Showcasing holiday menus for Christmas Eve, Christmas
Day and New Year’s Eve, Chef de Cuisine Robert
Hohmann will offer a three-course prix fixe menu with
options for appetizers, entrees, desserts and additional
special items for add-ons and side dishes. Highlights
include a caramelized Brussels sprouts salad with apple
mostarda and candied spiced pecans, roasted pork loin
with sautéed kale, and cinnamon-poached plums and
pumpkin crème brûlée.
“I love roasted meats, especially lamb leg or pork racks,”
Hohmann said. “My Italian upbringing means that
lasagna or some sort of stuffed pasta always tops my list,
as well as traditional Mediterranean seafood dishes like

Growing up, Hohmann remembers prepping with his
family during the week building up to the holidays. “We
always started making the desserts ahead of time,” he
recalled, “and some of the dishes would get eaten by the
time the big day came around, forcing us to make more.”

Nothing beats a festive and inviting celebration far
removed from the ordinary. On Christmas Eve and New
Year’s Eve, Executive Chef William Bradley will feature
a specially created seven-course Carte Blanche menu,
which includes elegant courses highlighting the very best
of the season. The Christmas Eve menu will include sole
almandine with Brussels sprouts, black truffles and sauce
au vin jaune, and a butter pecan tart with eggnog ice
cream for dessert. On New Year’s Eve, two special courses
include King Crab with spinach, black truffles and sherry,
and loup de mer with a shellfish and shallot cassoulet.

Executive Chef Scott Thomas Dolbee believes the
holidays are a great avenue for the culinary team
to introduce new dishes, offering a set three-course
menu with a variety of options for each course. Think
wild boar with black mole sauce and a lamb curry

while expressing cultural diversity. Dolbee has also
added some Southern influence, including a hot and

“I encourage ordering a few extra dishes to share to get the
whole experience.”
The open kitchen in the restaurant creates a more
personal environment to allow the culinary team to watch
guests enjoying its creations. “Our culinary philosophy
revolves around striving for excellence with relevant
cutting-edge cuisine, focusing on building flavor profiles,
and creating an experience through the craft with the
freshest local, highest quality products and the blending of
culture through cuisine,” Dolbee said. “We utilize refined,
yet modern technique showcasing common favorites in
uncommon ways, all driven by thoughts, ideas and feelings,

opted to serve the regular dinner menu so that diners
mom and her side of the family, I would take it easy while
he will offer the regular brunch menu. When it comes to
the traditional holidays, Knibb thinks more on the lines
of nostalgia and creations reminiscent of classic dishes or
childhood favorites.
“I think that’s what people want to experience during the
holidays,” he said. “I always think of lamb, whole duck
and warm and comforting foods.”
Whenever Knibb was in Los Angeles during the holidays
with his father, he would always cook a leg of lamb or a
standing rib roast.
“That was our tradition and it would always be really
casual and fun with family and friends,” he explains. “On
the other hand, when I was in Jamaica celebrating with my

S
ometimes, a cigar is just a cigar. And sometimes, it’s a
work of art.
Cigars have retained a resilient following, remaining a
favorite vice of the wealthy and discriminating. The inaccessibility
of Habanos, or Havana cigars, continues to perpetuate the
mystique, and nothing tops the boxes of hand-rolled cigars that
bear the phrase “hecho a mano”—made by hand.
A Rich History
In the early Americas, tobacco was considered so valuable, it
served as currency, was smoked as a peace offering and used by
native medicine men for shamanic ceremonies. The United States’
founding fathers created a tradition of cigar culture in private
salons—early cigar lounges that housed the fragrant smokes.
Since the Cuban embargo imposed by President Kennedy in
1962, a resilient industry by Cuban exiles—who survived their
revolution and prospered despite invasive federal regulation—has
succeeded through several decades.
Since as early as 1931, Hollywood has used the cigar as a prop
and accessory. In the silent movie classic “City Lights,” Charlie
Chaplin played an endearing tramp who struggled through
lighting a cigar. Fellow funnyman Groucho Marx was never seen

