Greetings to all Ever’man Shoppers and Friends,
Happy New Year to all of our members and patrons.
I hope you and your family have enjoyed a wonderful
holiday season. My family and I were able to spend a
good bit of time relaxing and enjoying time together. Of
course, as most of us do, we ate way too much turkey,
dressing, ham, veggies and all the traditional fixings.
We might even have gained a pound or two. Well,
now it’s time to get healthy. In this issue of The Healthy
Alternative we have added lots of ideas for a healthy
new you, so take some time and read this whole issue.
As you embark on this New Year, please remember
that Ever’man will be here to supply you and your
family with the most wholesome and nutritious foods.
We know that January is a month full of New Year’s
resolutions and we are here to help. Please do not
hesitate to ask our knowledgeable staff to answer your
questions, both in the store and on the phone. They are
happy to provide you with friendly service.
Here at the co-op, we have had a really good year.
We plan for 2016 to be just as prosperous. The financial
condition of the co-op is very healthy and the sales
continue to increase with new customers and members.
Last year we added more products and services such as
party platters, an electric car charging station and even
free steaming of shrimp in the Seafood Department.
We will continue to evaluate new products and services
to fulfill your needs and requests.
Over the past few months, the FDA approved
Genetically Modified (GMO) salmon. The natural food
industry has been fighting this for almost 20 years. The
FDA ignored hundreds of thousands of calls and letters
asking them not to approve these “frankenfish.” Here
at Ever’man, we want to assure you that we will never
purchase or sell these fish. We follow the Monterey
Bay Seafood Watch guidelines for sustainable seafood.
All of the salmon sold in the seafood case is from a
fisherman in Alaska. They catch the “wild” fish and ship
it directly to us. We are pleased to offer this superior
seafood to you. If you enjoy salmon, you really should
try ours.
I would like to remind everyone that your Board of
Director elections are coming soon. Please see more
information in this issue of The Healthy Alternative. We
have three seats open for this election and six candidates.
Please read each candidate’s biography in this The
Healthy Alternative for a description of their experience
and qualifications. Voting will begin February 1st and
last several weeks. All of the instructions are inside this
issue.
In closing, I would like to thank you for your support
in 2015. We hope you will continue to support your local
food cooperative. I look forward to seeing you in the
store very soon.

