! ! COMPANION GUIDE ! ! So now you’ve read the book? Where should you start? I’ll tell you my approach, and how I came to figure out what was working for me. Please note, the information presented below does not replace the recommendation of your physician, pharmacist, individual test results, best practices and is meant for educational purposes only. 1. First, if you can afford it, get some testing done. a. The recommended tests are listed at the end of this guide. b. If you do not have a physician that will order the tests for you, see the list of direct to consumer lab tests in the resource guide. c. The tests, as well as the quizzes in the book will direct you where to go as far as infections and imbalances go. 2. The next step would be to start reducing your inflammation by removing things that are toxic. a. Refer to the Intolerances Chapter on how to do an elimination diet. Generally, the worse off your gut, the more restrictive elimination diet will be needed. b. Basic elimination diets include grains like rice, potatoes, etc, and eliminated gluten, dairy, eggs, soy…Some people have reported eliminating their TPO Antibodies after removing gluten, dairy or all of these foods. Three months is generally long enough to know if this is all you need. If that doesn’t work, you can progress to the advanced elimination diet. c. Advanced elimination diets should kick off with an elemental diet or a modified elemental diet to reduce intestinal inflammation and remove small intestinal bacterial overgrowth d. If you have a history of GI problems you should start with the more advanced elemental diet. Having an abnormal tongue is an indication of poor GI function. e. Please see the recipes for an elemental diet. f. You can then start adding foods in and testing for reactions 3. After you have finished the elimination diet, start fermented foods and probiotics. You may get die-off reactions! If they are too severe, cut back on the dose or start AnatabineAnatabine detoxifies LPS, the toxin released by bacterial die-off. 4. Once you have completed the elimination/reintroduction diet, your next step should be to detoxify. Alkalizing the body is an important strategy for detoxification. Next, while you work on your gut, also work to remove triggers and toxins like excess iodine, fluoride, and chlorine, based on the Five R’s discussed in the book. 6. Healing foods and healing supplements should be incorporated 7. Find out everything you can about autoimmunity and Hashimoto’s. Your root cause may not be the same as mine. I use the P-D-S-A approach: Plan-Do-Study-Act Plan: First I plan out what one small change I am going to make, for how long, and how I will measure the results I get. I note down my baseline TPO antibodies and my ratings on symptoms (see Thyroid Journal) Do: I then actually make the change. No hesitations, no cheating. I don't take up anything new, I stick to the plan. Study: After I carry out the plan, I repeat my TPO antibodies (up to one time per month) and redo my symptoms rating in the Thyroid Journal Act: Based on my results, I decide if I should Adopt, Adapt or Abandon the intervention. If it makes me feel better, I adopt it and write it down in the “Makes me Feel Better” column (see worksheet). I abandon the intervention if I feel worse on it, and I note it down in the “Makes me Feel Worse” column. I know I had to transition gradually into them because it took me a year to part with fruit, a year to part with eggs…this really hindered my progress. What I didn’t know then is that pathogenic flora ferment fructose and undigested proteins, and that once I rebalanced my intestinal flora I would be able to add foods back in gradually. Proteus bacteria feed on undigested protein. Since Hashimoto’s patients have a difficult time digesting proteins, inadvertently we feed the bacteria with every meal. The bacteria multiply and swarm, attach to our intestinal lining and create intestinal permeability. Protein, however, is a necessary building block for the human body and we need protein to achieve and sustain good health. Free amino acids provide protein in a form that has been pre-digested to individual amino acids and is absorbed directly. Free amino acids satisfy your body’s needs for building blocks and