is packed full of plump juicy sultanas,
currants and raisins. Enriched with cider,
rum and sherry and complimented by the
crunch of nibbed walnuts, this delicately
spiced rich pudding will make
Christmas truly delicious.

This is an easy recipe to make with the children and would make
a lovely present wrapped in tissue paper in a nice box.
l
Sift 225g of plain flour into a large bowl with two teaspoons
of bicarbonate of soda, one heaped teaspoon of ground
ginger and half a teaspoon of ground cinnamon.
l
Heat 50g of butter in a pan with 100g of soft brown sugar
and 100g of golden syrup until dissolved. Allow to cool,
then mix into the dry ingredients to make a dough.
l
Wrap in cling film and chill for 30 minutes and preheat the
oven to 190ºC / Gas Mark 5.
l
Roll out the dough to about 5mm thick and using
gingerbread men and Christmas cutters, stamp out as many
as you can, re-rolling as necessary. Place on parchment
lined baking sheets and decorate as desired.
l
Use a skewer to make holes if you want to thread them into
edible decorations. Bake for 10-15 minutes until lightly
golden brown, then cool completely on a wire rack.

Preheat
12 tablespoons unsalted butter (3/4 cup or 1 1/2 sticks)
at room temperature
2/3 cup sugar
1/2 teaspoon vanilla extract
1/4 cup honey
1 large egg
2 cups + 2 tablespoons flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon ground cinnamon
1/2 teaspoon ground ginger
extra sugar and ground cinnamon
for sprinkling on top of the cookies

Gently

Use
the oven to 180ºC / Gas Mark 4.
sift the flour, baking soda, cinnamon and ginger. Put this bowl aside.

Add
the honey, egg and vanilla extract and beat for a further minute. If you want to add a little more flavour
and texture to the cookies you could add some raisins or chocolate chips at this stage.

Slowly
mix in the dry ingredients with the wet ingredients. Mix until this forms a smooth dough.

Evenly
sprinkle flour on a work surface and divide the dough into two equal parts.

Lightly
roll the dough into logs about 2-inches in a diameter and cut with shapers.

Line
two baking sheets with grease proof paper.

Sprinkle

Allow
sugar and cinnamon on top and place in the oven for 10-15 minute or until golden brown.
