Only two producers currently practice riddling,
a labor-intensive step in the production of
high-quality bottle-fermented sparkling wine:
Siam Winery, who produce the Extra Sec Rosé
for Monsoon Valley, and Granmonte Vineyard,
which this year released its first Crémant, made
from Chenin Blanc.
White wines have been the benchmark for New
Latitude Thailand, contrary to popular belief that
white grapes require cool weather to make good
wines. The Chenin Blancs and Colombards, in
both fruity and dry styles, have always provided
the most joy, but the new Viogniers from Khao
Yai, Hua Hin and Pattaya are also worth trying.
Here the panel was most divided. One half preferred a classic and restrained style, while the
other more full and robust wines. Thailand has
produced small-batch Tempranillo and Dornfelder
in the past, but the power-house Shiraz continues to reign supreme.

Tucked in a small shophouse
down on Charoenkrung Road,
not very far from Chinatown,
the venue has been renovated
in a simple loft-like style with
a lot of empty space putting
the focus squarely on the soul
and funk live bands. We’re
seeing a lot of familiar faces
who have performed at Rehab
RCA. With its easy-going vibe,
we’re sure Soulbar will soon
become one of the hottest
spots in town for live music.

There’s now a better reason than ever to move out of home: new condos you

Thailand, Let’s Be Tourism Together Campaign!
(National Press Bureau of Thailand) For re-launch to increase
the tourism to Thailand, the Bureau of the Tourism is have a
new auspicious campaign name “Thailand, Let’s Be Tourism
Together Campaign!” Tourism is 10 percent of all the GDP in
the kingdom and it is down 11-12 percent for Aug-July yearon-year because of bad quality food and weather.
The plan part one is to register all the bad men doing
scams in the popular cities of the Kingdom, such as Phuket
and Pattaya and Soi Cowboy. The scammers will be give a
training on speaking better English, politeness, real Thainess
and how to smile. Once the scammers pass the test, they
will be given a certificate and ID card with discounts at MK
and the BTS.
Also, taxi drivers, who want increase the fare, but must
to increase the quality of their service first for the happiness
to return to us all. For the taxi to be a higher fare, the service
will of VIP international standard, with a cold-towel, a plastic
cup with a plastic seal on the top (with the little straw that
cannot break the seal only if you really are hit with the
straw very fast) and also a Thai flower garland for the good
luck and the welcome.
The third plan of the “Thailand, Let’s Be Tourism Together
Campaign!” is the buddy system which will automatically
assign a buddy to the tourist when they arrive. For example,

soft drink cans and opening ceremony for the good luck.

How did you get into this line of
work?

Nhae: After graduating as an electrician, I couldn’t find a job so my
brother, who worked as a sound
engineer at Kantana, suggested I
get into this. I had absolutely no
idea what to do at first but have
now been doing it for 40 years.
Have you had any accidents while
working?
Lek: I used to work in the provinces as a “checker”—the guy who
checks movie reels before they get
screened. Then I started working on
sets and finally ended up as a foley.
What skills does a good foley
need?
Lek: You need to know the subtle
differences between the same types
of sound. For example, the sound
of footsteps is different for a man,
woman and child so I have to be
able to recreate each one accurately.
If ever we need to make the sound
of a woman in high heels, I’m the
Lek: Getting wounded is totally normal for me, but only small things.
My biggest accident was breaking a
finger while carrying a rock.
Nhae: I’ve fallen over in high heels
before, but never anything serious.
What are the most difficult sounds
you’ve had to create?
Nhae: Back in the old days, we had
to capture the “whoom” of a speeding motorbike flying by. To get the
perfect sound we had to record late
at night, and the residents of the soi
we were recording on thought we
were a motorbike gang causing trouble. There is a sound library, but the
noises don’t always match the right
environment, so we have to recreate
them in our messy studio until the
sound engineer says it’s OK.
How much do foleys get paid?
Nhae: The rate is flexible, from
B2,000-4,000 for one movie, which
takes about 15-20 days to complete.
Are there many young people in
this line of work?
Nhae: There are, but I don’t think
they’ll be doing it for long. You
need to be really patient and love
the work. I’ve seen a lot of people
try but they don’t stay long because
it can be so monotonous. It’s unfortunate.
After 40 years, what drives you to
keep doing it?
Lek: Foley work is my life. Even
though I have to work every day,
I still have fun. I’m happy to work
with my colleagues and try new

here’s not much literature out there about the Northern Territory (NT), one of the least populated parts of Australia.
Less glam than other regions—no lush vineyards or happening cityscapes here—but it does have a certain tropical charm.

Just a short drive away from the airport is the biggest city in NT. Don’t expect a huge metropolis,
though; walking from one end of the city center to
another takes only half an hour.
This Aboriginal-owned national park is traveler HQ,
due to the stunning Katherine Gorge (actually 13
linked gorges). It’s a half-day drive from Darwin
city, so we recommend staying for at least a couple of nights.
Do: Watching sunsets is a real obsession here.
We found awesome views at Mindil Beach Sunset Market (www.mindil.com.au), which is touristy but worth it for cloud-watching on the beach
while listening to trippy didgeridoo electronica.
Outdoor movie screening series Deckchair Cinema

with an impressive line-up of critically-acclaimed art
house films and a bar on-site. The upmarket waterfront dining enclaves are also nice at night, such as

go on a boozy dinner cruise with Darwin Harbour

and sea breeze go a long way. For drinks, there are
plenty of backpacker pubs along Mitchell Street, but

is where there’s a real alternative nightlife scene.

If you’re driving (or being driven) south, stop for
a dip in this incredible natural plunge pool. It’s a
little rocky underfoot, but swimming in the cool,
clear water (fish and all) is to die for, especially
when it’s hot.
Do: See Katherine Gorge on a breathtaking 15-min
helicopter ride from Nitmiluk Tours (www.nitmiluktours.com.au, A$99/B2,833). They also do boat
cruises and walks if you want to see the gorges up
close. But it can be tricky to see more of the outback

Rarinjinda Wellness & Spa
In some ways, Tombstones is exactly what you’d expect from a modern Liam
Neeson film. In other ways, it isn’t. No doubt, he does the part of Scudder justice—rough but calm, slightly fatherly, able and willing to kick some ass (one of
the character’s better portrayals, in fact)—but it’s very close to some of his past
roles. And he still can’t do an American accent. But unlike Neeson’s most credible action movie, Taken (2008), there is a distinct lack of story development,
especially in the first half. And despite there being no shortage of blood, as given
away by that trailer, the movie suffers from too few fight scenes, while the ones
there are seem weakly executed.
But the movie is not without depth. Although the dialogue drags on at times,
director Scott Frank slowly and successfully illustrates Scudder’s emotional journey throughout the dark two-hour running time. Certainly, A Walk Among the
Tombstones is more than just another generic action thriller.

Despite too many characters with only a vague connection to the main plot, and
a storyline as predictable as this one, there is still enough in there to be kept on
edge throughout. We like the noir ambience and at times picturesque views of
Brooklyn, the small late-90s details, and the occasional, well-scripted moment
of light humor. The killers are creepy, the graphic scenes believable, the supporting cast strong. If Frank had only managed to pace the plot well, it might even