Ever’man is changing and growing all the time.
The remodeled store is a monumental change
but it does reflect the culture and the mission
of the Co-op. The store is vibrant, filled with
happy customers and employees. Ever’man
management along with the Board of Directors
have a vision to take the store to the next level.
We hope that you like and are inspired by the
beautiful garden that is outside, at the back of
the store. Pensacola has a mild winter and we
can grow plants pretty much year round as you
will see as the months go by. I love the garden
and it has inspired my family to plant a garden
at our home. We have many exciting classes
and we are about to launch even more cooking
classes, which we hope will inspire you to cook
more healthy dishes. We are reaching out to
the community in a number of different ways
by participating in events, speaking to various
groups and getting the word out about the
value of a healthy sustainable lifestyle. Don’t
forget that we are a not-for-profit, member run
organization so your input is valuable, needed
and encouraged. If you have any ideas as to how
we can better educate the community, have a
better store, meet your needs and those of other
members, please don’t hesitate to tell us. We
have a suggestion box located at the Customer
Service Desk and management, staff and your
Board of Directors are here to serve you and to
listen to your feedback.
2015 has been an amazing year as the sales
continue to increase and the store just gets more
and more beautiful. I hope you have noticed all
the beautiful signs that grace our store. We are
so glad that we have a beautiful Community
Educational Building and a green space and the
outdoor seating that make the store experience
pleasant and comfortable. One of our biggest
challenges, not a bad problem to have, is that
parking around lunch-time can be a challenge.
The store’s success is reflected in that situation
and we continue to come up with ways to
manage and address this challenge.
2016 will be another great year at Ever’man as
we explore the possibility of opening a second
location and as we focus in on improving our
community. Ever’man is thriving and as we
change and grow, we will continue to strive,
with your help, to make the Pensacola area an
even better place to live and work.
Meet the Candidates
Johnny Ardis, incumbent
I’m running for re-election to the Board of Directors because I passionately believe in the mission of Ever’man
and I want to continue being a part of its continuing growth and positive impact. Pensacola is fortunate to
have a place like Ever’man. Since becoming a member when it was located on 12th Avenue, I’ve seen it grow
and have a positive impact on our community. With my years of experience in leadership roles in various
local non-profit organizations, I feel that I can continue to play an important role in the future of Ever’man.
If re-elected, I will continue to be accessible to the members and would consider it a privilege to continue to
represent the interests of the members and of the co-op.
Dave DeBlander, incumbent
I have served as the President of the Ever’man Board of Directors for the last four years. I believe I have the
ability to see both sides of an issue and am skilled in guiding a group toward a clear position. Our beautiful new
store is the result of a lot of hard work by the staff and the board of directors and I would like to think that my
leadership skills played a role in the successful outcome. One of my passions is getting Ever’man’s mission
of a healthy, sustainable lifestyle to our children, our schools and our community. If elected again, I will
work diligently to see that the mission is carried out. I have owned Pro Clean Restoration and Cleaning for
25 years and before that my wife, Kate, and I owned a natural foods bakery and restaurant in Madison, WI. for
16 years, so I have a lot of business experience in this industry, as well as the Pensacola business community.
My wife, Kate, and I have eaten a modified macrobiotic, natural foods diet for 40 years and we can testify to the
effectiveness of eating organic food. Ever’man has come a long way and I want to continue to serve the Pensacola
community in embracing a healthy lifestyle. I would appreciate your vote and I will do my best to speak for all the
members of our Co-op.

Verify that you’ve read the candidate bios and decided on your selections for this year’s election. Remember that one member number = one vote so
households will need to come to an agreement.
For paper ballot, mark an X next to the candidate(s) of your choice. You may choose up to three candidates for your ballot to be valid; ballots containing
more than three votes will not be counted.
On this paper ballot, cut on the dotted line once your selections have been made. Place your ballot in an envelope and seal. (For in-store paper ballot,
place the ballot into the envelope provided, the smaller envelop, and seal). Ensure your last name and member number are legibly written on the
outside of the envelope and sign on the signature line. Envelopes not containing this information will not be counted. Send this paper ballot back to
Ever’man Cooperative Grocery and Cafe by inserting into another envelope, addressing, applying a stamp and mailing to 315 W Garden Pensacola

net/ENF and entering their Ever’man Natural Food (ENF) member number and their last name. All e-votes and paper ballots must be received by
11:59pm CST on Thursday, February 17th, 2016.
All paper ballots and e-votes will be counted on February 18th, 2016. After the member number, name and signature are verified on the paper ballot
envelope, the ballot will be removed from the envelope and the votes counted. All paper ballot results will be added to the electronic voting count for
a comprehensive count to determine the winners. This process is videotaped to protect against vote tampering. The paper ballots are tabulated using
multiple counts by more than one Election Committee Member to ensure accuracy.

