Start the day before, if possible, by
mixing all the ingredients except the
steaks in a small mixing bowl until
well combined. Place the steaks in a
heavy Ziploc bag, and pour the herb
mixture over and seal. With hands,
massage the herb mixture into the
steaks until well distributed, and place
in the refrigerator up to 24 hours until
ready to grill.
The gorgonzola cream sauce starts with the
butter, shallots and garlic in a small sauce pan.
Cook over low heat until the aroma softens
and the shallots have become translucent,
about five to six minutes. Add the white wine,
and reduce until almost dry again; follow with
the cream, adjusting the heat to medium to
bring up to a boil. Once a boil is achieved,
reduce heat to a low simmer, and continue to