down, but never dropping a single ash. Even James Bond
femme fatale Xenia Onatopp, portrayed in “Golden Eye”

panetela. Not once did she blink from the smoke or flinch
from the draw—a remarkable portrayal of self-control, or
perhaps just pure enjoyment. And, she only lit her cigar
once. Milton Berle, George C. Scott, and George Burns
top the long list of thespian cigar aficionados.
There is of also, of course, the nemesis of the Habanos,
Fidel Castro, alongside one of the most famous statesmen
in history, Winston Churchill. Churchill inadvertently
became a poster boy for the Cuban cigar and was rewarded
with a format created in his honor.

but seeks the latest trend,” said Charlie Hennegan,
proprietor of Liberty Tobacco Lounge.
However, an entrepreneurial full service cigar bar
called Elite Mobile Cigars is on the move in San Diego.
Elite caters to special events and exclusive parties of
international following, and its list of clientele reads like
a Who’s Who in the sports, financial and movie industries,
as well as the political arena. CEO and connoisseur Dave
Harry purchases very rare humidors, stocked with equally
rare cigars of which only 30 sets are made for the first of
each year.
“I have been collecting these cigar sets since 2006 and
have had them only on display,” said Harry, who carries
an estimated $1.8 million retail in rare cigars. “I am a true
collector of cigars because I keep what I collect and wait till
there are no more available.”
Harry also trades with other collectors who no longer
have the passion to store cigars. In addition, his connections
with different families like the Fuentes, the Padrons and the
Garcias allow Harry to obtain “special cigars that are not
sold in the typical market.”
For example, one of Harry’s most unique cigars is the
Princessa D, which is only one of the cigars in the Fuente
Opus X 2008 Charity Box, of which only 500 boxes are
made each year.
“The Opus Princessa D has over 14 different types of
tobacco in it, which makes the cigar change flavor from
draw to draw,” Harry explained. “And I do like to smoke
cigars, not just look at them.”
Harry said the most popular brands requested are the
Arturo Fuente Opus X or a Cuban Cohiba.
“A lot of people ask for those only because they are illegal
in the U.S. and like the fact they have something they
shouldn’t,” Harry admitted. “I believe the Cuban market
is not what it used to be. In my opinion, there are a lot of
very good cigars that are legal in the U.S. which are better.”

Selecting a Cigar
Selecting the perfect smoke can seem daunting, especially
to a novice. Thankfully, we’ve got some tips to allow you to
boldly go where you may not have gone before.
“Selecting a cigar is by trial and error, similar to wine
tasting or trying out new brews,” Hennegan said.
In a cigar, the outermost wrapper determines much of
the cigar’s character and flavor, while the filler—wrapped
up bunches of leaves inside the wrapper, held together
by binders—makes up the majority of the cigar. The size
and shape of the cigar, together are known as the vitola, is
measured by length and ring gauge.
Also key in choosing a smoke is strength, which should
not be confused with flavor. Strength is similar to coffee—
strong, mild, etc.—while flavor evolves or deepens on the
palate as tobacco is drawn upon, often resembling fruit,
spices, flowers or even leather.
“At some point you have to make a decision and run with
it, but always remember, what is mild to one person is not
so to the next,” Hennegan advised.
When choosing a full-bodied cigar or smoking for the
first time, Harry offers this advice: “Be sure to have a good
meal and don’t try something new on an empty stomach.
Also, only puff on the cigar and hold it in the mouth. More
experienced smokers will hold the smoke in and let the last
20 percent out through their noses. This gives the cigar its
true flavor profiles while using all your senses.”
For Panamanian resident and ex-pat Robert Cozza,
a cigar aficionado of 60 years, the best smoke is “a
Honduran full-bodied Maduro Torpedo because it has
flavor, consistent draw and an even burn. I can light it with
one matchstick. Cigar quality and consistency from bundle
to bundle is disappointing. I don’t believe the leaf is aged
as of days of yore.”
Although veterans like Cozza are old school with their
matchsticks, according to Harry, “A good cigar will burn
very slowly and will allow you to come back later and not
have to relight it. This is a sign of a well-constructed cigar.”

