Eventually, great ideas that have been long forgotten will find the light of day and be considered revolutionary. After all, they are great ideas. As I researched my new book, The Raw Truth, I hit upon the idea of starting each chapter with a “Legend of Health.” The idea basically springs from the fact that most of the “new” health trends were actually espoused years ago by forward thinking individuals who served as the pioneers of our modern natural health movement. They championed this message in the face of great adversity and even ridicule from the conventional medical establishment. Take, for instance, Dr. Élie Metchnikoff. He surmised that it had to do with the raw, fermented dairy drink they consumed on an almost daily basis. He theorized that the good bacteria from the beverage somehow balanced out the bad bacteria in the gut. Almost 100 years ago, he outlined our modern understanding of probiotics. You can read more about his amazing story on page 24. Élie Metchnikoff is but one example of a health legend. I have been friends with Dr. Brasco for over 12 years, and I love that he combines cutting edge medical research and technology with a heartfelt belief that diet and nutrition are the keys to wellness. Dr. Brasco contributes a great article focusing on digestive health, which goes along perfectly with our gut-friendly recipes that are both delicious and nutritious. Finally, our cover story for this edition of Extraordinary Health focuses on the RAW food movement and the people who are shaping it. To me, the most interesting element of their stories is how they came to be leaders when they started as pupils. Some of them have “gone raw” for health reasons, some for ethical reasons, but they have all decided to carry the banner and shout from the mountain tops about the benefits of living RAW. Thirty years years from now, I am willing to bet that one or more of them will be 4 hailed as a “Legend of Health.” After all, everything old is new again. While it has long been known that protein intake is vitally important to life, it wasn’t until the high protein, low carbohydrate craze of the 1990s that protein truly became a shining star. Long before diet fads, though, discerning individuals understood the importance of healthy sources of protein in their diets. Responsible for building and repairing tissue, protein is the most plentiful substance found in the body—after water. Protein adds up to one-fifth of your body weight and is the major constituent of most living cells and body fluids. Protein builds strong bodies, burns fat, repairs the daily wear of vital muscles, and replaces body chemicals—something that the body’s other macronutrients (fat and carbohydrates) are unable to do. It stands to reason that providing your body with a healthy source of protein is important. The key word here is healthy. In fact, entire cultures existed—and thrived—on diets comprised primarily of healthy sources of protein. So the question is: what defines a healthy source of protein? THE CONCEPT OF COMPLETE PROTEIN The concept of the complete protein is fairly easy to understand. First of all, it’s generally regarded that eight amino acids are essential for healthy adults. They are essential because the body cannot manufacture them on its own, requiring that they come through diet. A complete protein source, then, is one that contains all eight of those amino acids in the amounts your body requires. While proteins are contained in most of the foods we eat, only animal sources of protein contain all eight essential amino acids in the amounts that our bodies require. Price, a man who—in the 1930s—devoted his life to observing the health of remote cultures that were basically cut off from the outside world and lived on their indigenous or historical diets. He found that many of these cultures thrived on diets made up primarily of animal proteins, nuts, seeds and grains. In fact, many of them ate raw animal protein, be it raw fish or even meat. And there’s the rub. Not only were the animals caught in the wild—with none of the antibiotics or added hormones that have become mainstays in our food chain now—but they often ate them raw. For even the most dedicated sushi lover, eating a diet composed almost solely of raw animal protein is a tough act to swallow. However, there was wisdom in the diets of these ancient cultures. Cooking that animal protein would destroy many of those nutrients, alter some other ones, or at the very least reduce the amounts of the rest. Smith I n our last edition of Extraordinary Health, we featured the first part of an exposé on GM (genetically modified) foods. That’s why we asked Jeffrey M. Smith—who is at the forefront of the debate on the use of GM crops—to continue to share his insight into what’s happening in the world of GM foods. Last issue, we looked at the shocking truth behind GM foods and the huge effort by governments and biotech corporations to keep information out of the mainstream media—and outside of your awareness. This time, let’s peer into some of the health risks associated with GM foods: Infant Mortality and Reproductive Disorders It’s rather appalling. When GM soy flour was given to female rats, most of their babies