This is a good time to begin something new. As announced previously, we are starting a quarterly newsletter for the Marathi Saad community in South Jersey. The intent is to have a vehicle to summarize past events and announce future ones. More importantly, we would like to provide a medium to share news and celebrate accomplishments of people from our community – awards, promotions, birth announcements, high school and college graduations, cultural events, contributions to social work – or anything else you think is worth sharing! We hope to capture the significant milestones achieved by people in our community that otherwise might go unrecognized. We cordially invite contributions from you and your family members in the form of articles, stories, poems, art, recipes, travel reports, how-to articles etc. If you have earned any Awards, Publications or Recognition for notable work in your area of expertise and would like to share that with the community, we would be happy to include that in the Newsletter. Please encourage your children to contribute for our बाल मैफल section as well. It had a touch of tradition, as well as a modern outlook. The event started with host Bagyashree Cheulkar welcoming all the ladies present with the popular quote "ततळगळ ु घ्या गोड गोड बोला". The program was made lively by inviting attendees to describe a woman whom they consider a role model. To add a fun element to this interaction, a lavani (Traditional Marathi song) was played wherein ladies gave a thumka & then went on to explain their perfect role model. We had also organized a "Cooking Competition" to promote culinary skills. The theme was "Coconut". We received a great response this year with 10 participants coming forward to be a part of it. The decision was in capable hands of Mr. Santosh Kotgire and Mrs. Kiran Nomulwar. Our judges were amused by the variety of dishes & equally unique presentation by each contestant. Eventually they managed to choose two winners: Mrs.Gauri Kadam - 1st Prize for "नारळाच्या वड्या" Mrs. Swati Aloni - 2nd Prize for "श्ीिंिा नैवेद्य आणण कुल्फी" Next in line was a Talk Show "ततळगळ ु घ्या गॉमसप करा". This exciting talk show was hosted by Sumedha Nadkarni & Rohini Garud. Those who were a part of this, got to experience the thrill & fun of a talk show. This show was unique in a way that it brought out the fun element hidden somewhere in each one of us. We got to know that our ladies outshine in every given condition. While this was going on, Haldi Kunku, Vaan & Tilgul were distributed among all the attendees. Last, but not the least was "Fashion Walk". This has been a trademark of our Haldi Kunku event. A ramp walk wherein all the pretty ladies & cute daughters glam up their style quotient. There was a Prize Distribution ceremony to recognize all the winners. The event concluded with a snack break, all the guests were served delicious & mouthwatering food. We would like to thank all the members who attended the event & made it successful! This year’s event is being held on Saturday March 21st from 4 pm to 8 pm. Venue, program, and registration details of the event will be announced soon. This year Marathi Saad is celebrating Gudhi Padwa with two exciting competitions for kids of different age groups. We are inviting entries for these competitions, details are as follows: Drawing Competition Children will get an opportunity to bring their imagination on canvas. Let the drawings reflect their ideas & creativity. Kids in age group 5 to8 years can enter the competition. We will provide drawing sheets Theme for competition is SPRING. Gudhi Padwa signifies start of Spring, so it ’s a perfect occasion to reflect beauty of nature through drawing. Use of only Pencils & Crayons is allowed. Please note no pens, markers, stencils, ready to copy pictures or drawing devices will be allowed. Dance Competition A unique dance competition has been organized, wherein kids will participate with a parent/guardian. The dance contest will be in two age groups. Kids in age groups 7 to 10 years & 11 to 13 years can participate. He/She should be accompanied by a parent/guardian. Solo entries will not be accepted Dance can be set up on either Marathi or Hindi Song. In both competitions, two best drawings & performers will be selected as winners! As a special recognition, names of winners will be published in the upcoming Marathi Saad newsletter. Invitations for Program Anchors We are also inviting program anchors for compering in Marathi. Marathi is an Indo-Aryan language. It is the official language of the state of Maharashtra in India and is one of the 23 official languages of India. There were 73 million speakers in 2001; Marathi has the fourth largest number of native speakers in India. Marathi has some of the oldest literature of all modern IndoAryan languages, dating from about 1000 AD. The major dialects of Marathi are called Standard Marathi and Warhadi Marathi. There are a few other sub-dialects, such as Ahirani, Dangi, Vadvali, Samavedi, Khandeshi, and Malwani. A magnificent strike into the crowd! India lift the World Cup after 28 years!”