The Padilla Signature 1932 is a limited production produced by Ernesto
Padilla to honor the birth year of his father, Heberto Padilla. Handmade in Don
Pepin Garcia’s El Rey de los Habanos Factory, this starts out mild and creamy,

advice: “The most important thing to remember when smoking, is it’s
an enjoyment, much like a cocktail at happy hour. Relax, take your

Q: If I get monovision (for those people who need reading glasses,) will I have to close one
eye or the other to see distance and reading?
With the balanced, modified monovision technique that I perform, patients absolutely do not close one eye or the other. This
technique works best with both eyes open, taking advantage of the fact that the brain prefers one eye over the other for distance
vision. That is why we all have a dominant eye – we look through a telescope, shoot a gun, aim at something consistently with
the same eye. Using this system, the brain gets a clear distance image from the dominant, fully corrected eye, peripheral vision
from the reading eye, and uses the information from the reading eye when looking at things up close. It’s important to remember
that the eyes just gather light, and it’s the brain that actually sees.

Many patients who were told they were not candidates are now candidates through the advancement in technology over
the past several years, the use of prolate corneal ablations, the use of thin flap LASIK, the use of specialized techniques for

San Diego hails the arrival of this luxury cab service.

H
ailing a taxi on the weekend can be a bit like trying
to catch a sardine with your hand. In the later shades
of evening, it’s a race to find a ride before the streets
are abandoned. Even calling for a taxi sometimes causes mix
ups that leave commuters stranded in the streets for hours. And
once you get that cab, you begin to feel packed in like a sardine
yourself.
Thanks be to Uber, a company at the forefront of the luxury
transport service industry since 2010 and poised to make an
even bigger splash going forward. Conceived and employed
first on the streets of San Francisco, Uber has extended its
reach far beyond California to the corners of the globe, serving
the residents of 20 cities in four different countries. And its
recent arrival in San Diego is nothing short of a blessing.
Uber prides itself on providing a service that is distinct and
arguably superior to that of other cab services. Taylor Monaco,
Uber’s San Diego community manager, does not demure
when describing the company’s innovative technological
implementations.
“Uber is always on demand,” she said. “Our cars arrive 5 to
10 minutes after the client has requested a vehicle, and the user
can see, in real time, the location of the driver as they arrive.”
All of this, of course, is possible through Uber’s smartphone
app, which has done much to revolutionize the way the
industry works. Users no longer have to do the equivalent of
laying down in front of a taxi cab to make it stop, nor must
they wonder how long a call-in dispatch will take to get to their
area. They need only access an application on their phones,
request a ride and watch the blue dot on their screen move

closer and closer.
Even the need for cash exchange has been eliminated by
the application. “Clients upload their credit card information
during the signup process, so all of the billing is done
electronically,” Monaco explained. “No cash required.”
And don’t expect your average yellow cab with limited leg
room and suspect odors. With Uber, you are greeted curbside
by a professional driver in a sleek black car or SUV. It’s like
having your own private driver.
In addition, Uber has set up a mechanism for its clients
to evaluate drivers and send feedback to the company
administration. “The feedback loop ensures that Uber clients
are getting the highest quality drivers, as we remove the lowest
quality drivers from our system,” Monaco said. Riders rate
drivers via a system of one to five stars, and can also leave
short descriptions of their experience on the site, so any and all
episodes are well-catalogued and well-recorded.
Despite all these extra services, Uber is still reasonably priced.
“In San Diego, Uber is typically about 1.4-times standard cab
fare, which is including tip,” Monaco said. “The convenience
and overall luxury are worth the small price difference.”
There is a great school of philosophers who believe that
the definition of “cool” is nothing more than “bringing
panache to the otherwise mundane.” If this is true, then Uber
transportation service is among the coolest of all taxi cab
companies worldwide.
And that, irregardless of all other factors, should be enough
incentive to at least give it a try.

storybook with a bewitching cast of enchanting characters,

A time-honored tradition of the boating community is the San
Diego Bay Parade of Lights (sdparadeoflights.org), where more

Anniversary, USS Santa Claus.” Sunset kicks off the event with
fireworks from the San Diego Bay Embarcadero.

village where nine scenes from the life of Jesus are artfully staged

A test drive of the 2013 Porsche Boxster
shows it lives up to the brand.