died within three weeks. For those that survived, they were smaller and had future fertility problems. Likewise, male rats fed GM soy or corn experienced testicular discoloration, damaged sperm cells, DNA function alterations, fewer offspring and smaller babies. Some U.S. farmers say that thousands of their pigs, cows, or bulls experienced reproductive complications including infertility or sterility after GM corn consumption. In India, most buffalo that ate GM cottonseed also had reproductive issues, including premature deliveries, abortions, infertility or prolapsed uteruses. Additionally, many calves died. Interestingly, in the U.S. population, the incidence of low birth weight babies, infertility, and infant mortality are all escalating. That coincides with increased GM food intake. The Killing Fields of GMOs From infant mortality and reproductive disorders to killing animals, allergen-containing, liver- and intestinal-affecting “food as pesticide” that can stay in our systems—GMOs can take a toll on health, says Jeffrey M. Smith. 20 Jeffrey M. Smith is the international bestselling author of Seeds of Deception and Genetic Roulette: The Documented Health Risks of Genetically Engineered Foods. Food: A Registered Pesticide? Did you know that when insects bite GM Bt corn and cotton, they get a mouthful of a built-in toxin, produced by every cell of the plant? (Inserted genes produce an insectkilling pesticide called Bt-toxin in every cell of the plant.) The poison splits open the insects’ stomachs and kills them. Here’s the kicker: The GM plants are registered as pesticides with the Environmental Protection Agency. Biotech companies claim that Bt-toxin has a history of safe use, since organic farmers and others use Bt bacteria spray for natural insect control. Genetic engineers, however, insert genes from the bacteria into the DNA of the corn and cotton, so the plants themselves do the killing. The truth is that the Bt-toxin produced in GM plants is thousands of times more concentrated than natural Bt spray; is designed to be more toxic; has properties of an allergen; and, unlike the spray, cannot be washed off the plant. Even the less toxic natural bacterial spray is harmful, though— as evidenced by 500 people who reported allergy or flu-like symptoms when exposed to it, and the Indian farm workers who handle Bt cotton and report similar symptoms. The Bt cotton (and corn) has other implications: killing animals. reacting to the Bt variety. In one village, they allowed their 13 buffalo to graze on Bt cotton plants for a single day in January 2008. All died within three days. Bt corn was also implicated in the deaths of cows, horses, buffaloes, and chickens. Even Monsanto’s (a GMO biotech company’s) own 90-day rat feeding study showed evidence of poisoning in major organs due to their Bt corn. GMOs Contain Allergens Then there’s the problem of allergens. Immune system problems in GMO-fed animals are “a consistent feature of all the studies,” according to GM food safety expert Dr. Arpad Pusztai. The American Academy of Environmental Medicine specifically notes an increase in cytokines, “associated with asthma, allergy, and inflammation.” While all three conditions are on the rise in the US, it is the upsurge in food allergies among children that has generated the most alarm nationwide. There are many reasons why GMOs might be the cause: • The GM proteins produced in GM soy, corn, and papayas have properties of known allergens and fail the allergy screening protocol recommended by the World Health Organization. • Creating a GMO can introduce new allergens or elevate existing ones. Both GM soy and corn contain new unintended allergenic proteins, and GM soy has as much as seven times higher levels of a natural soy allergen. • Herbicide tolerant GM crops have considerably more residues of toxic herbicides, which may provoke reactions. • Allergy tests confirm that some people react to GM soy, but not to non-GM soy. If GM crops kill animals, how safe are they for us to eat? When sheep grazed on Bt cotton plants after harvest, thousands died. Post mortems showed severe irritation and black patches in their intestines and livers. Investigators said preliminary evidence “strongly suggests that the sheep mortality was due to a toxin. . . . most probably Bt-toxin.” In a small feeding study, 100% of sheep fed Bt cotton plants died within 30 days, while those grazing on natural cotton plants in the adjoining field had no symptoms. Similarly, buffalo that grazed on natural cotton plants for years without incident are Soon after GM soy was introduced to the UK, soy allergies skyrocketed by 50%. Research shows that consuming GM foods—including Bt toxin-tainted foods and GM peas—may provoke sensitivity to other, non-GMO foods. GMOs and Liver Problems The liver is a primary detoxifier, but the livers of mice and rats fed GM feed were smaller, partially atrophied or significantly heavier—possibly inflamed—and some showed signs of toxicity from eating GM food. GMOs Remain Inside Us! The only published human feeding study revealed that the genes inserted into GM crops transfer into the DNA of bacteria living inside our intestines and continue to function. So, long after we stop eating GMOs, we may still have potentially harmful GM proteins produced continuously inside of us. Although scientists tested this only on soy, if Bt genes from corn chips also transferred, they could transform our intestinal bacteria into living pesticide factories—possibly for the rest of our lives. The bottom line? GM foods might be colonizing the gut flora of North Americans. Even if GMOs helped combat global hunger—which they don’t—it would be hard to justify putting these high-risk organisms into the food supply, especially since GM crops cross-pollinate and contaminate the environment. Their self-propagating genetic pollution may outlast the effects of global warming and nuclear waste. 