Peppery Beef Rib Roast
INGREDIENTS
1 beef rib roast (2 to 4 ribs), small end, chine
(back) bone removed (6 to 8 lbs)
1 can (14 to 14-1/2 ounces) ready-to-serve
beef broth
2 teaspoons chopped fresh thyme
Salt
RUB
2 tablespoons pepper seasoning blend
2 tablespoons minced garlic
DIRECTIONS
Heat oven to 350°F. Combine rub ingredients in small bowl;
reserve 2 tablespoons for au jus. Press remaining rub evenly
onto all surfaces of beef roast. Place roast, fat side up, in shallow
roasting pan. Insert ovenproof meat thermometer so tip is
centered in thickest part of beef, not resting in fat or touching
bone. Do not add water or cover. Roast in 350°F oven 2-1/4
to 2-1/2 hours for medium rare; 2-3/4 to 3 hours for medium
doneness. Remove roast when meat thermometer registers 135°F
for medium rare; 150°F for medium. Transfer roast to carving
board; tent loosely with aluminum foil. Let stand 15 to 20 minutes.
(Temperature will continue to rise about 10°F to reach 145°F for
medium rare; 160°F for medium.) Combine broth and reserved rub
in small saucepan; bring to a boil. Reduce heat; simmer 5 minutes.
Stir in thyme; continue simmering 2 minutes. Carve roast into
slices. Season with salt, as desired. Serve with au jus.

Creamy Tomato Meatball Casserole
INGREDIENTS
36 - ½ oz. Cooked Perfect Italian Style
Meatballs
1/3 cup parmesan cheese, grated
10 oz can tomato soup
¼ cup bread crumbs
26 oz pasta sauce, any flavor
1/8 cup olive oil
½ cup light cream or half and half
1/3 cup mozzarella cheese, grated
DIRECTIONS
Preheat oven to 350º F. Use oil to coat the sides of a 4-quart casserole dish. Combine tomato sauce with
cream, mix well, then add the meatballs. Pour the meatball mixture into the casserole dish, top with the
cheeses and breadcrumbs and bake uncovered for 25 minutes. Let stand for 5 minutes before serving.
Recipe can also be created using 12 angus or 18 Turkey Meatballs from Cooked Perfect. Makes 6 servings.

Mahi Mahi Fillets

Mahi Mahi Tacos with Mango Sauce
INGREDIENTS
4 Mahi Mahi fillets (thawed)
1 avocado, peeled and diced
Olive oil
Salt and pepper
½ red or sweet white onion,
finely diced
½ cup sour cream
1 garlic clove, finely minced
½ lime, juiced
1 cup fresh cilantro, chopped
½ teaspoon cumin
1 jalapeno, finely minced
1 teaspoon chili powder
½ lime, juiced
1 large mango, peeled and cubed
Whole wheat flour tortillas
DIRECTIONS
Heat the olive oil in a large skillet over medium-high heat. Season the Mahi Mahi to taste with salt and pepper.
Cook the fillets until the fish is golden brown on the outside and no longer translucent in the center, 3-4
minutes per side. Fish is done when it flakes when tested with a fork.
While the fish is cooking, combine sour cream, lime juice, cumin, and chili powder; set aside. Genty toss the
mango, avocado, onion, garlic, jalepeno, and cilantro with the remaining lime juice.

Grilled Chicken &

INGREDIENTS
1/2 cup soy sauce
1/2 cup fresh lime juice
2 tbsp garlic, minced
1 tbsp peeled fresh ginger, minced

4 skinless boneless chicken
breast halves
1 onion, sliced

Low Sodium Chicken Broth

Whisk first 5 ingredients to blend in 8 x 8 x 2-inch glass baking
dish. Add chicken and onion. Cover and let marinate at room
temperature 1 hour or refrigerate up to 3 hours, turning
chicken occasionally. Prepare barbecue (medium-high heat)
or preheat broiler. Remove chicken from marinade. Strain
marinade into medium saucepan; add Low Sodium Chicken
Broth. Boil until sauce it coats a spoon, just about 12 minutes.
Meanwhile, spray the chicken with vegetable oil spray. Grill
about 4 minutes per side until cooked through. Transfer to
platter. Spoon sauce over chicken and serve with rice.

Powder Biscuits
INGREDIENTS
3/4 cup Milk
1 tsp Sea Salt
3 tsp Baking Powder
1 Tb Sugar
1 cup Whole Wheat Pastry Flour
1 cup Whole Wheat Flour
1/4 cup Shortening (Non-hydrogenated)
DIRECTIONS
Preheat oven to 450°F. Set aside an ungreased
cookie sheet.
In a medium bowl cut shortening into flour,
sugar, baking powder and salt with pastry
blender until mixture resembles fine crumbs.
Stir in just enough milk so dough leaves sides

cook carrots, red pepper, broccoli and onion, stirring occasionally, until vegetables

Clementine Cake
INGREDIENTS
5 clementines, rinsed clean
6 eggs
1 cup plus 2 tablespoons sugar
2 1/3 cups ground almonds
1 heaping teaspoon baking powder
DIRECTIONS
Put the clementines in a pot with cold water to cover, bring
to a boil, and cook for 2 hours. Drain, and when cool cut each
clementine in half and remove the seeds. Then finely chop the
skins, pith and fruit in a food processor. Preheat oven to 375°F.
Butter and line an 8-inch springform pan with parchment paper.
Beat the eggs. Add the sugar, almonds and baking powder. Mix
well, adding the chopped clementines. Pour the cake mixture
into the prepared pan and bake for 1 hour, when a skewer will
come out clean; you'll probably have to cover the cake with foil
after about 40 minutes to stop the top from burning. Remove
from the oven and leave to cool, in the pan on a rack. When the
cake is cold, you can take it out of the pan.