. Sound familiar? Y es, it is from that very moment when the Indian team hoisted the most prestigious award in cricket; the World Cup trophy. And now after four years, they have come to Australia with hopes to defend their title. The question is, is this young team lead by MS Dhoni ready for an event on such a high scale or can they win back to back world cups? At the moment, the chances of India winning the World Cup yet again look ambivalent or none after a disappointing tri series between England and Australia. India dropped every game in the series but one against Australia as it got washed out. Still with over one week to go before their first 2015 World Cup match against an arch rival Pakistan, India has a tough grind in store. One thing we want to hope for is an injured Rohit Sharma to be healthy and back in the array. Before the injury, Sharma played a brilliant knock of 138 runs f rom 139 balls against Australia in their first match of the tri series. Another slant India really needs to work on is building an opening partnership as their largest in the series was 83 runs. They have lost numerous wickets in the early stages of the match resulting in a fateful bating collapse. Of these early wickets, Shikhar Dhawan has been a constant victim. After a great start to his international career, Shikhar Dhawan has failed to come through for India in the past few series. Out of the four times he played in the previous tri series, he had been dismissed three times for single digits which includes being chucked out for a duck within the first over. On February 15th, India are due to play Pakistan, 10.30 pm eastern time. Send us your child’s creations (stories/art/crafts/poems etc) to be included in our Kids Corner बाल मैफल Section निवडक साद २०१५ 8 MAKAR SANKRANT COOKING COMPETITION MEET THE WINNERS & THE WINNING RECIPES by Sumedha Nadkarni Mrs. GAURI KADAM The Chef of 2015 Marathi Saad cooking competition is Mrs. Gauri Kadam. Our contestant Gauri is a soft yet much spoken, has great style and always flaunts a great array of classy attires. Gauri is a working woman of today ’s world yet her heart and happiness is her home where she is a loving mom of 2 boys and a dutiable wife to a caring husband. Gauri and her family have been Saad members since it started and have been staunch supporters ever since. Here is her award winning recipe which placed her first COCONUT BARFI Ingredients (measuring cup used, 1 cup = 250 ml) 1 cup fresh/frozen grated coconut, 1/2 cup whole milk, 3/4 cup sweetened condensed milk,3 to 4 cardamoms, crushed to powder, 2-3 tbsp sugar (optional), 2 to 3 tsp ghee, 1 pinch of saffron, 8 to 10 pistachios/ cashews Instructions Warm the milk first on the stove top. In a bowl, take the fresh grated coconut and mix warm milk with it. Stir well. Heat ghee in a pan. Add the milk soaked coconut and sauté on a low flame for 2 to 3 minutes. Now add the condensed milk and stir. Cook on a low flame stirring often. Add sugar if you want. Then add cardamom powder. Continue to cook and stir. The coconut barfi mixture will thicken slowly. Keep on stirring so that the mixture does not stick to the bottom of the pan. Ghee should start releasing from the sides of the mixture, takes about 30 to 40 mins on a low flame. Then pour the coconut barfi mixture in a greased tray. Let it cool completely. Sprinkle saffron powder or press some cashews/pistachios on the top. Slice the coconut barfi and then serve. Mrs. SWATI ALONI 2015’s cooking competition 2 nd place winner was Mrs. Swati Aloni. We think in Swati’s case the entire Aloni family deserves to share the prize since her loving hubby and kids were constantly supporting her for this participation. I think most of us must have seen Valay (Swati’s husband hauling the entire recipe so that his beautiful wife can easily flaunt her saree. Jokes apart but we still have a lingering taste of the rich coconut kulfi and karanjis that Swati made. Apart from cooking Swati is an excellent classical singer and have performed निवडक साद २०१५ 9 numerous times at Saad events. By participating and winning, she not only surprised us all but also proved that she is melodious in culinary skills too. KARANJI Ingredients Dough: -½ cup all-purpose