at the same time starves the pathogenic bacteria. Your options are: pure elemental diet (protein, fat, carbohydrate absorption issues) or protein targeted elemental diet or semi-elemental diet. Commercial elemental diets are available but are very expensive but have many artificial ingredients and iodine. Low fat/high carb versions can worsen adrenal fatigue. Therefore the recipes I recommend are low in carbohydrates and high in fat, and are actually ketogenic, in that the body begins to burn fat instead of carbohydrates for energy. *Note: Candida can survive on fat, so be sure that Candida is not an issue before attempting this diet. Introduction Gradually introduce the elemental diet into your life. For example, start of with having an elemental smoothie for breakfast, followed by a regular meal at lunchtime and dinner. The next day, replace both breakfast and lunch with an elemental diet and so forth. As you transition to the full elemental diet, expect to have some die-off symptoms including headaches, white coating on your tongue and changes in stool function. Die-off goes away after 5-7 days, and the elemental diet has been successful when followed for 2-3 weeks. ELEMENTAL RECIPES Semi-Elemental Smoothie Diet Semi elemental diets use a hypoallergenic protein such as pea protein or rice protein. Not everyone can tolerate either of these proteins, but following this type of diet may be a good starting point for someone with mild-moderate bowel problems, for someone who is underweight or for someone who is not ready to go on the elemental diet. You always have the option to step down to a protein modified diet or elemental diet or step up to a less restrictive diet. www.thyroidlifestyle.com 11" My favorite recipe • Now Foods Pea Protein (1 scoop) • 2 stalks of celery • 1 cup of lettuce (avoid spinach and other goiterogens) • 1 can coconut milk • 1 avocado • Juice of one lime *Note: digestive enzymes may still be needed with this shake, especially those for protein digestion Protein Modified Elemental Diet If difficulty tolerating protein, I have found the following recipe to be helpful • 1-2 tablespoons free amino acids (Jo Mar Labs- Pure Form 21 Blend) • 2 stalks of celery • 1 small bunch of mint • 1 avocado • 1 cup coconut mil • ½ teaspoon alcohol free vanilla • Stevia to taste • Juice of one lime *The lime, mint and stevia disguise the free amino acid taste *Digestive enzymes for proteins will not be needed with this recipe Pure Elemental Diet For a basic home-made elemental diet recipe, please see Dr. Allison Siebecker’s recipe here. http://www.siboinfo.com/uploads/5/4/8/4/5484269/homemade_elemental_diet_options. pdf I have modified the original recipe to mask the taste of the amino acids which have a terrible bitter taste. My modified elemental recipe • • • • • • Free Amino Acids (I use Jo Mar Labs -Pure Form 21 Blend, www.jomarlabs.com) Unsweetened Cranberry juice-masks the taste of the free amino acids Stevia Water Coconut Oil (I use Trader Joe’s Brand) Herbal (no caffeine) tea www.thyroidlifestyle.com 12" Step 1: Calculate your daily protein need… http://lowcarbdiets.about.com/library/blproteincalculators.htm -Rough estimate is taking your weight in pounds and dividing by two to get the grams of protein. (f.e. a 100 lb person would need about 50 grams of protein per day). Step 2: Determine your daily caloric needs: http://www.calculator.net/caloriecalculator.html Step 3: Each tablespoon of free amino acids contains 12 grams of protein. Based on your protein requirements, mix the appropriate amount of free amino acids with water. Add unsweetened cranberry juice and stevia to taste, and consume three times per day in place of meals Step 4: Fat is an essential nutrient and should make up the rest of your calories. After determining remaining caloric amount, add appropriate amount of coconut oil to a cup of hot water with some herbal (non-caffeinated tea) sweetened with Stevia. Wait until mixture cools to appropriate drinking temperature and sip in between your elemental smoothies. 