B
efore 1905, Albert Einstein couldn’t find a teaching job.
Billionaire Ross Perot got his big start after borrowing $1,000
from his wife. Humble beginnings often forge great success—
and there will be yet another with Porsche’s latest release of the 2013
Boxster S.
In order to appreciate what Porsche has accomplished with this new
vehicle, a few opinions must be stated, many of which have been
accepted by the automotive industry regarding the first generation
(Model: 986) and second generation (987) of Porsche’s Boxster, both
remembered for their less-than-flattering exteriors. The soft rounded

bodylines in each of the earlier generations had a
feminine feel and performance that left the driver
wanting more. And with a base price significantly less
than the 911, the Boxster came to be known as the
“Poor Man’s Porsche.”
But that’s all but changed. The new 2013 Boxster S
is no longer the unwanted stepchild of the Porsche
family. It has been completely reshaped, reformatted
and refitted into a stunning automotive experience
with a look all Porsche fans have come to expect from
the luxury brand.
Exterior
Upon first glance, the car’s stout aggressive styling
is evident. The Boxster S boasts the angry look in
which sports car enthusiasts revel. The wheel wells are
deep and the bodylines are hard, distinct yet true to
Porsche’s core styling. The 2013 Boxster S truly has an
exotic-car feel, separating itself from the predecessor’s
common lines.
Upon closer inspection the meticulous thought and
detail that went into this car is evident. For example,
the taillights have integrated LED blinkers that slightly
bulge and split the enclosure in half, while aligning
themselves with the integrated spoiler on the rear of the car, giving
the impression the spoiler runs across the entire rear of the vehicle.
The air ducts on the side of the car are met by two hard bodylines
in the door, making them both functional and beautiful. While 19inch wheels are now standard, the 20-inch rims (upgrade option)
suit the car nicely without overpowering the design.
The car is truly beautiful, and with the opportunity to test drive
it for two days courtesy of San Diego Porsche, I can honestly say
it both turned heads and changed my view. From the streets of
downtown San Diego through the back roads of Palm Desert, I
never stopped without a conversation generated by this car. It’s
spectacularly different than the previous Boxster, yet most people
failed to realize the improvements both visible and under the hood.
The 2013 Boxster S is so unique and brilliantly designed it will
likely become the standard by which all other two-seater sport
convertibles are now measured. But the exterior beauty of this car
is simply the beginning. Porsche owners can now look forward to
beautiful design amalgamated with user comfort and functionality.
Interior
No matter how striking a car may be from the outside, the driver
is the only person that deals with any inconveniences on the inside.
Many functional problems can occur when manufacturing a
luxurious two-door convertible sports car. Can it hold a cup a coffee
on your way to work? Can you reach the radio, climate controls,
navigation and maneuver them easily? Is the legroom comfortable
for various heights? These are real, everyday issues that many
owners consider before purchasing a vehicle like the Boxster S.
Porsche took all these things into consideration. There are
additional inches of legroom versus the previous model of the
Boxster, as well as a significant amount of headroom. I tested the
car by having a few gentlemen over 6-feet-tall sit in the drivers seat.
Each fit nicely and said they were surprisingly comfortable.
Modern vehicles have buttons integrated into the steering wheel
that allow the driver to accomplish tasks without his or her hands
leaving the wheel. The Porsche Boxster S is no exception, with a
bevy of electronically controlled options available at your fingertips.
The ease of navigating through these options is where the 2013
Boxster separates itself. By utilizing a scrolling push-button wheel,
you can simply roll your thumb over the button and access your
tire pressure, trip information, phone book, diagnostics and even
an additional map (separate from the one in the center console) in
which you can zoom to see your location on the road. All this from
one button.
One of the more impressive interior features are the ventilated
leather seats. With the push of a button, air is sucked from inbetween you and the seat, keeping your back dry when temperatures
rise. Gone are the days of punishing your white dress shirt with

