Recipe: Haddock with Lemon & Vegetables

Ingredients:
2 haddock fillets (approx. 175-250g each)
3 teaspoons olive oil
1 small onion, chopped
2-3 cloves of garlic, thinly sliced or crushed
1 dried chilli pepper, crushed
1 bay leaf
2 tomatoes, chopped
1 lemon (½ squeezed for juice, ½ sliced)
1 red or green pepper, sliced into strips
(seeds removed)

Codfish with potatoes
or rice, mixed salad
with tomatoes, fresh fruit.
For a fresh drink I like:
Mineral water without gas and all
kinds of freshly made juices:
strawberry with banana, apple, mango.
Heat oven to 190 C.
Divide haddock in half to make 4 pieces. Sprinkle
a little black pepper on the haddock. Use 1
teaspoon of oil to brush the haddock and the
bottom of a baking dish large enough for
the haddock.
In a saucepan heat 2 teaspoons of oil. Turn down
the heat, add onion, garlic and chilli. Stir and fry
for about 2 minutes or until the onion is soft.
Add the chopped tomatoes, lemon juice and bay
leaf. Heat until it bubbles, turn down the heat to
gently cook for about 5 minutes or until the
sauce thickens a little.
Place about one third of the sauce in the bottom
of the baking dish. Place the haddock on the sauce.
Top the fish with the rest of the sauce and arrange
the green or red pepper and lemon slices on the
haddock. Cover the dish tightly with foil.
Bake in the oven for about 15 minutes or until
the fish is cooked but still moist on the inside.
Place each fish portion on a plate and
sprinkle with parsley.
Serve with potatoes or pasta.