21 Shhhh! Meet the Scientists Who Dared to Break the Silence on GMOs Arpad Pusztai Biologist Arpad Pusztai was the world’s top expert in his field, but when he accidentally discovered that genetically modified (GM) foods are dangerous, he became the biotech industry’s bad boy. Here’s what happened: Dr. Pusztai was awarded a $3 million grant to design a system for safety testing GMOs, but the testing went sideways. Within 10 days, the test animals fed GM potatoes developed potentially pre-cancerous cell growth, smaller brains, livers, and testicles, partially atrophied livers, and damaged immune systems. Moreover, the cause was almost certainly side effects from the process of genetic engineering itself. In other words, the GM foods on the market—created from the same process— might have similar effects on humans. When Pusztai was interviewed on TV about his findings and his concern over the safety of GM foods, he was soon fired, threatened with lawsuits, and shut down. Fortunately, Pusztai’s research was eventually published in the Lancet. Unfortunately, his is the only in-depth study done on the GM foods eaten every day by Americans and Canadians. The biotech industry mercilessly attacked Dr. Traavik. Their excuse? He presented unpublished work. But presenting preliminary data at professional conferences is a long tradition in science, something that the biotech industry itself relied on in 1999 to try to counter the evidence that butterflies were endangered by GM corn. Why is Science and Debate Being Silenced? There appears to be a de facto ban on scientists asking certain questions and finding certain results. New Zealand Parliament member Sue Kedgley told a Royal Commission in 2001: “Personally, I have been contacted by telephone and e-mail by a number Irina Ermakova, a senior scientist at the Russian National Academy of Sciences, discovered that of scientists who have serious concerns more than half of the baby rats in her experiment died within three weeks. As I’m writing this, the media is covering the nutrition professor who followed the “Twinkie Diet”—in which he ate mostly junk foods dotted with a protein drink and some veggies—and lost 27 pounds. What? He may have lost weight, but what about his overall health? At least he had enough sense to not recommend this diet or follow it long term; it was just an experiment. Perspectives on what makes up a good diet change through the years, and I think that’s both good and bad. It’s good in a sense that there’s less fear about including quality fats in the diet. For example, I’m often asked about coconut oil—and it’s definitely a good dietary fat, so be sure you include it. On the other hand, there’s still a lot of confusion about what a good diet is because there are literally thousands of “diets” out there, including that crazy Twinkie diet. No wonder that, in my practice, I see so many people who have become confused and frustrated! While no one diet works for everyone—people have differing nutritional needs—I do know that there are dietary principles that everyone should follow. Chief among those is consuming healthy proteins, fats and carbohydrates—because those are the macronutrients we all need. That basic advice is pretty well known, but I like to take it a step further. Since I am a board-certified gastroenterologist, I often focus on diets that are best for digestion. If you want to focus on great digestion, I recommend the following: Avoid processed foods altogether. They make your body work harder and they are often devoid of key nutrients. Eat healthy proteins from sources like organically raised, grassfed cattle or sheep and wild-caught fish like salmon or tuna. Consume healthy fats, including coconut oil and extra virgin olive oil. Limit your carbs to those found in sprouted whole grains, low-starch veggies and low-sugar fruits. very bodily cell, tissue and organ depends on nutrient absorption and assimilation of food through healthy digestion. Therefore, you need to be intentional and choose your food wisely. For me—and the patients I see on a daily basis— that means finding foods that are rich in probiotics, enzymes and fiber. Probiotics promote the growth of beneficial bacteria in the intestines, which support healthy digestion, absorption of minerals, synthesis of vitamins, production of B vitamins and certain enzymes, immune health—and much more.