Meet the Candidates
Dawn Vorthman, incumbent
As a seasoned Director and long-time Treasurer serving on the Ever’man Board of Directors for the last nine
years, my many years of experience as an accountant give me a unique skill set. If re-elected, I look forward to
focusing on planning for a second store location, as well as expanding our offerings to members and the public
in terms of our educational outreach programs. At the same time, the Board is looking into ways to be able to
give back more to our community, especially in terms of our educational programs. As a long time teacher
for Pensacola State College, this is a subject near and dear to my heart, as I believe that knowledge is power.
The more we can do to educate our community on the principles of natural health and nutrition, the more of
an impact we can have in the world in which we live and work. And this is what separates Ever’man from the
big box stores, we truly operate according to cooperative principles. I consider it an honor and a privilege to be
a part of such a fine organization, and look forward to continue serving on the Board of Directors for one more
term. I can’t wait to see what we can accomplish in three more years!
Michol Hite
If elected to the Ever’man board, my overall role will be to embrace and further the mission of the co-op. Beyond
that, I would work to take Ever’man to a higher level of visibility and acceptance. I feel that I can help Ever’man
channel efforts in a direction that will increase partnership relationships (such as the recent installation of
the cooking oil recycling station) with other organizations, and so expose many potential members to the
benefits of membership. My experience as a social worker at St. Josephs clinic has taught me that there is
much to be gained by working closely with other organizations for the greater good. I’ve been an Ever’man
member since the Quonset hut days, so I feel especially qualified to represent the members on the Board of
Directors. From my experience with a soup kitchen, free clinic and Guardian ad Litem, I know and cherish the
pleasures derived from volunteering.

the community with the tools needed
to live a healthy lifestyle through
it’s Educational Center and mission
to promote clean eating, is in sync
with my own mission and goals for
my clients. As a Certified Specialist in
Fitness Nutrition and Licensed Beyond
Barre Fitness instructor, I share Ever’man’s
mission to help people achieve optimal health
through clean eating and exercise. I am scheduled to instruct a
barre class at Ever’man’s Educational Center in December and I
am excited to offer this class to the Ever’man community. If I am
elected as a board member, I will continue to use my experience,
education, and passion to help the community. I currently offer
nutrition coaching through my Healthy Habits Club and I teach
Beyond Barre Fitness as both the Pensacola Athletic Center
and Pure Pilates Downtown. I also part own a medical coding
company, The Coding Alliance, and manage a group of medical
coders who provide services to physician groups as well as
hospitals. I look forward to the opportunity to collaborate with
Ever’man’s and would love to be a resource and advocate for the
community.

satisfaction as a core value. I was engaged in the planning
process for expanding the current store and believe that
Ever’man is set to expand further into the community
(locally and beyond) as an educational and local product
outlet for the environmentally aware consumer. I have
an interest in seeing Ever’man utilize creative concepts
to promote healthy lifestyles to the underprivileged
community as well.

one way I recharge is by eating healthy organic
foods. Clean eating is important to stay healthy as
well as getting daily exercise. I stay active through
exercise, gardening, and a daily bicycle ride. These are just some of
the ways I recharge myself and they might just work for you too. At
Ever’man, we are here to provide you with the best ingredients for your
healthy diet. We want you to eat well and feel well during 2016. If you

After a hectic holiday season many of our
members and customers like to begin the
year with a whole body cleanse. The cleanses we
carry allow you to eat a very healthy diet and you can
choose to do a 7 day, a 14 day, or a 30 day program. Our cleanses
are gentle and at the end of program you should have more energy
and feel healthier. Many of our products will be on sale, so stop by
our department and we will be glad to help you find that one that
suits you best.

Start your New Year right by visiting the
Ever’man Cafe juice bar and clean out last year’s
indulgences with our “Mr. Clean” juice made
from beets, carrots, garlic, ginger, and cayenne. You
might also try the “Body Cleanser” juice made from carrots, beets, and
cucumbers. Get creative and design your own juice or smoothie from
our wide variety of fresh fruits and vegetables. Begin the year with
revitalized eating habits by dining at our hot and cold bars or picking
up one of our freshly made grab and go soups and salads. Make it a great
new year by making Ever’man’s Cafe a regular part of your routine.
Salmon Nicoise Salad*
Ingredients:
Preparation
1 tablespoon apple cider vinegar
Zest of 1 lemon
4 tablespoons fresh lemon juice (about
1 lemon)
Dash of Worcestershire sauce
Salt and pepper to taste
In a small bowl, whisk together the minced garlic, Dijon mustard, vinegar,
lemon zest and juice, Worcestershire sauce, salt, and pepper.
Arrange the pieces of salmon, potatoes, green beans, eggs, red onion slices,
Kalamata olives, and tomato wedges on a large platter. Pour the dressing over
the arranged platter and serve family style.
Preheat oven to 500 degrees F.
Place salmon on an oiled baking sheet
pan, skin side down. Sprinkle the
fish with salt, pepper and garlic
powder, and drizzle with olive
oil. Bake 7-10 minutes until
the salmon reaches desired
doneness. Set aside to cool.
Salad:
Remove the skin and chop