Satsuma Tangerine Salad
INGREDIENTS
1 cup Snow Peas cleaned and blanched
2 cups Napa Cabbage shredded
1 cup Chicken Strips ½ inch diced
1 cup Organic Bell Pepper
(use Red Bell Pepper) julienne slice
1 cup Satsuma Tangerine peeled and chopped
DRESSING
DIRECTIONS
For Salad: Toss all items in a large bowl. Season with
dressing and serve right away.
For Dressing: Reduce 5 cups of Satsuma tangerine
juice by half. In a blender, add reduced tangerine
juice, serrano peppers and blend on high speed
for about 15 seconds. Slowly add in oil with the
blender on high speed until oil is emulsified. Season
with salt and pepper. Chill in refrigerator and/or
dress over salad.

4 multi-grain or whole wheat pita pocket bread round
16 thin slices deli-sliced Margherita® Deli Genoa

Cut pita rounds crosswise in half and open into

½ teaspoon baking powder

Preheat oven to 375º. Place butter in a medium mixing bowl. Add HALF of the flour, HALF of the milk, and all
remaining ingredients EXCEPT the dried cranberries. Thoroughly combine using an electric mixer on mediumhigh speed. Add remaining flour and milk, as well as dried cranberries, mixing on low speed.
Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10 minutes or until golden brown. Makes

¼ cup chocolate syrup
DIRECTIONS
Cover bottom of 9-inch square pan with cake slices, cutting
and piecing slices to fit. Beat pudding mixes and milk with
whisk 2 min. (Pudding will be thick.) Stir in 1 cup COOL WHIP;
spread over cake slices. Refrigerate 2 hours or until firm. Top
with remaining COOL WHIP and berries just before serving.
Drizzle with syrup.

Deck your holiday cookie platters with these

INGREDIENTS
1/3 cup margarine or butter
1 package (10 oz about 40) regular marshmallows

4 cups miniature marshmallows
1 teaspoon green food coloring
(paste makes best color)
6 cups Kellogg's Corn Flakes® cereal

6 cups Kellogg's Frosted Flakes® cereal
Red cinnamon candies
Prepared vanilla frosting
DIRECTIONS
Melt margarine in large saucepan over low heat.
Add marshmallows and stir until completely melted.
Remove from heat. Stir in food coloring.
Add KELLOGG'S CORN FLAKES cereal.
Stir until well coated.
Portion warm cereal mixture evenly by using a 1/4 cup
dry measure coated with cooking spray. Using sprayed
fingers, quickly shape into individual wreaths. Dot with
cinnamon candies, using prepared frosting to hold
candies in place. Store in single layer in airtight container.

In large microwavable bowl, mix cereals, nuts, pretzels and bagel chips;
set aside. In small microwavable bowl, microwave butter uncovered on
high about 40 seconds or until melted. Stir in seasonings. Pour over
cereal mixture; stir until evenly coated. 2 Microwave uncovered on High

towels to cool. Store in airtight container.

Grilled Vegetables
with Gouda
Dofino® Gouda adds its roasted nutty flavor to lightly
grilled summer vegetables. This is the perfect
first-course salad.
INGREDIENTS
1 medium red and yellow pepper, cut into wide strips
4 medium zucchini/squash, sliced lengthwise
2 small Italian eggplants, cut in half lengthwise
1 broccoli crown, cut into florets with stem intact
2 small sweet potatoes, cut into thick slices
Salt, pepper, and olive oil to taste
4 tablespoons balsamic vinegar
2 cups summer greens
4 bias-cut slices of a baguette, grilled
1 cup Dofino® Gouda, shredded
¼ cup chopped chives
DIRECTIONS
Prepare the grill or broiler. Brush peppers, zucchini, summer
squash, eggplant, broccoli, and potato slices with olive oil.
Season with salt and pepper.
Arrange them on the grill and cook for 3 minutes on each side. Transfer
the vegetables to a bowl and toss with 2 tablespoons of balsamic vinegar and 2 tablespoons olive oil. Set aside.
In a second bowl, toss the greens with remaining balsamic vinegar and 1 tablespoon olive oil. Divide the salad
between four serving plates. Arrange the grilled vegetables around the greens. Shred the Gouda and then pile
on top of grilled or toasted baguette slices. Set one on top
of the salad and liberally sprinkle with chives.

2 cups fresh basil leaves
3 garlic cloves, finely minced
¼ cup grated Parmesan cheese