flour, 1/2 cup sooji, 2 tsp of oil, water to mix Filling: 1 cup of wet coconut, 3 teaspoon of condensed milk & little bit of plain milk, 1Table spoon of khoya, 1 tsp green cardamom – powdered, 1teaspoon of pista & almonds - finely chopped, Oil for deep-frying Method Mix flour, sooji & little oil and knead into a stiff dough with water. Leave to rest for at least half an hour. For the filling: Saute the wet coconut. Add little condensed milk after 2minutes. Add plain milk over medium heat until you get the desired consistency. Remove heat. When it cools, mix in the sugar, cardamom, and almonds. Shape the filling into ovals. Make balls of the dough and roll. Take a round, wet the edges with water and place a piece of filling over one half. Fold the other half over and press the edges together to seal. Either cut off the edge with a fancy cutter or make a design by pinching and twisting all along the sealed edges.Make all the karanjis in this way. Heat ghee in a kadhai. To check if the ghee is hot enough put a piece of dough in it. If it comes up at once, add as many karanjya as fit in comfortably.Turn them over and lower the heat to medium. Fry till golden brown on all sides. Lift out and leave to drain on absorbent paper. *(Optional) Add unflavored food color of your choice to dough for colorful karanji. KESAR COCONUT PISTA KULFI Ingredients 3 litres Milk,1/2 cup sugar, a few strands of saffron, 1/2 teaspoon freshly pounded cardamom powder 1/2 cup finely chopped pistachios, 2 teaspoon of coconut cream milk Method To begin making the Kesar Pista Kulfi, we will first have to condense the milk. For this heat milk in a heavy bottomed saucepan and bring it to boil. Once the milk comes to a boil, turn the heat to low and simmer the milk with almost continuous stirring and reduce the milk to more than half its quantity. It is important to note that during the initial stages of milk condensation frequent stirring is important, but as it begins to start condensing and reaches less than half the quantity it is absolutely important that you stir continuously. This is because condensed milk tends to get stuck to the bottom and sides of the pan and burn; leading to a very unpleasant taste. Once it is reduced to about more than half of its quantity stir in the sugar until it dissolves completely. Finally stir in the cardamom powder, saffron and chopped pistachios. Turn off the heat and allow the kulfi mixture to cool completely. Pour the condensed milk in the molds until 3/4th full, seal them airtight and freeze them in the refrigerator. The Kesar Pista Kulfi takes a good five ten hours or more to freeze. Once frozen you can run the kulfi molds under water to enable easy release on to the plate and serve. निवडक साद २०१५ 10 Mrs VARSHA BHALERAO Can’t speak enough of our next beautiful participant. 2014’s Mrs. Saad carries all her beauty in her smile and cheerful talk. Varsha, an electronics engineer from Aurangabad, India was working for a reputed Videocon International in India along with also lecturing in a college. Currently happily married, settled in Voorhees South Jersey with her husband and 2 beautiful daughters she loves cooking and enjoys drawing and in Varsha’s own words also Chitchatting with her friends. COCONUT PINEAPPLE LADOO Ingredients: --- Fresh grated coconut - 2 cup, Pineapple juice (tin of pineapple chunks or fresh pineapple) -1 cup, Sugar - 1 cup, Ghee- 2 table spoon, Dry milk powder - 1/4th cup, Green cardamom powder Method of preparation: --Heat ghee in a nonstick pan, add 2 cups of grated coconut, sauté it for 5 min. Add 1 cup of pineapple juice , mix it well . Then add 1 cup of sugar, stir it till sugar melt. Add green cardamom powder and mix it. Then cook till all the moisture is absorbed. At last put dry milk powder, cook it till the mixture forms a lump. Then cool it for 10 min and then make the round shaped ladoo. Mrs. AMRUTA THITE Amruta, a multidimensional personality with prior experience in Software Engineering and German Translation and right now working as IT Instructor. Always making new friends and passionate about dancing and trying out new recipes. During Mrs. Saad event Mr Thite expressed one thought about Amruta is that she has an impressive trait of keeping all friends and relatives connected. Every time we see her we have always experienced this iteration. Amruta has that cheerful joyful personality which makes her everybody’s best friend. Last year along with participating in Mrs. Saad she also captured the 2 nd spot in cooking competition. This year’s recipe was also equally close to the award winning recipe: COCONUT KACHORI Preparation time: 20 minutes Cooking time: 