wine Development Managers are also on hand to
offer help and advice when compiling wine lists to
ensure that all customer needs are catered for. Classic
Vintners have a wealth of on trade, and commercial
wine knowledge, which when combined with
individual outlet requirements, guarantees a winning
formula for your wine list.

Wine List Presenters are available in a leather style and carry
clear plastic sleeves to display single or double sided sheets in A4
or A5 sizes. The wine list presenters come in a number of colours,
the cover is printed in a choice of gold or silver.
Own Labelled House Wine is available for customers
Support is continued with ongoing advice and product
awareness in the form of product tastings, staff training
and regular sales analysis to make sure your wine list
remains fresh and interesting.

We are able to offer our 75cl Marechal Vin de Pays range with a
customised House Wine label. Wines are supplied with a back
label, which includes all legal requirements together with a supply
of self adhesive labels. Due to minimum print runs for labels,
we have to apply a minimum order requirement of 200 cases
(12 x 75cl) per style, to be taken over a 12 month period.

Creating a Wine List
Most of our customers still plan their wine lists in a traditional
manner, listing House Wines first and then their remaining wines
by colour and country of origin.
This is fine for some consumers but it is not always the most
informative way for many, who have limited wine knowledge and
no way of knowing whether Bordeaux red from St Emilion is light
and fruity or full bodied or whether Chilean Riesling is dry or
medium sweet.
One answer is to compile your wine list by Wine Style.
This is becoming increasingly popular in many restaurants and in
particular Gastro Pubs.
You can always start with a House Wine section first, if required,
with tasting notes as a guide to style – dry crisp white, fruity white
etc.
The descriptions can be short and simple (dry crisp white) or
longer and more precise (herbaceous, aromatic dry white),
whatever suites your style.
The major benefit of this type of list is that it makes choosing a
wine much easier for those customers with only a limited
knowledge of wine and makes the whole experience much less
of a lottery for them. You could also add a taste guide:

Since 2002 when the Fabre family took over
Château d'Anglès, they have succeeded in revealing the
true potential of this vineyard and now have a range of
award winning wines to show for their enthusiasm
and commitment.
With a lifetime in wine making, Eric Fabre's career
includes eight years as Technical Director of Château
Lafite Rothschild, as well as taking a much lesser known
Médoc label to the highest accolades in only six years.
It was however, a lifelong dream to own a vineyard on the
Mediterranean, so 2001 saw Eric and his wife Christine
hunting from Perpignan to Nîmes for a high quality
terroir. They were quickly seduced by the
Château d'Anglès, and what a very understandable
temptation! The beautiful ancient stone farmhouse of
Château d'Anglès overlooks the vines that slope gently
down to the shores of the Mediterranean. Hard really to
imagine a more idyllic setting and just as hard to imagine
a family more passionately dedicated to the constant
improvement of the quality of their wines.

The estate totals 40 hectares under vine. The grapes are entirely hand picked and
de-stemmed and lightly crushed before fermentation in stainless steel vats.
The wine is aged in oak from 18 to 24 months according to the vintage. It has a
dense, almost opaque colour with gorgeous up-front, sweet, ripe fruit.
The palate is medium to full bodied and chewy with a well endowed, plush texture.
The wine is pure, complex and engaging.

The Loire region is most famous for its excellent white wines and refreshing roses. Whites vary
from fine Sauvignon's in Sancerre and Touraine and flinty, minerally Muscadet from the area
around Nantes. Muscadet in its Sur Lie form (aged on its lees) can be the perfect wine to drink
with mussels, oysters and other seafood and is much underated these days. It is also worth trying

Roberto has been making the wines at
Carlos Serres since 1993, following in his
family’s footsteps. He studied winemaking
in Madrid and the Basque Country,
including an experience of a vintage in
Bordeaux in 1990.
He has two passions: wines with ageing
potential, as has been the tradition in
Haro – his home town and where the
winery has been locate for over a century,
and motorcycles. Roberto’s experience
means he is a sought-after consultant and a
lecturer in oenology at a Sommelier school.
The winery owns a spectacular 60 hectare vineyard, which is
bordered by a pond that gives it its name. Finca El Estanque,
with its chalky-clay soils, is the source of the Tempranillo, Mazuelo,
Graciano and Viura grapes that make up the core of the winery’s
Reserva, Gran Reserva and Onomástica wines.

Grant Burge Wines was formed in 1988 by
Grant and his wife Helen, in the heart of the
Barossa Valley, South Australia. A key
philosophy is “fine wines are made in the
vineyard” and Grant has , with close to
1,000 hectares, one of the largest private
vineyard holdings in the Barossa, some of
which have vines dating back over
100 years.
His family has grown grapes in the Barossa
since 1855 and winemaking has always
been in his blood. Even as a school boy he
knew he wanted to make wine.
Grant was one of the last apprentice
winemakers and did his apprenticeship at
the Southern Vales Co-Op in McLaren Vale
where after 7 years he had worked his way
up from cellar hand to Chief Winemaker.
His first vintage was 1970.
Grant has achieved renown for all his wines. James Halliday awarded his winery the status of a “Red Five Star Winery” in his 2012
Wine Companion. This translates to “consistently produces wines of exemplary quality” and a “long track record of excellence –
truly the best of the best”. For the 5th year running he has just been awarded the Decanter Regional Trophy for his 20 Year Old
Tawny, as well as picking up numerous medals in the IWC, IWSC and Decanter Awards.

