Notes from the CEO As the newly appointed CEO
of the Society of Saint Hilarion Aged Care I am happy
to have this opportunity to inform all our readers,
residents, consumers, families and friends about the
imminent changes to the Aged Care Industry, and
what we at Saint Hilarion will be doing to make this an
exciting opportunity rather than a challenge.
As I have stepped up from my previous role as Director of Care Services at Seaton, we have recently
appointed Sandy Pedler into this position. Sandy has
extensive experience in aged care having worked for
30 years in the aged care industry. Sandy has
previously worked in senior management roles,
focusing on quality systems, effective and efficient
nursing and operational services aiming to provide the
best possible care to residents. We welcome Sandy
to the management team and wish her every success
in her new role.
Recently the Federal Government published their
Aged Care Roadmap which outlines their proposals
and policy directions for the next few years. These
changes will affect us all, and it is important that in
these times of change we have a stable, experienced
and effective management team, who are abreast of
all the latest legislative requirements. The changes
highlighted in the Aged Care Roadmap will have a
significant impact on the way we will be delivering
services into the future. Commencing with
Community Care clients, from February 2017,
Government will be allocating the funding to the
consumer rather than the Aged Care Provider.
This will enable consumers to choose the people who will
provide their care and services. Future consumers will
have more say in what they would like to make their life
worthwhile, rather than having to choose from a restrictive
menu of services that has in the past been their only
option.
Within the next 5 – 7 years consumers will undergo just
one aged care assessment; this will identify the allocation
for funding required for them to purchase their individual
services and care. In the past consumers have been
assessed as requiring either community or residential
care. In future the one assessment will allow people to
choose where they would like to receive their care, what
services they would like, and who they would like to
deliver them. This is very different from the current
system of funding than operates today.
As new Government legislation frees us up to deliver a
wider range of services than
previously allowed we will be
developing new programs
and models of care which
will better meet the needs of
individuals.

options for future clients. We are currently assessing the need for the provision of retirement apartments with services delivered into these on request; this could be a future option for those not wanting to enter a nursing home.
We are increasing our community supports with private services and a range of affordable choices and options for
individuals. We have staff delivering health and exercise physiology assessments and services, these increase
fitness and strength, vital for people to remain independent.
In the near future we will be opening a range of community services and social options in collaboration with
Caremmunity at a Woodville location, this will be an exciting new project for us and older people living in the area.
The society of Saint Hilarion has won several awards over the past year for their innovation, consumer
involvement and staff expertise. We would like to congratulate Frank Naso for winning the ACS individual award
2016. We aim to continue listening to older people and providing what they would like to enjoy their lives, giving
opportunities for them to have new experiences, meet new friends, and continue doing the things they most enjoy.

Tempo Mio Weekend at the
Anzano Club
On the 26th June 2016 a
group of clients went to the
Anzano Club for lunch.
Before lunch, the clients were
picked up and treated to cake
and coffee near the beach.
After this, we took the bus to
the Anzano Club and enjoyed
a three-course Italian
inspired meal.
Our clients enjoyed dancing,
participating in the raffle and
one of our members even
won a prize! It was an enjoyable day for all.
SCALABRINI CHAPEL
Over the years
The Scalabrini Fathers have been a very important
part of The Society of Saint Hilarion. They provided
spiritual and moral support in the years before we
got involved with Aged Care, and this bond became
even stronger once the Society purchased its first
Nursing Home in 1987, they took on the very
important role of pastoral care, which later was to be
complimented with the involvement of The Sisters of
Saint Anthony, and giving Saint Hilarion Aged Care a
real point of difference in our nursing homes.
Dolphin
Cruise on the Dolphin Explorer