30 minutes Recipe will make 8-9 kachoris निवडक साद २०१५ 11 Ingredients: Cover: 3 medium size potatoes (nicely boiled), 2 table spoons fasting mixture for binding (it is called 'upas bhajani' and can be easily available at Indian Stores with brand name as 'K-Pra' or some other 2-3 brands. Instead of this mixture, singada flour can also be used.) Filling: 1 cup frozen shredded coconut, 1/4 tea spoon cumin seeds powder, 1/2 tea spoon poppy seeds, 2 table spoon cilantro (finely chopped), 3-4 medium chilies (finely chopped), 1/4 tea spoon amchur powder, 1 table spoon cashews (finely chopped), 1 table spoon raisins,2 table spoons sugar, 1/2 tea spoon ghee, Salt to taste, Oil to deep fry the kachoris. Method: For the stuffing: Since we are using the frozen coconut, microwave it for about a minute. Add salt, sugar, amchur powder, cashews and raisins to the coconut, mix well and keep aside. Heat the ghee in a pan. After the ghee is heated, add the poppy seeds and cumin seeds powder and let it sizzle. Then add the chilies and cilantro and mix well. Let this mixture cool for about 5 minutes. Add this to the coconut mixture prepared before and mix everything well. Divide this mixture into 9 equal parts and make 9 small balls out of it. For the covering: Grate or smash the boiled potato very finely, taking utmost care that no lumps are le ft. Add the fasting mixture or bhajani to the smashed potatoes and knead this mixture into a very fine and stiff dough. Divide this dough into 9 equal parts. For making the kachoris: Take one part of the covering dough and with your fingers flatten t he edges and make into 3-inch circle. Leaving the center a little thicker than the edges, mold the dough into a cup and place the small ball of the stuffing in the center. Pull the edges of the dough to wrap the stuffing, to make a ball of it. Likewise make all the remaining 8 balls. Heat the oil in a pan over medium heat and deep fry the kachoris on medium-low heat. Fry until the kachoris are nice golden-brown from all the sides. These Kachoris can be served as it is or with tamarind date chutney/cilantro-chili green chutney as per your taste. PRIYA KORDE Our next participant and last year’s winner is Priya Korde. Born and brought up in Pune, India her passion is cooking and favorite past time is travelling to places. To take her passion to the next level she also writes blogs on recipes and hopes to treasure all her recipe inventory wishing to pass it on to coming generation one day. Priya’s recipe this year surely took us to an island vacation along with yummy Khobra vadi to relish. KHOBRA VADI Ingredients: For Stuffing: Dry coconut flakes 1cup, Roasted Peanut ¼ cup, Sesame seeds 1 tbs, Poppy seeds ½ tbs, Diced onion 1 Green chili 2, Garlic paste 1 tbs, Coriander ¼ cup, Salt to taste For Cover: Besan 1 cup, Ova/Ajwain 1 tbs, Turmeric powder ¼ tbs, Red chili powder ½ tbs, Dalchini Powder ½ tbs Hot Oil/mohan 3 tbs, Salt to taste निवडक साद २०१५ 12 Procedure: Stuffing In a pan roast coconut till brown. Roast it on a low flame. Roast sesame seeds, poppy seeds, peanuts separately. Now heat oil in a pan and add hing and turmeric powder. Fry garlic till brown. Add green chili and onion and continue roasting. Mix coconut, sesame seeds, poppy seeds, peanuts, garlic onion mixture, and salt and coarsely grind it . Then add coriander and mix it well. For cover: Add ajwain, red chili powder, dalchini powder and salt. Mix it well and add hot oil (mohan) in it. Add little water and make dough. For vadi: Take a small ball of dough and roll it to make a puri. Apply tamarind paste on it and place 1 tbs stuffing mixture on it. First fold it from right and left side. Then from top and bottom side. Press it neatly. Make all vadis from this material. Heat oil in a kadhai and fry it on low frame. Serve with tomato ketchup. Mrs SHILPA CHIDRAWAR Shilpa, a calm and composed lady as I know her comes from Nanded, Maharashtra. All her recipes are super delicious and Shilpa has a special quality to make it sound super simple. Shilpa’s heart is her home and Shilpa’s love are her two kids Vardha and Vedh. One quality which puts Shilpa apart is her honest hard working attitude towards life wherein she always strives for a tomorrow better than today. Shilpa loves making sweets, that’s one reason why our this year’s topic coconut instantly had her enroll for participation NARALACHE LADU (Coconut Ladu) Contents: 14oz condensed milk, 2 bowels coconut powder, Almonds, 1/4cup rolling coconut powder. Procedure: Mix the condense milk and coconut powder. Soak it 10 min. Make a Ladu put the almond on each Ladu.. Roll it in dry coconut powder. Refrigerate it for 1hour.
