The New York City Department of Environmental
Protection (DEP) thanks the farmers and forest landowners
who have worked hard with the Watershed Agricultural
Council to protect and enhance water quality in the Catskill
and Delaware watersheds. This effort has justifiably become
a national model that advances the interests of watershed
landowners and water consumers alike, while maintaining
the highest standards of environmental policy and public
health. Through projects like the Pure Catskills Guide, we
are hopeful that the partnership to protect water quality
can extend to improving the economic viability of the

Pure Catskills is a buy local campaign
that promotes farm and food
businesses in the Catskills Region.
Our goal is to increase support of
the local food system. This guide
is created in collaboration with
farmers and purveyors of fresh food
across Delaware, Greene, Otsego,
Schoharie, Sullivan and Ulster
Counties. When farms thrive, our

Developed from the 1940s era label
of the Walton-Hamden Cauliflower
Grower’s Cooperative, the Pure
Catskills logo is a celebration of our
regional heritage. From the 1920s
to the 1940s, local cauliflower was
shipped in huge quantities via rail
and highway to ready metropolitan
markets, making the Catskills
synonymous with fine quality produce.

Celebrating its tenth publication, the Guide
continues to serve as a reliable source for
connecting with the region’s local farm and food
producers. Pure Catskills has grown significantly
as the interest among our neighbors to buy local
foods has continued to rise.
Our community is at the heart of a shift to maintain the working
landscape that creates better tasting and healthier foods, supports the
local economy, retains an essential aspect of the local culture, and
protects the environment. When farms thrive, our communities benefit
in many ways.
Throughout the Guide, you will find reference icons for the member
products you are seeking. Sidebars highlight food trends and groups of
producers including community supported agriculture, pastured livestock
and pick-your own operations. If you’re a visitor to the area, flip to the back
of the Guide for a calendar for events and a list of tourism activities.
This year, the Guide features eight small farm and food businesses.
Each is a vendor in a new pilot project, the Pure Catskills Marketplace, set
to launch this summer. Pure Catskills members can use this new tool, an
online portal for the sale of products, to connect to consumers beyond
the farmstand, retail store and the region’s borders. From beef and pork
to fiber, fudge and gelato, The Marketplace allows Pure Catskills fans to
indulge in Catskills products, even from afar.

Our farm is your farm; whether you want
organic vegetables, pasture raised meats
and eggs, a day camp for your children,
or to get away from a hectic life. Together three families work on the
Farmstead to raise two acres of certified
organic vegetables, a herd of beef cattle,
a flock of Clun Forrest Sheep, heritage
breed pigs, laying hens, broiler
chickens and a dairy cow or two. We
began in 2005 with the intention of raising
food for our children - now we grow
enough for your children too!
We began hosting overnight guests five

We are artisan bread bakers, selling
primarily to small stores, restaurants and
at farmers’ markets. We use all organic
flours, grains and ingredients when it is
feasible to do so. We bake four varieties
each week: a breakfast bread (with
nuts or seeds, raisins or cranberries), a
basic bread (wheat, rye, pumpernickel
or French), a whole grain variety, and
a specialty bread, on a rotating basis.
