24th Hillsborough International Oyster Festival.

This year’s nominated charity is The Cystic Fibrosis Trust,
the only UK wide charity dedicated to ‘Fighting for a Life
Unlimited’ for everyone affected by cystic fibrosis .
As always your support in attending the events has enabled
the Festival to run for so many years and it is this that
enables the week to be so successful.

World Champion Colin Shirlow will be on the Gig-rig stage
to defend his record that was set in 2015 of eating 233
oysters in three minutes along with the Soap Box Derby
which will once again take place on the Main Street. We
also look forward to welcoming the British Street Food
Awards to the Festival. This is the first time the awards
are taking place in Northern Ireland and we are delighted
to host the best of UK street food this year for guests to
enjoy. These along with a week’s long varied entertainment
programme should make the 2016 Festival as vibrant as
previous years.
Finally, I would like to take this opportunity to sincerely
thank the members of the organising committee who
volunteer their time all year round and work tirelessly to
bring together a Festival that is second to none. All this
hard work and dedication has enabled the Festival this year
to gain the double accolade of being named as one of the
top 10 food festivals in the world to visit
in 2016 by WorldGuide and as one of the
best Irish seafood festivals in 2016 by
Coast Monkey.

The Cystic Fibrosis Trust are delighted to have been chosen as this
year’s nominated charity for the Hillsborough International Oyster
Festival 2016.
The Cystic Fibrosis Trust is the only UK wide charity dedicated
to ‘Fighting for a Life Unlimited’ for everyone affected by cystic
fibrosis.
Cystic Fibrosis is an inherited disease caused by a faulty gene.
This gene controls the movements of salt and water in and out of
your cells, so the lungs and digestive system become clogged with
mucus, making it hard to breathe and digest food which slowly
destroys the lungs leading to the person needing a lung transplant.
The daily medication of a person with cystic fibrosis can be taking
40 – 60 tables per day, nebulised drugs and physio therapy three or
four times a day.
At present the average life expectancy of a person with CF is only
40 years of age.
The Cystic Fibrosis Trust is fighting for a ‘Life Unlimited’ for
everyone affected by CF. Our mission is to create a world where
being born with CF no longer carries a death sentence, where
everyone living with the condition will be able to look forward to a
long healthy life.
The Cystic Fibrosis Trust invest in cutting-edge research to develop
better treatments for CF and hopefully a cure for this devastating
condition, we drive up standards of clinical care at specialist CF
centres and clinics, there are two specialists centres in N Ireland
one at Royal Belfast Hospital for Sick Children and an adults unit
at Belfast City Hospital. We provide trusted information, advice and
support to those affected, through our publications, website and
support services.
We campaign hard on behalf of those with cystic fibrosis.

THE TURKISH AIRLINES WORLD
OYSTER EATING CHAMPIONSHIP
– Festival Gig-rig in Hillsborough Fort field
There are two competitions; in the first, entrants from
all over the world compete to see who can consume
30 native oysters in the fastest time. The current
record of 22.01 seconds is held by Soon-Ok Potter
from South Korea.
The second is the World Oyster Eating Championship!
The current World Champion is Colin Shirlow
from Dromore, Co Down. Colin also is the reigning
Guinness World Record-holder. His record of
consuming 235 oysters in three minutes was set
in 2015.
This year, the USA champion oyster eater, Adrian
Morgan, will be travelling to Hillsborough to compete
against Colin; he’s seriously fast and will be a real
challenge. Also returning, and she also will be a
real challenge to Colin’s record, is Michelle Lesco.
Michelle took part last year and managed 214 oysters
in three minutes; she’s determined to do much better
this year!

The Owl & Pussycat Café is the newest addition to Hillsborough’s
stunning line up of foodie destinations. Priding itself on its commitment
to working with the cream of local artisan producers, the food is all
about fresh ingredients prepared daily by a talented team of creative
and passionate chefs. The café is a brand new concept for the village.
Open from 7.30am – 10.30pm Monday to Saturday and 9am – 9pm on
Sunday, it’s serving customers a range of delicious breakfasts, lunches
and desserts. For those in a rush, there’s a fantastic online ordering
system to get your food on the go at a time that suits you. With many
events planned, there’s an exciting calendar ahead from Gourmet
nights through to Jazz brunches and more. One to look out for will be
their signature Afternoon Tea event, and, as it’s BYO, you can bring your
favourite bottle of Prosecco or Champagne with you!
The Café is also offering outside catering for businesses and private
parties, providing a range of sweet and savoury platters. So whether
it’s a quick catch up with a friend to sample some gourmet coffee and a