On the 29 May 2016 a group of us embarked on the Dolphin Explorer at
Port Adelaide. We took part in dolphin watching and enjoyed our lunch
on board.
It was nice to see all the surrounding boats sail past. We saw some
dolphins that appeared to be playing in the water. Afterwards, we
enjoyed coffee and cake before having a wander through the old
Port Adelaide markets. It was a lovely day.
In the mid-90s some of the more senior members of the
society executive started to feel the need to formalize
this important role that the Scalabrini Fathers performed
in our organisation, and we decided to adopt the
Scalabrini ethos in our constitution, and include them in
our decision making process by giving them official
positions on the Procurators and Aged Care board, also
giving the Father Provincial a role to play in certain major
decisions of the Society.
Weekend Hahndorf Outing On the
Hence it seemed only natural that the Chapel was to
be named “Scalabrini Chapel”.
On the 15th of July 2016 we celebrated the unveiling
of the new Chapel signage and statue of John Baptist
Scalabrini.
This also led to a special relationship forming with
Scalabrini Aged Care NSW, St Carlo and St Francis of
Assisi homes in Victoria. In 1999 Saint Hilarion formed a
partnership with them and together incorporated
Scalabrini National Association, for several years we met
and shared information and ideas on Aged Care, to the
point that our CEOs also would be in contact and discuss
various issues.
The evening was also a formal farewell to Fr Anthony
Paganoni who has been a big supporter of the
Society and its adoption of the Scalabrini ethos. The
Statue of John Baptist Scalabrini was donated by him
and his family, it has appropriately found its place
near the alter in the Chapel. The inscription on the
plaque at the bottom of the statue reads as follows;
We formed some wonderful relationships with
individuals, Fr. Anthony Fregolent, the late Fr Nevio
Capra, Fr Emilio Vaccaro, who transferred to Mater
Christi parish and worked on our Aged Care board for
several years, former Scalabrini Aged Care board
members Carl Melvey, Pat Pedulla, Nat Zarnardo and
Robert Casamento.
24th of April 2016 a group of clients went on an outing to Hahndorf.
It was a beautiful day, the sun was shining and all the autumn
leaves were out.
We went for a nice walk down the main street and some clients did
some shopping, others were happy playing Italian cards out the
front of the café.
At 12pm we went back to the Old Mill for lunch. It happened to be
‘German Day’ and we were lucky enough to be entertained by a
group of German dancers dressed in traditional Bavarian
costumes. There was plenty of food to enjoy and towards the end
they brought in a pig on a spit. Everyone had a very enjoyable day.
Blessed John Baptist Scalabrini (+1905)
The Society of St. Hilarion gratefully acknowledges
the contribution of the Scalabrinian Missionaries. This
chapel is dedicated to their Founder, Blessed John
Baptist Scalabrini (+1905), proclaimed “Father of all
Migrants” (Pope John Paul II). 23 October 2013.
During this time St Hilarion Aged Care embarked on
building The House of Saint Hilarion Seaton, we were
very much encouraged and motivated by these members
of Scalabrini Aged Care, to the point that at the
appropriate time quite a sizable monetary donation was
made to St Hilarion Aged Care specific for the new
Chapel by Scalabrini Aged Care NSW.

Feast Day of St Anthony
On Friday the 17th June at Villa St Hilarion, we celebrated a very important event in the Society’s calendar,
St Anthony’s Feast Day. People may ask, why do we place such importance on the feast day of St Anthony?
The answer is simple, our Sisters/Nuns/Pastoral carers, who are a very important part of us, are The Fransican
Sisters of St. Anthony. Their patron Saint is St. Anthony. Residents and their families along with our Board,
Executive committee members and other guests were treated to an inspirational mass celebrated by Father
Alessandro Ratti from Padua, in Italy. After mass everyone enjoyed a delicious 4-course lunch and were entertained
by the talented, Angelo Zotti. Great music and dancing continued until late afternoon. Needless to say not many
residents were hungry at tea time!