Growing up on my families Vineyard and
Winery property in Upper Moutere, gave me
an insight into the wine industry. Every
holiday I helped in the winery with bottling
and distribution, or often in the vineyard
doing all sorts of tasks including hand
picking and tractor work.
In ‘94 I completed seventh form at Waimea
College and applied to Charles Sturt
University in Wagga Wagga, Australia to
begin a Bachelor of Applied Science
(Wine Science).
New Zealand and Australian graduates
from winemaking courses are highly sought
after around the world, this means that it is
easy for young winemakers to travel
around the world with their work.
This type of experience is beneficial
for a winemaker as it helps to
broaden their views due to different
techniques in winemaking which
are used around the world.
My First “Real” job (away from home) was in Western Australia for 3 months, then Home for Winter, followed by four

David Gonzalez has been dedicated to the
wine industry for the last 39 years. He began
as a wine maker assistant at Chiles largest
wine making company, Concha y Toro and
worked in several areas in the same company which gave him a wide experience in the
whole winemaking process; grape growing,
vineyard management, cellaring, quality
control, laboratory, bottling process, and
so on.
Davids philosophy as a winemaker is to pay
careful attention to every link in the
production chain. First, the selection of the
right vines, the planting, cultivation, and all
the work involved in the vineyards.

Argentina is the largest wine producer in South America with most of its production coming from the regions
of Mendoza and San Juan. Alot of investment has been made over the past few years and quality has improved
dramatically. Malbec is the star red wine from Argentina producing really delicious complex wines that are
great with beef, Argentina's other great export. Last year we have extended our range and introduced the
excellent wines from Finca Las Moras in the province of San Juan, one of the very best producers in Argentina.
This year we have introduced the Pacha Mama range or wines made from Organically grown grapes,

Yves Lallement Exclusive Champagne range
Yves Lallement Champagne was originally founded in 1999 by Nicolas Dubois and his wife,
Myriam Lallement. Since then, the company has gone from strength to strength. They are now the
proud owners of 30 hectares in Champagne and 120 hectares in the Loire Valley and have a yearly
productionof one million bottles.
They are based at Villedommange, a charming village in the Montagne de Reims and located just
5 Kilometres on the West part of Reims. The soil consists of chalk and lime. These vineyards, which
generally face north and northeast, are planted with a high proportion of Pinot noir vines and produce
well-structured, deeply flavoured wines.

