Steel Cut Oats vs. Rolled Oats First let me say this…I truly believe that there is not one food out there that will be the perfect food for everyone – after all we are all individuals! BUT I do believe that there are some foods that truly represent what is a breakfast food and as the days get colder and you just want to have a little something to get you through the cold winter months I truly believe that oatmeal does that for a lot of folks I know. What I do want to do is talk about the difference between Steel Cut Oats and Rolled Oats. Both are high in complex carbohydrates, both are low in fat, but the difference truly lies in their processing. Rolled Oats are steamed, rolled then steamed again and then toasted whereas Steel Cut Oats are simply coarsely chopped. The degree of processing affects the glycemic index of a food or how quickly your blood sugar will rise after eating it. There are times when one needs to have a quick effect and easy access to the sugar that makes up our carbohydrates – think an Olympic distance triathlon. 20mins into your 10k run and you are running out of fuel, yup you are going to grab for that gel, totally processed quick sugar. You know it will not last for more than 20-30mins and depending on how long your 10k in your triathlon will take you, you may need to take another one in order to have sufficient energy to finish strong. When you look at the role of your breakfast you want a good foundation for your day and that is why I prefer to use Steel Cut Oats for my winter breakfast cereal option, less processed with a lower glycemic it is the better choice. Yup they take a bit longer to cook but if you make a big batch –enough for 2 or 3 extra servings then you simply just need to reheat it. I like to add a good fat to this – it can be addition of of coconut oil but I prefer the nutty taste of hemp oil –a great source of Omega 3 fats. I also heat up berries, top it off with pumpkin seeds, sun flower seeds and slivered almonds. Add a touch of maple syrup if you have a bit of a sweet tooth and voila! Breakfast is served! Enjoy! A Warm and cozy breakfast of Steel Cut Oats, Nuts, Seeds and Berries Ingrediants: 1.5cups of steel cut oats 3 cups of water pinch of sea salt Directions: Place Steel Cut Oats salt and Water in a medium sized pot and bring to boil. Reduce heat to low, stir well and allow to simmer until all liquid is absorbed – approximately 30mins. This amount will give you enough for at least 4 substantial servings. Keep in fridge for up to 4 days. To each bowl top with: 1 tbsp slivered almonds 1 tbsp pumpkin seeds 1 tbsp sesame seeds ¼ cup warmed mixed berries 1 tsp hemp oil And then……simply enjoy!
