Chamber Orchestra’s Concerts on
the Square ®, held each summer at
the State Capitol in Madison. This
special labeling of Prairie Fumé
will be available at the concerts, as
well as at stores around the square.
The concerts are on Wednesday
nights from June 25th until July

Congratulations to our Events
Manager Cindy Ballweg on
celebrating her 15th Anniversary at the winery on May 1st.
One of the first things Cindy remembers from 15 years ago is
cleaning up the top floor of the old winery (today called Sugarloaf Room) to make it ready for a Caseclub dinner. At the time,
that room was used for storage and hadn’t been empty since
the early 1900s. Philippe’s favorite memory of Cindy was her
determinedness in having the guys hang the cheesecloth up

celebrated her 20th anniversary at the winery on May 23rd.
Dixie is our Operations Manager but has done everything
from paying bills to answering the phone in the early years.
Dixie remembers how different it was to work at the winery
when the old barn was the winery lab and fermentation, the
public (& staff) bathrooms were at the end of the chicken
house (meaning a walk outside in the snow), and Bob Wollersheim told Dixie if she wanted a cup of coffee to go in

the family house and help herself. Thank you to Dixie for
expertly coordinating all the production supplies from bottles, labels, grapes, juice
and the numerous supplies in-between. Congratulations on 20 years, Dixie! v

grown the grapes or have fermented
the wine. We can tell you the story
of each field and of each soil. We
know the growers and their families.
We know which forests the barrels
are from. We go to dinner with the
tank-maker, and so on. That is what
we mean by "Authentically Made

our Coquard Brandy. Bruce, Greg, Jesse, Anthony

anticipation of our big next expansion, we insulated four more

move the tanks and reset everything. We took that as good practice for what is to come this fall.

We are against oak chips which are flavoring, not
aging, the wine. Truly aging wine in a barrel allows
for complex interactions between the oak, minute
amounts of oxygen, and the wine.
Brandy and Beyond
We had a great Coquard Brandy #2 release weekend! Thank you to all who joined us in enjoying the
weekend, the wine, and the brandy!
We are distilling every day. Coquard Brandy #4 (allWisconsin grapes and oak barrels) has been aging for
almost two months already with 22 months to go. We are almost
done with the American brandy, and then will start apple. The
"Beyond"....We often get the question: Will we do whiskey? The
answer is, YES! Yesterday we
had a very exciting moment. A
friend and local farmer planted
some very unusual grains. We
will work with only Wisconsin
grains. We already have agreements with local farmers to supply what we will need—rye whiskey, Bourbon...all aged in
Coquard Brandy, batch #2
Wisconsin oak. It is a very
exciting time. We are finalizing the distillery plans and
hope to break ground this summer. The new still is
being polished and is almost done. A new venture. We
will go into details a little later.

the official wine of Wisconsin
Chamber Orchestra’s Concerts on
the Square ®, held each summer at
the State Capitol in Madison. This
special labeling of Prairie Fumé
will be available at the concerts, as
well as at stores around the square.
The concerts are on Wednesday
nights from June 25th until July
30th. Enjoy some “music for your
tongue” along with this special
musical treat! v
Congratulations to our Events
Manager Cindy Ballweg on
celebrating her 15th Anniversary at the winery on May 1st.
One of the first things Cindy remembers from 15 years ago is
cleaning up the top floor of the old winery (today called Sugarloaf Room) to make it ready for a Caseclub dinner. At the time,
that room was used for storage and hadn’t been empty since
the early 1900s. Philippe’s favorite memory of Cindy was her
determinedness in having the guys hang the cheesecloth up

on the ceiling just right. Thanks to Cindy’s leadership, our
winery and outside events run very smoothly. Congratulations on 15 years, Cindy! v

Dixie is our Operations Manager but has done everything
from paying bills to answering the phone in the early years.
Dixie remembers how different it was to work at the winery
when the old barn was the winery lab and fermentation, the
public (& staff) bathrooms were at the end of the chicken
house (meaning a walk outside in the snow), and Bob Wollersheim told Dixie if she wanted a cup of coffee to go in

the family house and help herself. Thank you to Dixie for
expertly coordinating all the production supplies from bottles, labels, grapes, juice
and the numerous supplies in-between. Congratulations on 20 years, Dixie! v