The past few months have
well and truly been very busy for the Society of St Hilarion! Planning is already underway for our October
Feast, and we are currently fine tuning the details of a farewell for Father Anthony (who will be leaving us
to return to Italy this month) as well as the naming of the Chapel at the House of St Hilarion.
During the month of May we held our annual volunteers lunch in the Community Centre as a way of thanking all of
the hardworking volunteers who donate their time to our cause throughout the year. The day was a great success
and was well enjoyed by all who attended including Father Roger and the Franciscan Sisters of St Anthony. The
day was made extra special by our new Volunteer of the Year’ award and this was given to long time hard working
volunteers Vince and Nellie Circosta.
Another recent highlight for the Society of St Hilarion was the launch of the Calabrese Association’s photographic
exhibition during which members of Adelaide’s Calabrese community received awards for their contribution to our
community in South Australia. Both of our recipients received their awards posthumously and these were John A
Costa (accepted by Cosie Costa) and Ilario Lamberto (accepted by myself). We are very proud to have had both
John and Ilario as a part of our community and to receive the awards was a great honour.
The Society of St Hilarion are always pleased to welcome new members and volunteers so if you are interested in
becoming involved with any of our events or activities, we would love to hear from you.
Casalinga Project The new direction for aged care services is about
providing choice for residents that will meet their individual needs. The changes
have commenced for aged care (Community) with the release of the Aged Care Road
Map where the consumer will dictate the use of services.
These changes will also apply to residential care as the government makes funding changes in the next few years. In order for St Hilarion to be prepared for the changes to residential aged care, immediate planning for the changes in the way we provide our current services is required. An important part of providing choice for residents is to provide a service
that is flexible to an individual’s needs and recognises that this will be provided according
to the status of health care. The journey for providing choice for meals has commenced
with the commencement of the Casalinga project. The pictures depict a
new dining experience in our Pink section where our residents are provided
a menu choice for each meal. The meals are served by Catering Services
Assistant and taken to the table or individual rooms by the Care team.
Casalinga project is currently a trial where the results will be used in planning for the introducing a similar dining experience in other small dining

Welcome Michael Bailey (Human Resource Manager)
As the new Human Resources Manager I have enjoyed the warm welcome and appreciate being part of a team that
is passionate about caring for our elderly and vulnerable. Even though I can’t refer to any Italian heritage, there is
something in my blood about enjoying the wonderful food, very nice wine and good company!

Quality Agency Spot Visit to
Villa Fulham
On Wednesday the 13th July, Villa Fulham received
a spot visit to their facility.
During the visit, Human Resource Management and Clinical Care was looked at. Both received
100% compliance. It was stated there were no ‘recommendations’ or opportunities for improvement indicating a high level of success and compliance.
Thanks to the amazing work of Caroline Russo, Cathy Young, Cathy Montenega, Chris Holmes
and all the staff of Fullham, it was a resounding success. It is at times like this we see the
outcomes of a strong and cohesive team working together for the quality and improvement of
our organisation and for the quality of care we strive to perfect.
Well done to all at Fulham!

In my job, I am equally passionate about what people can
achieve in their role and the synergy created by people
believing that together we make a difference. In contributing to the success of Saint Hilarion
I bring a history of senior management experience from
not-for-profit (aged care and community sector) and for
profit (automotive, manufacturing and Education).
I have enjoyed my career choice where people’s success
becomes my success. When not at work my life is filled
with family, outdoor activities, exercise (swimming), travelling and sometimes home maintenance. If ‘life is for living’, I feel very lucky to enjoy what I do and be able to be part of people's lives whatever their measure of success is.

