A cabreo is an old, handdrawn Tuscan map, a
reminder that ancient terroirs

In 1999, the Folonari family
began to acquire property
in Castagneto Carducci,
Bolgheri. They assembled
approximately 100 acres
of land of which 60 are
planted in vines, with further
plantings underway. An
ultramodern winery designed
by the Parisian architect
Jean-Michel Wilmotte was
completed in 2002.
The TorCalvano property
was originally owned by the
Mazzucchelli Svetoni family
and dates from the 14th
century, with a graceful villa
from the mid-1800s.

¾ oz. Gin
½ oz. Lime Juice
½ oz. Honey
Caposaldo Prosecco
Shake, strain and top with
prosecco. Serve in flute glass or

1 oz. L’Héritier-Guyot Crème de
Cassis
5 oz. Dry Sparkling Wine
Pour the Crème de Cassis into a
champagne glass and top with
sparkling wine.

1 oz. Depaz Blue Cane Rhum
Agricole
1 oz. Depaz Cane Syrup
1 oz. Fresh Lime Juice
6-8 Fresh Mint Leaves
Combine all ingredients in a
cocktail shaker. Add ice and shake
vigorously. Strain into a chilled
martini glass. Garnish with a
sprig of mint.