1 tablespoon of amino acids=48 calories=12 grams 1 tablespoon of coconut oil=120 calories=14 grams Step 5: If you are going to consume this modified elemental diet without any other foods, make sure to supplement with vitamins and minerals. Nutrient 950 by Pure Encapsulations has a copper, iron and iodine free version. Your schedule may look like this 8am-tea with oil 9am-amino mix 11am-tea with oil 12-amino mix 2-tea with oil 3-amino mix 5-tea with oil 6-amino mix 8-tea with oil Warning: This recipe has not been clinically or formally tested. The safety, tolerability and effectiveness are unknown. www.thyroidlifestyle.com 13" DETOXIFICATION RECIPES ALKALINE BROTH 2 quarts filtered water Pinch of sage 3 stalks celery or bok choy 3 carrots 1 large onion 1 small beet, peeled 2 cloves garlic, minced 1 cup fresh spinach leaves ¼ cup fresh parsley, finely chopped Wash all vegetables. Do not peel if organic (except beets). Coarsely chop all the vegetables. Cover with water in a non-aluminum pot; add sage. Bring to a boil, reduce heat and allow to simmer, covered, until broth has a rich flavor, about 20 minutes . Strain and drink hot or cold. *For a heartier broth, remove ½ veggies, blend in blender or food processor, and return to soup. BIELER BROTH (may restore alkaline reserves and improve liver function) Celery, cut into chunks Green Beans Zucchini and yellow squash, cut into chunks Spinach 1 generous handful parsley 1 small handful of cilantro Wash veggies. Combine equal amounts of the above vegetables and steam in a steamer basket. Make sure the water is below the level of the vegetables. Steam for a few minutes, until vegetables are cooked but still slightly crunchy. Combine vegetables, water, and herbs in a blender and puree until smooth to the consistency of pea soup (you may add more water or broth for a thinner consistency, if desired). BORSCHT 2 cups finely shredded cabbage 2 cups boiling water ½ cup chopped onion 2 Tbsp olive oil 2 tsp caraway seed 1 tsp honey, if desired 3 Tbsp lemon juice Salt and pepper to taste 1 pound cooked small beets, peeled, chopped (save the cooking water) 1 quart chicken or vegetable stock (wheat-free) Cook the cabbage for ten minutes in boiling, salted water. Cook the onion in the oil for a few minutes, without browning. Drain the beets, saving the cooking liquid, and finely chop. Add the chicken or vegetable stock to the onions. Upon boiling, add the cabbage and its cooking liquid back in. Add the beets, one cup of beet cooking liquid, caraway seeds, honey, www.thyroidlifestyle.com 14" and salt and pepper. Simmer for ten minutes, skimming carefully. Remove the soup from the heat. Add lemon juice and heat just to the boiling point. Serve with dill weed garnish. Eat soup hot or cold. VEGGIE BROTH 2 quarts filtered water 2 cups spinach 2 cups broccoli 3 cups celery stalks 1 zucchini Chop up all the veggies. Place in a pot with the water, bring to a boil, cover and simmer for 20-30 minutes. Strain the liquid and drink the broth. You can drink this anytime during your cleanse. HEALING RECIPES Bone broths have been touted for their healing effects on the intestinal tract. Shopping List ! ! ! ! ! ! ! ! ! ! ! 30 Organic chicken drumsticks, or other meat with bones 2 bags of organic celery 3 lbs. of organic carrots 6 organic onions 1 container of non-iodized sea salt 10 green or yellow zucchinis 6 15 oz. cartons of organic pumpkin (better than cans) 1 head of broccoli 1 head of cauliflower 1 jar of extra virgin coconut oil duck fat or leaf lard (optional) To make the stock 1. 2. 3. 4. 5. 6. Place 4-5 chicken drumsticks in large pot Add 3 stalks of celery, one onion, 8-10 carrots Add ½ teaspoon of sea salt Fill to the top with water Turn on heat on high until soup comes to a boil After boiling turn to low-medium and let simmer for approximately one hour, until soup is fragrant and meat comes off the bones 7. Stain out the liquid and carrots. 8. Peel meat off bones (optional) 9. Throw out bones, celery, onions -they are too difficult to digest at this point www.thyroidlifestyle.com 15" To make soup Soups are very basic, and have only 4-5 ingredients 1. Stock 2. Well cooked pureed vegetable of choice (we start with carrots) 3. Sea salt to taste 4. 1 tablespoon of coconut oil 5. Pureed well cooked meat (optional) Simply, mix, heat and enjoy whenever you are hungry. One batch of stock should last about 2-2 ½ days. Do not worry about calories, times of day or whether you are getting enough variety for now.