Quality Update - New Feedback System
Improvement is an important part of our system and Saint Hilarion strives to look
for efficient and effective ways to capture your feedback. On the 1st July, 2016
we changed our feedback system to make it easier for you to have your say.
We have replaced the current ‘Suggestions’, ‘Improvements’ and ‘Happy Cards’ with a
new ‘Feedback Form’. This feedback form is for anybody to complete (staff, visitors,
family, residents, volunteers etc.) and is easily identified by its light blue colour.
Feedback helps us to grow and improve and we look forward to hearing from you. If
you have questions about this change, please talk to any of our Management.
Art Class Lifestyle Program at
Seaton We started with a small group of four residents
who were keen to demonstrate their creativity through art. As
time went by, the group increased to twelve residents who
permanently attend every Tuesday.
Occasionally we get other residents walking pass the art room and
express interested to participate. Residents are applying their
creativity through using various pictures of Madelas or free hand
drawing of abstracts using their imagination. Residents use a range
of water paints, oil paints or crayons and use a range of different
colors on different textures of paper and canvas. Due to the success
of the classes, they have increased by two days a week. Family
members occasionally attend art classes with their loved ones. If
you’re interested, we love to see new creative members of the group
so make sure to pop by and have a look.
FULHAM ZEPPOLE DAY
Another yearly event, which is very popular at “The Villa” is
Zepolle Day. This was held on Wednesday 20th July 2016. Zeppole is a popular food in Southern Italy, especially in certain towns of Calabria. They are known here as ‘Italian Donuts’ but instead of being round in
shape they are long.
There are three varieties, plain, sugared and most people’s favourite, with anchovies. Zeppole are usually made for
special occasions and festivals!! A big thankyou to the amazing volunteers who make them for the St. Hilarion
Feast and Carnevale.
Residents, from Fulham and Seaton were able to watch how the zeppole were
made and deep fried. This brought back so many happy memories for the residents. The entire day had a “Calabrian” theme, with entertainer, Frank Ferraro
providing traditional music and many people danced. Zeppole were served for
afternoon tea. The word had spread throughout the community and we managed
to sell many.

Updates, by Frank Naso
It is an exciting time at St Hilarion Aged Care with
the expectation of bigger and better things to come. We have been working very closely with ARA jobs, a
South Australian employment agency, who have been extremely supportive in further developing the Adami
Organic Garden and other innovative programs.
The ARA Work for the Dole program commenced at St Hilarion early February and no doubt anyone visiting Seaton
would have realised the place is full of vibrancy that the site
would not have experienced previously. The gardens have
become a focal point of conversation for staff, volunteers,
residents and family as they have uplifted the place. We
have also seen the further growth of the organic garden
resulting in the creation of over 1500 tomato sauce bottles
which are currently being utilised in the resident’s daily
pasta dishes. More recently we have harvested over 600
potato plants which are also used to make roast potatoes
and chips for the residents and the café. Who could possibly resist the lure of organically grown roast potatoes when
you have such an amazing chef as Bogdan Gomulka?
The Executive Aged Care Management team also
realised that there was a significant gap in the training
needs of care staff industry wide. As a result, St Hilarion
worked closely with Federation University, an amalgamation of Ballarat University and Monash Gippsland Campus,
to develop a first ever onsite Certificate 3 in Aged Care and
Community that incorporates positive psychology,
customer engagement and a vigorous manual handling
program. This would not have been possible without the
funding support from ARA jobs. Scholarships were
provided to a number of long term unemployed individuals
which has changed their lives forever they will increase
their potential for employment. St Hilarion will be hosting
the graduation ceremony on the 5th September. Well
Done!

Meet our new
Director of Care
Services at Seaton
Hello everyone, I’m Sandy Pedler and I have
recently taken up the position of Director of
Care Services at Saint Hilarion. So far I am
loving this role, the facility is beautiful and I am
impressed by the strong focus on community
and the Italian culture.
I am married with two children, both boys, one
stepdaughter and 1 step son. I am the proud
Grandma of five with one more due in September. My background in nursing started with my
training at the Royal Adelaide Hospital in
1974. Aged Care has always been my passion
and I have worked in this area for the past
thirty years. I am committed to ensuring all
older people receive quality care and services
to enhance their enjoyment of life and improve
their wellbeing.
Eventually I hope to
get around to meeting
all the residents and
family members and
learning some of the
Italian language. In the
meantime please feel
free to drop in and see
me in my office which
is located near the
Blue/ Yellow dining
room.