Use 12 ounces of cold smoked salmon in place of the fresh salmon to speed the
preparation time, or delete the fish altogether to make it a vegetarian meal.
Plan ahead and cook extra potatoes and green beans earlier in the week; then
this salad comes together in a matter of minutes.

Garlic Basil Ratatouille*
Ingredients:
2 tablespoons olive oil
1 yellow onion, diced
1 red or green bell pepper, seeded and diced
3 tablespoons minced garlic
1 small zucchini, diced
1 small yellow squash, diced
1 small eggplant, stem removed, cut into 1/2inch cubes
1 14.5-ounce can diced tomatoes
1/3 cup minced fresh basil
2 tablespoons pine nuts
Salt and black pepper to taste
Preparation
In a large soup pot, heat the olive oil over mediumhigh heat. Sauté the onion, bell peppers and garlic
for a few minutes. Add the zucchini, yellow squash,
eggplant and diced tomatoes (with juice) and bring
to a simmer. Cover the pot and simmer on low for 10
to 15 minutes, stirring frequently. When the eggplant and
squash are tender, stir in the basil and pine nuts, and taste for
salt and black pepper. Remove from heat and serve warm.
Serving Suggestion
Serve this delicious vegetable stew over cooked couscous or nutty brown rice sprinkled with shredded or
flaked Manchego cheese, and a side of garlic green beans. Use fire-roasted instead of plain diced tomatoes
for a smoky, outdoor flavor!

If you think sushi means eating raw fish—this is simply NOT true. You can put
anything inside a sushi roll, raw or cooked, and wrap it with rice. Your cooked filling
choice can be cooked foods such as veggies, fish, ham, tuna, chicken, shrimp, or
even fruits, cream and cheese! The most important ingredient is the rice. If you
can make the perfect rice, you have aced sushi making.
Preparation
1. Place the sushi mat on
a flat surface. Cover the
sushi roll mat with a layer
of plastic wrap as this
prevents rice from sticking
on your rolling mat.

2. Spread the sushi rice on the mat.
Put the nori sheet (seaweed) on top
of the rice and press to flatten. For
the perfect roll, the rice should be
about a half inch above the nori sheet.

How to prepare Sushi Rice (4-6 rolls)
1. Take two cups of Lundberg Sushi Rice and rinse until water runs clear.
2. If you have a rice cooker, follow the directions.
3. To use a sauce pan, put the same amount of sushi rice and water in the pan.
Bring water to a boil. Turn down the temperature and continue to simmer with
lid closed, until all the water evaporates. Two cups of rice will take about an
hour to cook.
Optional Step: After the rice is done, and while the rice is still hot, add sweetened
rice vinegar (combine 1 tablespoon of rice vinegar, 1 tablespoon of sugar and
½ teaspoon of salt). For the best sushi rice, combine hot rice with sweeten
rice vinegar while rice is in a wood bowl and also use a fan to accelerate the
evaporation of the rice vinegar (this step gives the rice shine).

Jay Porter, Prepared foods manager
Can you share with us what prepared you to be
the Ever’man Prepared Foods Manager?
Following college at the Georgia Institute of Technology
my restaurant career begin with a regional sandwich shop
chain in Atlanta as a commissary and warehouse worker
and delivery driver. Eventually after first being promoted
to manager and area supervisor, I became Director of
Operations for the 24 unit chain. After the sale of the
restaurants I began a new direction as a territory sales representative with
full line foodservice distributors learning all aspects of restaurants and
institutional facilities. The beginning of my career with national companies
began with Wendy’s International in the Tampa Bay region. Fourteen years
with this rapidly growing chain led to positions as General Manager, Training
Store Manager, Area Supervisor, and Area Director of Operations. The years
in these positions was truly a learning experience in all phases of operations,
financial management, human resources, training and people development.