† When there are not enough of these good bacteria called probiotics, the result is often felt negatively in the gut’s digestive process and in overall health. Eating enzyme-packed raw food or sprouted food is another way to support great digestion. Enzymes are found naturally in raw, uncooked foods and most raw foods contain the very enzymes your body needs to digest that food. You require an array of enzymes, too, because different enzymes are necessary for full digestion. That makes enzymes an essential part of the digestive process, which, by the way, takes up more of your body’s energy than you might think—about 80 percent. So eat plenty of raw fermented foods, fresh, raw organic vegetables and fruits (like papayas and pineapple), raw sprouted grains, raw seeds and nuts, avocados, sprouts and unpasteurized dairy products. Cultured dairy foods are packed with probiotics and enzymes. A diet good for digestive health should include plenty of cultured dairy products like yogurt, kefir, hard cheeses, cultured cream and cottage cheese—from goats, cows and sheep. Likewise, cultured and fermented vegetables like sauerkraut, pickled carrots, beets or cucumbers also supply probiotics and enzymes, including enzymes that break down food and increase digestibility.† Finally, don’t forget fiber. Include foods like fresh raw vegetables and fruits, sprouted whole grains, nuts and seeds. Fiber creates a hospitable environment for friendly bacteria (but you also need enough of these good bacteria for maximum fiber benefits) and serves to normalize transit time—the time it takes food to pass through the digestive tract.† Fiber also helps move foods’ nutrients through the digestive system so that your body can be properly nourished. Among other things, a healthy gut acts as a barrier to a sometimes threatening external environment and is the gatekeeper for life-sustaining nutrients. The good news is that consuming probiotics increases the size of good intestinal bacteria colonies called microflora, thus improving health and digestion. In short, probiotics aid digestion and the absorption of nutrients—basically determining how well-nourished we are. There are three main types of enzymes: metabolic enzymes, digestive enzymes and food enzymes. Metabolic enzymes are instrumental in heart, brain, lung and kidney function, and literally hundreds of metabolic enzymes keep the body humming along. They’re in our cells, internal organs, blood and even our bones. Digestive enzymes are secreted by the salivary glands, stomach, pancreas and the small intestine. They break down large food molecules into smaller units that can be absorbed by the blood and into cells. This is essential because that’s how our bodies get nourished from the macronutrients: proteins, fats and carbs. In fact, the enzyme protease works to digest proteins†; lipase works to digest fats†, while amylase works to digest carbs.† Digestive enzymes speed up the digestive process and without digestive enzymes, food molecules would break down far too slowly to be absorbed.† Food enzymes are found naturally in raw, uncooked foods and help digest those foods so their nutrients can be absorbed into the bloodstream. In turn, your health can take a hit because overall health is tied to digestive health and good digestion relies on the right enzymes in the right amounts—at the right place and time. Don’t underestimate the importance of moving food along, either, because different parts of the digestive system absorb different essential nutrients, so you want to keep your food moving. Dr. Jensen believed that people needed to get away from their day-to-day routine and concentrate on getting better through eating the right foods. . . ” 53 by: Jordan Rubin BEYOND ORGANIC FIBER A New Way to Picture Fiber The late Dr. Denis Burkitt had a unique way to convince audiences of the need for fiber. It certainly wasn’t the most appetizing way to prove a point, but Dr. Denis Burkitt was a man on a mission. The Irish born, British-trained doctor spent 15 years of his life in Eastern Africa. While there, he noted that the native Ugandans experienced far fewer digestive and other health issues than did his British counterparts who lived among them. He surmised that the difference was largely due to dietary habits. The British ate a meat-and-potatoes diet with very few fruits and vegetables, and they built a social life around afternoon tea, which was really an excuse to snack on cakes and scones with a spot of sugared tea and milk. The native population, however, consumed plenty of fruits and vegetables and little meat. Processed flour, white sugar, and beef were either too expensive or generally unavailable to them. In order to drive this point home, Dr. Burkitt engaged in a rather peculiar hobby. On his daily walks through the Ugandan countryside, he would photograph human feces. Disgusting? Sure, but he did it to prove a point, a point that he would drive home when he lectured to other doctors. The Irish surgeon made detailed observations of his patients’ bowel habits and noted how the Africans produced much more feces than the Brits. Western diets were so dense in calories and low in bulk that their intestines didn’t pass enough volume to remain healthy, while the feces of Ugandans was soft and produced with negligible discomfort. To prove this point, he would