NEW ZEALAND WINE AN OVERVIEW
New Zealand is a land like no other. New Zealand wine is
an experience like no other. In every glass of New Zealand
Wine is a world of pure discovery.
PREMIUM PLAYER
The New Zealand wine industry is a quality-driven niche
player. Within a relatively short time, our wines have
acquired a reputation that is the envy of much larger wine
producing countries. International critics rate New Zealand
Sauvignon Blanc as the world’s best, and the growing
acclaim for New Zealand Chardonnay, Cabernet Merlot
blends and Pinot Noir is helping to further secure New
Zealand’s position as a producer of premium wines.
DIVERSE STYLES
New Zealand’s wine growing regions are found between
latitudes of 34 – 47° and cover a distance of 1,600 kms
from most northern to most southern. Grapes are grown in
a wide range of local climatic conditions and soil types, so
highly distinctive regional flavours have emerged.
TEMPERATE MARITIME CLIMATE
As a nation of islands, New Zealand benefits from the
temperature modulating effect of the sea. The extremes
of heat and cold experienced by landlocked, continental
countries simply don’t apply. New Zealand also enjoys
long, dry autumns, which allow slow ripening – our
grapes develop intensity as well as good acid structure.
This balance between fruit and acidity is one of the key
differentiators of New Zealand wine, and an important
reason for why they work so well with food.

ENSURING THE FUTURE
New Zealand’s small population, distant location and
agricultural economy have earned the country a ‘clean,
green’ image. Visitors often describe it as ‘an unspoiled
paradise’. New Zealand’s winemakers are determined to
keep it this way, through the Sustainable Winegrowing
New Zealand programme, which was established in 1995.
New Zealand’s status as a producer of world class wines
has been accelerated by the skilful implementation of
traditional, established methods from the world’s great
wine regions. At the same time, our wine industry is
able to adopt proven new innovations - such as canopy
management, stainless steel fermentation and screwcaps to optimise the quality and distinctiveness of the wines.

100% SUSTAINABLE BY 2012
In June 2007 the New Zealand Wine Industry agreed
to build on over a decades worth of commitment to
sustainability by implementing a broad based and all
encompassing sustainability policy.
THE GOAL: For all New Zealand Wineries and Vineyards to
be operating in accordance with an independently audited
sustainability programme by vintage 2012.
THE METHOD: To ensure achievement of this goal,
New Zealand Winegrowers has introduced a number of
pioneering initiatives, including:
• Industry funding into Carbon Calculator for winery
greenhouse gas emissions
• Research and development of alternative organic
fungicides
• Energy benchmarking study and establishments of
industry benchmarks
• Requires that wines presented at NZW events from
vintage 2010 onwards have been produced under an
independently audited sustainability programme
THE MEASURE: New Zealand Winegrowers has selected
a number of esteemed certification systems that are to be
recognised by this policy:

THE PROGRESS: The industry is well on its way to
achieving this goal, currently:
• Over 95% of New Zealand vineyard producing area are operating under an independently audited sustainability programme
• Over 94% of New Zealand’s wine production capacity is
operating under an independently audited sustainability programme

SUSTAINABLE WINEGROWING
NEW ZEALAND (SWNZ)®
Developed and managed by New Zealand Winegrowers,
SWNZ is a viticultural and winemaking framework and
accreditation process based on best practice policies for
protecting the environment whilst remaining economically
sustainable.
SWNZ was established in 1995, at which time it was
focused on vineyard management, in 2002 this was
extended to winery management policies. In the vineyard,
SWNZ covers such aspects as use of fertilizers, control
of pests and diseases, water and energy use and
biodiversity. In the winery, SWNZ focuses on winery waste
management and water and energy efficiency.
Today a total of over 190 New Zealand Wineries,
approximately (90% of wine production) and 1500 New
Zealand vineyards (29, 700Ha+ or 90%+ of producing
area) are accredited by SWNZ.
Sustainability is about meeting the needs of today, without
adversely impacting on the needs of tomorrow

GRAPE VARIETIES
New Zealand offers a vast portfolio of wines. Over 25
differentgrape varieties are planted in commercial quantity
in New Zealand, although the classic varieties of Sauvignon
Blanc, Pinot Noir, Chardonnay, Cabernet Sauvignon, Merlot
and Riesling account for the lion’s share. Varieties that
respond to warmer growing conditions, such as Cabernet
Sauvignon and Merlot, are more popular in the North
Island. Varieties which favour cooler conditions such as
Sauvignon Blanc, Riesling and Pinot Noir are more widely
planted in the cooler South Island regions and in some
North Island sites such as Martinborough.
SAUVIGNON BLANC
New Zealand Sauvignon Blanc is acclaimed throughout
the world as the definitive benchmark style for the varietal.
Its exuberant, pungent flavours have dazzled wine critics
everywhere. Sauvignon Blanc can produce lush, fleshy wine
with nectarine and peach flavours in Hawke’s Bay or more
pungent and zestier wine with gooseberry, passionfruit
and capsicum flavours when it is made from Marlborough
grown grapes.
CHARDONNAY
New Zealand Chardonnay is all about quality and
diversity. The varied regional conditions combined with a
winemaker’s skill and innovation mean that Chardonnay in
New Zealand comprises a myriad of ever evolving styles,
capable of appealing to a wider range of palates. Gisborne
Chardonnay is often soft and beguiling with pineapple and
peach flavours, while Chardonnay grown in Canterbury is
more likely to be crisper with strong citrus/ grapefruit and
white peach characters.
AROMATICS
With a climate ideal for the production of Aromatic wines,
praise is now resounding for the increasing number of
vibrant, world-class and regionally distinctive examples of
New Zealand Riesling, Gewürztraminer and Pinot Gris.
SPARKLING WINE
A temperate climate, combined with the planting of the
classical champagne varieties Chardonnay, Pinot Noir
and Pinot Meunier, plus the use of the latest winemaking
technology have enabled New Zealand to produce
outstanding sparkling wine, now acclaimed throughout
the world. Local winemakers have adapted traditional
winemaking methods, but they produce wine styles unique
to New Zealand with subtle fruit flavours that express the
character of an array of vineyard sites.

