Dessert Wines Dessert Wines AMERICA Ice Wine (Eiswein) The grapes are left to shrivel on the vines. They must reach the same level of sugar concentration as Beerenauslese. They cannot be picked until after the temperature reaches 20 degrees. The grapes are pressed while frozen, resulting in a very sweet wine as most of the liquid is discarded as ice. (2 oz pour) 26961 Adelsheim Deglace Pinot Noir 13.00 26989 Joseph Phelps ‘Eisrebe’, Napa 9.00 (bottle) 6961 Adelsheim Deglace 2011 Pinot Noir half 70.00 6989 Joseph Phelps 2009 ‘Eisrebe’, Napa half 70.00 Late Harvest American Late Harvest wines are made from grapes that have been permitted to ripen longer on the vines for greater accumalation of sugar. The vines often benefit from the sugar concentrating and enhancing mold, Botrytis cinera, that sometimes visits the grapes when the growers are lucky. When they are young, their acidfruit balances make the wines enjoyable with dinner. As the wines mature, the fruit continues to come forward. Quarts (pronounced CAR) de Chaume is lemony, with sweet acidity, and goes well with light desserts. The resulting wine is a little sweet to the taste. Rhone (2 oz pour) 4317 Spatlese (SHPAYTE-lay-zeh) is sweet to barely sweet. Auslese (OUSE-lay-zeh) is sweeter, ‘drinking sweet.’ Beerenauslese (BEERN-ouse-lay-zeh) is much sweeter and is usually sipped, rather than drunk, by the glass. Trocken-beerenauslese (TRAW-ken-BEERN-OUSElay-zeh) is definitely ‘sipping wine’ as is Eiswein (ICE-wine) — very sweet. Madeira was the beverage of choice of many of the world’s connoisseurs during the 18th and 19th centuries but diseases and pests devastated the island in the late 19th century almost ending the production of fine Madeira. If you wanted to taste the best 150- or 200-year-old table wine (perhaps an 1832 Lafite Rothschild, for example), you would pay from $5,000 to $40,000 for the bottle and once you opened the bottle, you would have to drink it quickly before it faded away. On the other hand, you can enjoy a sip from a bottle of fine after-dinner Madeira a day for a year and the wine will be just as tasty the last sip as the first — and you would probably find more flavor in the Madeira. Unlike table wines, the older ‘sipping wines’ like Madeiras get, the richer they become. Rare Wine Co. & Barbeito Madeira Flight 24.00 (1 oz each) 15 yr. Grown and made in sandy soils fit almost only forcactus, these wines improve with age for a hundred years and more, becoming dark red, mellow, and elegant. They seem to lead dual lives. When young, they have strong acidity and medium fruit, and make nice table wines. But because they are high in alcohol, they take a long time to age, and become sweeter, fruitier, and fuller as they get older. The best (and oldest) are indeed very good. (bottle) 572 1969 J.T. Pinto Vasconcello Moscatel de Setubal 80.00 Port If you purchase a glass of any port listed here, it will be enjoyable now; because chances are that the bottle has already been opened and had time to breath (softened, matured, smoothed out). If you purchase a bottle of Vintage Port, the younger vintages need time to breath. Either pour a larger quantity in each glass and swirl the glass between sips, or have us decant the bottle first, and then pour and swirl. The older vintage ports will probably be ready to enjoy. Late Bottled Vintage (LBV), Tawny, or Reserve need not be aired — they are ready to enjoy when opened. They are dryer, or less sweet and have a light Cognac character from their longer aging in wood. The best (and oldest) are remarkable experiences — they can be magnificent! White Ports are made from white grapes only. Can either be dry or slightly sweet. They are sweet, rich and possess an aftertaste that lingers on your palate. They usually require at least fifteen years to mature. Older vintage ports must be decanted to remove the sediment. Quinta means farm in Portuguese. Single Quinta’s come from the best vineyard or farm, from that producer. They are usually made in non-vintage years. Flavors vary with grapes used and company styles. Some dessert sherries are sweet and creamy; some will be medium sweet (or ‘sweetdry’) like some oloroso sherries. All have some of the sherry character of mellow nuttiness that comes from the soleras.