flash his pictures on a screen while he lectured. Dr. Burkitt’s insight and advocacy moved “the fiber hypothesis” from obscurity to the forefront of science with the publication of an important study called “Dietary Fiber and Disease” in the Journal of the American Medical Association (JAMA) in 1974. In the decade following publication of this groundbreaking research, a consensus developed in the United States and Great Britain that fiber was missing in modern diets and needed to be reintroduced. A Question of Fiber Not all fiber is equal. While there is probably no such thing as “bad” fiber you do want to make sure that you are getting enough of the right kind of fiber. For starters, there are two basic kinds of fiber, soluble and insoluble. Soluble fiber, which is found in nuts and seeds, apples, pears, strawberries and blueberries, partially dissolves in water. Soluble fiber can help lower blood cholesterol and may reduce the risk of heart disease and stroke.† Insoluble fiber, which cannot be broken down by water, is found in food like grains, carrots, cucumbers, zucchini and tomatoes. Insoluble fiber provides the “bulk” needed for proper functioning of the stomach and intestines.† You may ask yourself, “Which one is better for me?” While both types of fiber are important in maintaining good health, it’s not difficult to overdo it. Too much soluble fiber (nuts and seeds, beans, apples, pears, strawberries, and blueberries) can worsen constipation or create a gas problem for some people. 54 54 † These statements have not been evaluated by the Food and Drug Administration. Too much insoluble fiber (whole grains, brown rice, cereals, carrots, zucchini, and tomatoes) can have the opposite effect. Where fiber is concerned, that isn’t the only question you should be asking. You should also ask, “What is the best source of fiber?” In my opinion, the answer to that question is one word: RAW. F arming for Our uture Water Springs ETERNAL 60 In his poem Rime of the Ancient Mariner, author Samuel Taylor Coleridge describes the vast stretches of sea by saying “Water, water, everywhere, nor any drop to drink,” a longing ode to the literal ocean of salt water that was worthless as a means of quenching the brutal thirst that accompanied the long sea voyages of our ancestors. The value of water to ancient civilizations would be hard to overstate. In my opinion, access to clean water was the number one factor in whether a civilization prospered or perished. Water nourished the land, nourished the animals that civilizations fed upon and nourished the civilizations themselves. Today, we take water for granted. An easy turn of the tap yields gallons of water at our disposal. It would be easier to name retail outlets that don’t carry water than those that do. Every single convenience store, grocery store and gas station seems to sell water. Everywhere we look, water flows into our lives. I put a very high value on water when it comes to my personal health. In fact, when I first set out to acquire land for my mixedagriculture sustainable farms and ranches, I was less concerned with the land, the local climate or even the location. I was most concerned about the water. In essence, I wasn’t looking for “land.” I was looking for a sustainable future. I was looking for water. My love affair with water began at an early age. Every summer, my parents would take me to visit my paternal grandparents in Long Island, New York. Grandpa Jerry and Grandma Ann had a summer home in Mountaindale, a hamlet around ninety miles from New York City, near the Catskill Mountains. I loved Grandpa Jerry. He was a dentist who by Jordan Rubin saw patients in the basement of his home and had a keen interest in natural health from an early age. He enjoyed studying the works of Herbert Shelton, one of the founders of the science hygiene movement, otherwise known as natural hygiene, as well as the work of Dr. Royal Lee, natural health pioneer and inventor. Whenever we visited Papa Jerry in Mountaindale, he’d call me into the kitchen and hand me an empty gallon-sized plastic container. “We’re going to get some spring water,” he’d say. With empty containers in hand, we’d set off on a short drive, followed by a fifteen-minute walk that would take us up the side of a small mountain, where a fresh spring gushed forth the purest, most refreshing, best-tasting water you’d ever find. We’d fill up our gallon containers and tote them back home to drink. In the early 90s my water education deepened when I read a book by Dr. Fereydoon Batmanghelidj, entitled Your Body’s Many Cries for Water. Dr. Batmanghelidj was a political prisoner in Iran during the days of the Ayatollah Khomeini. While in prison, he treated stressshocked prisoners with no medications—they weren’t available—and instead relied on making sure they were properly hydrated. He treated hundreds, if not thousands, of prisoners suffering from stomach pains caused by the stress of being falsely imprisoned. He found that for many of them, proper hydration was a key component in returning them to health. He eventually published his findings and went on to write seven books championing the benefits of water. It’s safe to say that I am a huge proponent