This was led by Jeff Pett and George Howard’s improbable 59, Ken Hu and Dave Ballantyne’s come back 64 to edge out the consistent duo of Clark Bradley and Gene Hagen’s 68-68, and who could forget the 63 shot by Herb Goldfarb and Shikwon Choi. Thank you for all of your participation as we seek to grow this event in the upcoming years. Table Talk with Chef Andrew Coniglio Sausage Artichoke Puttanesca Nearly everyone likes spaghetti and meat sauce and pretty much everyone can make it. So this month I would like to share a recipe I came up with for Sausage Puttanesca. Puttanesca is a Southern Italian dish that uses tomatoes, olives, olive oil, capers and garlic. With some of ingredients being brined it does have a “salty/briny” finish but if you like eating olives this will be a dish you thoroughly enjoy. The twist to this recipe is adding artichoke hearts and Italian sausage to cut some of that brine and add some spice. For vegetarians the sausage can be replaced by vegan sausage or removed entirely. . • Italian Sausage (take out of skin and crumble) • Canned Diced Tomatoes • Artichoke Hearts (canned, rinsed, chopped) • Capers • Green Olives (chopped) • Celery (small dice) • White Onion (small dice) 1.5 lbs 4 -28 oz. can 1 lb 2 oz 3 oz 3 oz 6 oz •B ay Leaves •R ed Pepper Flakes •R ed Wine Vinegar •R ed Wine •W hole Butter •S alt and Black Pepper (seasonat end if desired) •O live Oil 3 each 2 teaspoons 2 oz 12 oz 6 oz to taste 3 oz Procedure 1. Sautee onions, celery and bay leaves in olive oil until soft 2. Deglaze with red wine vinegar and reduce by half 3. Add rest of the ingredients except butter and canned tomato, cook for 3 minutes 5. Add tomato strips and bring to a boil while stirring, turn down to simmer 6. Simmer for 1 hour, stir occasionally 7. Finish with whole butter (adds richness and shine) pipeline | 17 4. Deglaze with red wine and reduce by half p i p e l i n e | 18 January’s 3 Bites 3 Wines Nature Watch: Christmas Bird Count Written and photographed by Golf Operations Dave Noel Since the year 1900 birds have been counted throughout North America in the month of December in what is known as the Christmas Bird Count. This year, three experienced birders checked the ponds, skies, trees and golf grounds of Innisbrook for birds of any kind. The team netted 57 species for the day. The north Pinellas total for birds seen in the day was 150 different birds. Innisbrook’s resident Canadian goose scored as the only goose to be counted. Other highlights were the Yellow-bellied Sapsucker, Blue-Headed Vireos and 5 American Kestrels. A detailed list of the birds counted can be found on Dave Noel Bird blog. pipeline | 19 Perhaps the best bird of the day was seen before daylight. In search of a Barred Owl we went to the Island golf course where cypress swamps are found. After playing a recording of the bird’s sound, an owl flew out of the dark swamp and sat in a tree just above our heads. Then it proceeded to call back to us, only to attract another Barred Owl. They both looked at us for a while then flew away into the dark.