PINOT NOIR
New Zealand is now acknowledged as one of the few
countries to have successfully come to grips with this
fickle, but supremely aristocratic grape variety. The
temperate climate and long sunshine hours have combined
with winemaker passion and skill to produce world class
highly sought after Pinot Noir. Martinborough Pinot Noir
is typically intense and rich with ripe plum flavours while
Central Otago Pinot Noir tends to be finer and more
aromatic, with the distinctive flavour of black cherries.
CABERNET SAUVIGNON, MERLOT
AND SYRAH
The aristocratic stable mates, Cabernet Sauvignon and
Merlot are star performers, particularly in New Zealand’s
warmer northern region. New Zealand Cabernet Sauvignon
boasts structure and elegance, whilst a richness and
warmth exude from New Zealand Merlot. In partnership,
Cabernet Sauvignon and Merlot can be vibrant or richly
mellow, powerful or subtly elegant. Complex, floral and
bright spicy flavours with elegant texture also ensure that
New Zealand Syrah shines alongside the blends.

Elephant Hill is a new and innovative winery estate located
on the Te Awanga coast, in Hawke’s Bay, New Zealand. As
a producer of premium single-estate Hawke’s Bay wine, the
vineyard enjoys a temperate dry climate and extended growing
season. Cooled by afternoon sea breezes, the shingle vineyard
allows wines to be grown that display wonderful fruit purity
and elegance. The first vines were planted in 2003 and the
inaugural vintage occurred in 2006. The climate and unique
environment best complement the elegance and complexities
of Sauvignon Blanc, Viognier and Syrah; these varieties will
undoubtedly become synonymous with Elephant Hill.

GOELET WINE ESTATES
Kato Sauvignon Blanc is sourced from Marlborough, New
Zealand, the premier New World growing region for this
varietal. The vineyards are located in the Awatere Valley,
where coastal influences protect the fruit from sharp
morning frosts. The word Kato means “harvest” in Maori,
referring to the unique heritage of the region. The Kato
logo is a representation of three intertwined whale tails and
was inspired by the Cook Strait, which separates the North
and South Islands of New Zealand and is a migration route
for humpback whales. As a wine company dedicated to
sustainable principles in the vineyard we are also concerned
with the protection of all natural environments, including the
ocean and the creatures in it.

KONRAD WINES
The company is owned by Konrad and Sigrun Hengstler. The
Hengstlers originally migrated from Germany to Australia
and having decided to become involved in the wine industry
realised New Zealand and specifically Marlborough was the
place to plant Sauvignon Blanc, Riesling and Pinot Noir. The
company’s two vineyards in the Wairau and Waihopai Valleys
were first planted in 1996. The Wairau Valley vineyard on Foxes
Island presents a warm site producing early ripening fruit while
the Waihopai Valley has a typically cool climate. Consequently
fruit from the two sites are blended to achieve an optimum
balance between ripe and juicy fruit flavours with fresh and
complex acid structure.

The Marisco Vineyards property, home of The Ned and The
King’s Series, is located in the Waihopai Valley of Marlborough

in 2001. Natural Pastures utilizes milk from their Heritage Dairy Farms
on Vancouver Island. The Aged Farmhouse cheese is matured for one
year and is a derivative of their Boerenkaas, a traditional Dutch Farmers
Cheese. It has a slightly crumbly texture with a rich smooth flavor of
fresh milk, fruit and salt. Can you detect the small flavor “crunchies”?

FX Pichet is one of the original cheese dairies that makes cheese using
Quebec certified organic milk. The cheese is made on site, hence the
term “farm cheese”. It is a washed rind, semi-soft raw milk cheese with
an aroma that is fresh, creamy with a hint of flowers and hay. It will
have small eyes, a moist paste and a slight sheen to its butter-yellow
colour. The flavour nicely balances salt and fruitiness with a mellow,
savoury finish. The earthy, somewhat gritty, rind is a wonderful
complement to the curd. Because it is made from raw milk, it must be

In 1881, the local dairy farmers of Lanark County, near Perth, had
the good idea to form a dairy collective, pool their excess milk
and produce cheddar cheese. The cheese was named after John
Balderson, a retired sergeant from the British Army who was
among the first homesteaders in the area in the 1860’s. So began
the Balderson Corners Cheese Factory and the story of Balderson
Premium aged Cheddars. Naturally aged, this 3 year old cheese has
a smooth crumbly texture with a sharper, saltier taste and like a fine
wine is more complex in taste.