My next move was as a part owner, Supervising Partner and Regional
Director of Operations of the Sonic Corp. Following this successful
tenure in which Sonic grew from 1400 restaurants to over 3000, the
time had arrived to reach out and start my own business as a franchisee
of Family Sports Concepts, designing, building, opening and operating
two Beef’O’Brady’s Family Sports Pubs in the Florida panhandle. After
divesting our interests in this business after 12 years I was fortunate to
find the opportunity at Ever’man and become a part of the Co-op team
and learn the natural foods business.
Tell us a little about your interests and how you spend
your free time?
My wife Donna and I have three grown children and fifteen grandchildren
whom occupy much of our free time. We live in the country with our
two Tennessee Walking Horses that we love to ride and pamper. I also
enjoy cooking and entertaining our family and friends.

Ever’man is pleased to share that the launch of its
Charity Eco-Friendly Bag Program has been well
received by members and customers and continues
to grow. The program was set up as another benefit
of shopping at the co-op and serves the purpose
of rewarding shoppers for every eco-friendly
bag that is used per shopping trip. For each bag
Ever’man donates 5 cents to one of three charities.
Charity choices fall into three 501(c3) categories;
an organization that is committed to providing

FOG Station; a Big Win for Downtown
The partnership Ever’man has with Emerald Coast
Utilities Authority (ECUA) has been a win for the
community. Since ECUA located a Fats, Oils and Greases
(FOG) Disposal Station at Ever’man on September 18,
2015, the response has been tremendous. Since that
time, ECUA has collected over 262 gallons of used
cooking oil and grease. The used material is collected
and then recycled into bio diesel fuel. We look forward
to an even greater response in 2016. Remember a
greener today is a cleaner tomorrow.

GMOs:
Four Easy Tips
GMOs, or genetically modified organisms, were introduced into our food supply in the mid-1990s and, in
their relatively brief existence, have become fully entrenched in the food around us. Not to be confused with
traditional breeding techniques like open pollination or
hybridization (which occur courtesy of natural reproduction), GMOs must be created in a laboratory. Scientists change the plant or animal’s DNA by inserting
novel genes—typically from an unrelated species—with
the goal of producing very specific traits. For instance,
some GMO plant varieties are designed to tolerate toxic
pesticides. Simply put, GMOs aren’t natural. Despite
the fact that GMOs don’t occur in nature, they are commonly found on supermarket shelves without any labeling.
We believe everyone deserves access to information so
they can make informed decisions for themselves about
whether to choose or avoid GMO food. If you want to
pass on GMOs, here’s what you can do:
1. Avoid At-Risk Ingredients.
Certain foods are more likely to contain GMOs than
others. Think processed foods—anything that contains corn, soy or canola ingredients probably contains
GMOs. A few likely culprits include canola oil, corn syrup and soy protein. And, here’s a little known fact: most
of our sugar actually comes from sugar beets (not sugar cane) and most of those sugar beets are genetically
modified. So, if you’re in the mood for something sweet,
look for desserts with evaporated cane juice listed in
the ingredients or another alternative sweetener.
When you’re cooking at home using fresh, unprocessed
ingredients, it’s pretty easy to avoid GMOs. With the
exception of zucchini, summer squash, sweet corn and
papaya, you’re not likely to find GMO produce. Just remember to reach for non-GMO oils, like coconut, safflower or olive oil for your next salad or sauté.
If you’re really passionate about avoiding GMOs, be
aware that conventional farm animals eat GMO corn,
soy and alfalfa. You may also wish to seek out organic
cotton, since most conventional cotton is GMO these

days. The good news is that by federal law, certified organic products cannot contain GMOs, so choosing organic is an excellent way to avoid GMOs (see Tip #2).

2. Learn Your Labels.
