(Ice-wine) The grapes again are left to shrivel on the
vines. They must reach the same level of sugar
concentration as Beerenauslese. They cannot be picked
until after the temperature reaches 20 degrees. The
grapes are pressed while frozen, resulting in a very
sweet wine as most of the liquid is discarded as ice.

When our Declaration of Independence was signed in
1776 the document was toasted not with Bordeaux or
Burgundy, but with Madeira.
Madeira was the beverage of choice of many of the
world’s connoisseurs during the 18th and 19th
centuries but diseases and pests devastated the island
in the late 19th century almost ending the production
of fine Madeira. If you wanted to taste the best 150- or
200-year-old table wine (perhaps an 1832 Lafite
Rothschild, for example), you would pay from $5,000
to $40,000 for the bottle and once you opened the
bottle, you would have to drink it quickly before it
faded away.
On the other hand, you can enjoy a sip from a bottle
of fine after-dinner Madeira a day for a year and the
wine will be just as tasty the last sip as the first — and
you would probably find more flavor in the Madeira.
Unlike table wines, the older ‘sipping wines’ like Madeiras get, the richer they become.

Muscat
Among the least known dessert wines of the world are
the Muscatel de Setubals (pronounced se TOO bal) of
Portugal. Grown and made in sandy soils fit almost
only forcactus, these wines improve with age for a
hundred years and more, becoming dark red, mellow,
and elegant. They seem to lead dual lives. When young,
they have strong acidity and medium fruit, and make
nice table wines. But because they are high in
alcohol, they take a long time to age, and become
sweeter, fruitier, and fuller as they get older. The best
(and oldest) are indeed very good.

If you purchase a glass of any port listed here, it will
be enjoyable now; because chances are that the bottle
has already been opened and had time to breath
(softened, matured, smoothed out). If you purchase a
bottle of Vintage Port, the younger vintages need time
to breath. Either pour a larger quantity in each glass
and swirl the glass between sips, or have us decant the
bottle first, and then pour and swirl. The older vintage
ports will probably be ready to enjoy. Late Bottled
Vintage (LBV), Tawny, or Reserve need not be aired —
they are ready to enjoy when opened. They are dryer,
or less sweet and have a light Cognac character from
their longer aging in wood. The best (and oldest) are
remarkable experiences — they can be magnificent!

either be dry or slightly sweet.

ranging in age from a couple of years old to two hundred or more years old). Flavors vary with grapes used
