Mahi Mahi
Mahi-mahi is the Hawaiian name for the species Coryphaena
hippurus, also known in Spanish as the Dorado or in English, the
dolphin fish. We call it Mahi Mahi to avoid any confusion with the
dolphin mammal, as it is not related. These fish are a favorite for
sprotsfishermen to catch, especailly in the spring and summer
months (April - September) in the Keys.
Grouper
Grouper is one of Florida’s most popular fish. The flavor is so mild
and subtle, it appeals to just about everybody. All groupers are
members of the seabass family. Groupers are found around coral
reefs and rock outcroppings in tropical and warm temperate
waters worldwide. Groupers vary in size and weight but are
commonly marketed at five to 20 pounds. Florida harvests over
85 percent of all the grouper landed in the United States. The
preferred harvest method is hook-and-line fishing.
Yellowtail Snapper
Yellowtail snapper is highly prized for its light, flaky meat and is
considered by some to be one of the best of the snapper family.
Most anglers pursue yellowtail snapper during the warmer
months, but they can be caught throughout the year. The most
common method of catching them is with hook and line, and the
use of frozen chum, to attract the fish.
Yellowfin Tuna
Delicious and nutritious, yellowfin tuna is one of the world’s most
important food fish. It lives in open ocean waters off both of
Florida’s coasts and is a staple in the state. Fresh yellowfin tuna
doesn’t look or taste like the tuna you buy in a can. It’s deep red
in color with a sweet, mild flavor and a dense, firm, beef-like
texture. Because of yellowfin tuna’s association with dolphins,
special care must be exercised in the tuna’s harvest. In Florida,
yellowfin tuna are caught with hook and line, one at a time, never
with nets, so they are guaranteed “dolphin safe.”
Hogfish
Hogfish are a reef species that inhabit rocky bottoms, ledges and
reefs throughout Florida’s off-shore waters. They are easily
identified by their long, hog-like snout, which allows them to feed
on bottom-dwelling mollusks and crustaceans. Because they tend
to root in the sediment in search of small prey, they are not
commonly caught on hook and line. Hogfish are primarily
harvested by spearfishing, and they are considered to be of
excellent food quality.
Conch (“Konk”)
The meat of this pretty seashell can be eaten raw in salads, or
cooked, as in fritters, chowders, gumbos, and burgers. It is often
served as “ceviche” where the cooking is done by the citric acid in
lime or lemon juice. Although it was once plentiful in the Keys,
conch eaten in the Keys today is imported from The Bahamas.
The natives of the Keys are called Conchs, after this mollusk.
