MUESLI BARS
Makes 14 Bars
Oven Temp: 180 C, 350 F, Gas 4
Ingredients
2 Cups/185g/6oz rolled oats
6 Weet-Bix, lightly crushed
1/2cup/90g/3oz Raisins
60g/20z chopped dried apricots
½ cup /170g / 5 ½ oz homey
1 cup / 250ml orange juice
2 egg whites – lightly beaten
Method
1. Place oats, Weet-Bix, raisins and apricots in a bowl and mix to combine.
2. Place honey and orange juice in a small saucepan and bring to the boil over a
medium heat. Reduce heat and simmer for 8-10 minutes or until mixture is thick
and syrupy.
3. Stir honey mixture into oats mixture, add lightly beat egg whites and stir to
combine all ingredients.
4. Press mixture into a non-stick 18 x 28cm tin lined with non-stick baking paper
and bake for 20-25 mins or until golden. Cool in the tin, then cut into bars and
sore in an airtight container.