TERMS AND
CONDITIONS
Notice
If the Customer is a consumer in terms of Section 12 of the Unfair Contract Terms Act
then save where the Contract is for international sales of Goods nothing herein shall
restrict or affect the statutory rights of the customer.
1. Definitions
The ‘Company’ means Booker Limited trading as Classic Drinks.
The ‘Customer’ means the person, firm, company or other undertaking to whom the
Goods are supplied and the order acknowledgement delivery note is addressed.
The ‘Contract’ means any contract for the supply of the goods by the Company to
the Customer.
The ‘Goods’ means the beers, wines, spirits, soft drinks and other articles and services
specified in the order acknowledgement/delivery note or credit invoice.
2. Basis of Sale
2.1 The Customer’s order constitutes an offer by the Customer which shall be accepted by the Company by the issue of the Company’s standard order acknowledgement/delivery note or, in the case of cash sales, the Company’s invoice.
2.2 Acceptance shall bind the Customer to these conditions of Sale and they shall
apply to the Contract to the exclusion of any terms and conditions issued by the
Customer.
2.3 No variation to these Conditions of Sale shall be binding unless agreed in writing
by authorised representatives of the Company and the Customer.
3. No Acknowledgement of Order
The Company shall be under no obligation to acknowledge receipt of an order from
the Customer and shall be entitled to execute the order without further reference to
the Customer.
4. Availability
Orders are subject to availability of stocks.
5. Delivery
5.1 Any time or date for delivery of the Goods given by the Company shall only be an
estimate and shall not be of the essence of the Contract.
The Company shall not be liable to compensate the Customer for non or late delivery or for any loss, consequential or otherwise, arising therefrom.
5.2 The Company shall be entitled to deliver part of the Goods or by installments and to
invoice the Customer for such part delivery or each installment.
5.3 If the Customer refuses or fails to take delivery of the Goods at a time when the
Company could reasonably expect the Customer to take delivery,
the Company reserves the right to charge for such abortive delivery.
5.4 The Goods shall be at the Customers risk from delivery.
6. Prices, VAT and Delivery Charges
6.1 The price of the Goods shall be that ruling at the time of delivery.
6.2 The price shall exclude VAT which shall be charged at the rate applicable at the
time of delivery.
6.3 The Company reserves the right to charge separately for delivery.
6.4 All prices are subject to alteration without notice.
7. Payment
7.1 Payment for the Goods shall be made by the Customer on delivery by cash (or, if
the prior agreement of the Company has been obtained, by cheque).
7.2 If the Company has granted credit facilities to the Customer, such payment shall be
made in accordance with the terms granted by the Company to the Customer.
7.3 The Customer shall not be entitled to deduct for the price of the Goods and other
charges made by the Company, any monies due to or claimed to be due to the
Customer from the Company in respect of this or any other contracts.
7.4 If the Customer fails to make payment in accordance with this clause the
Company shall be entitled without notice to:
a) Cancel this and any other Contract with the Customer or suspend deliveries.
b) Charge interest on overdue sums at a rate of 2% above Lloyds TSB Bank Plc base
rate from the date payment was due until the date of payment.
c) Deem all other sums due from the Customer to be immediately payable.
d) Charge the Customer with charges made by third parties to the Company in connection with any failure to make payment, including legal costs and bank charges for
rejecting or re-presenting cheques or direct debits.
7.5 The Company shall be entitled without notice to cancel the Contract or suspend
deliveries if:
a) The customer makes a voluntary arrangement with its creditors or a petition is presented for a bankruptcy order or a compulsory winding-up order, or an administrative order in respect of the Customer, or the Customer passes or gives notice of a
meeting to pass any resolution for the voluntary winding -up of the Customer (other
than a solvent Liquidation for the purposes of amalgamation or reconstruction;
or
b) An encumberancer takes possession, or a receiver is appointed, over any of the
property or assets of the Customer, or
c) The Customer becomes insolvent or ceases to or threatens to cease to carry
on business;
or
d) The Company bona fide believes that any of the events mentioned in (a) to (c)
above is about to occur and notifies the Customer accordingly.
8. Goods - Inspection and Liability
8.1 The Company shall not be liable for any shortages to or damage (apparent on
reasonable inspection) to the Goods on delivery, unless the existence of such shortage or damages are recorded on the order acknowledgement/delivery note and full
details thereof are delivered in writing to the Company within seventy two hours of
delivery.
8.2 Other shortages/damage and any claims by the Customer that the Goods are
defective must be made within fourteen days of delivery otherwise the Customer will
be deemed to have accepted them. The Company’s liability for Goods it agrees are
defective shall be limited to the price thereof and all other warranties, conditions,
terms and liabilities, express, implied, statutory or otherwise are excluded except any
which by law cannot be excluded.
8.3 Furthermore the Company does not accept liability for Goods which exceed the
manufacturers or suppliers date code or sell by date within seven days from the date
of delivery.
8.4 The Customer shall indemnify the Company in respect of all damage, injury or
loss occurring to any person or property and against all actions, claims, demands and
expenses in connection therewith arising from the condition of use of the Goods or
any property referred to in clause 9, in and to the extent that such damage, injury or
loss shall have been occasioned partly or wholly by the act, omission, negligence or
wilful default of the Customer, his servants or agents, or any breach by the Customer
of its obligations to the Company.
9. Company/Suppliers Property
All containers (including bottles, cases, casks, kegs, cylinders, pallets) in or on which
the Goods are supplied, all drinks dispense equipment and all ancillary equipment
supplied in connection therewith, shall remain the property of the Company or the
Company’s supplier (as the case may be) and the Company shall be entitled to
charge the Customer a deposit for the safekeeping thereof. If the Customer fails to
return such items upon request or returns them in a damaged condition, any deposit
may be forfeited in whole or in part and the Company shall in addition be entitled to
charge the Customer the balance of the cost of any replacement thereof or repair
thereto.
10. Retention of Title
10.1 The Goods shall remain the sole and absolute property of the Company as
legal and equitable owner until such time as the Customer shall have paid the
Company for the Goods together with the price of any other Goods the subject of
any other Contract with the Company and until that time the Customer acknowledges that it is in possession of the Goods solely as bailee in a financiary capacity for
the Company.
10.2 If the Customer sells or otherwise disposes of the Goods it shall do so as Agent
for the Company and shall hold the proceeds of sale for and on behalf of the
Company until the Company has received payment in full.
10.3 In order to enforce its rights under sub-clause 10.1 above, the Company
may repossess the Goods or any of them without prior notice and reserve the
right to enter any premises owned or occupied by the Customer for the purpose of
such repossession.
10.4 Until such time as title to the Goods shall have passed to the Customer, the
Customer shall store the Goods in such a way as to be identifiable property of the
Company.
11. Mistakes and Information
The Company reserves the right to amend any clerical, administrative or computer
processing error which appear in the Company’s order acknowledgement/delivery
note, invoice or other documentation issued by it.
12. Relaxation or Forbearance
No relaxation or forbearance delay or indulgence by the Company in enforcing any
of the terms and conditions of the contract or granting of time by the Company to the
Customer shall prejudice, affect, or restrict the rights and powers of the Company hereunder, nor shall any waiver by the Company of any breach hereof operate as a waiver
of any subsequent or any continuing breach.
13. Jurisdiction
These conditions and the Contract shall be governed and construed in accordance
with English Law and any disputes shall be referred to the Courts of England and
Wales.