unfortunate oval wet marks because you have perforated black
leather interior.
As technology advances and becomes increasingly
incorporated into cars, additional training and the reading
of thick manuals has become a daunting but necessary evil
when purchasing a high-end vehicle. Just because a car has the
ability to take advantage of technology, it doesn’t necessarily
mean that a driver will be able use it properly. Porsche has
done a fantastic job of making the user aspect of its technology
very transparent for the driver. For example, connecting your
phone via Bluetooth and accessing the phone book from the
steering wheel is easily done without opening up the manual
and thumbing through the index. These features along with
many more are all just as easy as programing your favorite
radio stations and using the navigation.
Performance
Let’s be honest, the first number that most people look at
when buying a luxury sports car is the horsepower rating. But
when building a true sports car, the numbers can be deceiving.
A true sports car needs more than just power to compete in the
luxury high-end performance category. Building a true sports
car for the street is more than strapping a rocket to a roller
skate. Weight, suspension, brakes and drive train all play their
part.
The specs for the Boxster S can’t be overlooked, with 315
horsepower galloping out from the 3.4-liter, six-cylinder engine
taken from the Porsche 911.
The chassis is completely different from the old Boxster S,

constructed primarily out of aluminum and magnesium, making
the total weight of the car a tremendous 77-pounds lighter and
40-percent stiffer. That’s not a misprint—it really is 40-percent
stiffer. And when combined with computer-controlled adjustable
suspension and steering, racing brakes, grippy tires, a midengine setup and a seven-speed PDK transmission—which
shifts faster than a manual—prepare to have a smile on your
face when you take it for a test drive.
Hands down this is the best handling car I’ve ever driven.
It was so well-behaved on the bends that I felt it was my duty
to discover its limit. Each time I drove faster, turned sharper,
I thought I would feel the rejection of the car. However, no
such limit was reached as it had more and more to give. In two
words: mind blowing—and in more than two words, this car
reshaped my thinking of the Boxster.
It’s the perfect balance of power, superior handling, braking,
road feel and comfort. Oh, and did I mention it gets 28
highway miles to the gallon, so we can add economical to that
list?
It can be difficult to try to convey on the printed page the
emotion and adrenalin that comes from sitting behind the
wheel of a Porsche. It gives you the distinguished feeling
of confidence and strength that can only come from being
a luxury sports car owner. Driving a 2013 Boxter S is an
experience you must try yourself in order to understand how
amazing the drive really is.
From humble beginnings and controversial criticism, the new
Boxster S has risen as an individualized performance machine,
ready to dominate any competitors in its class.

The Champions Golf Course at the La Costa Resort & Spa was the site for the 2nd annual SWING FOR KIDS Golf Tournament,
held Friday, Oct. 26. The event was sponsored by KIDS KORPS USA and the Rancho Santa Fe Rotary Foundation. More than
120 golfers participated in this tournament, with proceeds benefitting the Rancho Santa Fe Rotary, Kids Korps USA, Angel
Faces and SEAL-Naval Special Warfare Family Foundation. More than $40,000 was raised to support these charities.

On Nov. 10, the Tri-City Hospital Foundation hosted the 2012 Diamond Ball, North County’s premier gala. For more than 30
years, the gala has provided financial support to help create services, build facilities and provide exceptional health care for more
than 800,000 North County residents. Guests were immersed in a lavishly decorated ballroom at the Park Hyatt Aviara, and had
the chance to win a diamond during the champagne toast.