of water. I grew up with people who valued it, and I’ve immersed myself in the teachings of the people who studied it. I prefer spring water that I know is pure, because to me, it is “living” water, as found in nature. Of course, not everyone has access to pure spring water because water flowing from a certified spring is somewhat rare. The Future of MY Farm Missouri is a vast wonderland of water. It is believed that Missouri has more underground springs than any other state. The land I chose to build my mixed-agriculture ranch and farm on is no exception. On two different properties, I have springs that produce between 2 and 6 million gallons of water a day! That water is more crucial to the future success of our efforts than any other single factor. That water will propagate fertile land. It will ensure that my animals can thrive off the land and stay hydrated, and my plants grow and flourish. Too often I think that we take water for granted—but it is clearly a vital resource for the entire ecosystem. The mountainous region of north Georgia is known for its abundant rainfall and pure spring water. And it’s also a source of fun! The creeks and ponds that are created by the springs are sources of leisure activities for me and my family. During the warmer What’s in the Water? Earlier I talked about how readily available water is. Turn on your faucet and a plentiful supply pours forth. Unless you have your own well or spring, that water most likely comes from a water treatment plant. Now, I am not about to say that water treatment plants are bad. They rid water of tons of chemicals and living organisms that you don’t want in your water. However, to do that, they add chemicals, such as chlorine. Personally, I prefer to drink water that hasn’t been treated with chemicals. Bottled water presents a different story. There are two basic types of bottled water— purified and spring water. Spring water that is bottled must come from a natural underground source deep within the earth that flows to the surface. Purified water usually comes from a municipal source— straight from the tap—but it then must Many turn to purified water. While purified water is safe for you, I’m not convinced it’s the best for you. Several of the springs on my properties are among the purest in the world. The purest spring water will contain the the lowest TDS or "total dissolved solids." TDS is a general description of how many hard minerals are present in the water. While many waters claim purity, the only true measure of purity is the percent of H2O in the water. The more “other” elements your water contains besides H2O, the less pure and effective the water is. Since water’s main function in the body is transporting nutrients into the cells and carrying waste out, the more pure, the better. There is quite a bit of debate about whether your want more or less minerals in you water. I prefer low mineral water for a few reasons, not the least of which 61 is better taste. In fact, the spring water on our north Georgia property has won international awards for taste excellence. Since I am very intentional about my diet, including my vitamin and mineral intake from whole foods and whole food nutritional supplements, I don’t want to consume a large amount of minerals from water as they are “inorganic” minerals in essentially the same form as rock. Another thing I look for in water is alkalinity levels. One of the most common questions I’m asked in seminars is, "What do you think about alkaline water?" My answer is that while consuming natural spring water that is moderately high in minerals and slightly alkaline is certainly healthy, I believe the more pure the water, the better. Alkaline water is simply water with more minerals—or water that has less purity. We don’t need minerals in water to be healthy. In fact, I prefer the vitamins and minerals from foods and beverages for the body as opposed to minerals from rock that are found in water. The spring water I drink and recommend is a true source of “living” water. It reminds me of adventures with my Grandpa Jerry hunting for spring water in the mountains of upstate New York. But it is also more than that. Every time I take a drink of pure water that runs through my property, I am reminded that entire civilizations once flourished simply because they valued, protected and even fought wars over this most precious of resources. As I write this article, my oldest son Joshua and I are visiting our north Georgia property nestled in the Blue Ridge Mountains. Just yesterday as Joshua bent down with cupped hands and sipped water from one of our springs and remarked, “Dad, this is the most delicious water I’ve ever tasted,” it reminded me of the legacy of natural health and sustainability handed down to me by my grandpa and my dad. I now have the privilege, or rather the responsibility, to pass this on to my future generations. . .and so do you. No; we’re not talking about droopy or saggy skin. We’re talking about our culture going cuckoo for coconuts! You might call it a cultural craze, since the coconut has been exploding on the scene lately. In fact, the two largest soda brands on the planet have both recently acquired coconut water brands.
