EOS ESTATE WINERY
‘The Future is Bright’

T
here’s a new energy rippling through Eos
Estate Winery, and it isn’t confined to the
recently completed solar project that
now supplies the winery with 100 percent of
the power it requires.
From new labels providing a fresh look for
a winery with an established track record of
award-winning wines, to an active calendar of
entertaining and educational activities, Eos
embarks on a lively 2009.
Winemaker Nathan Carlson, who joined
Eos almost a year ago, said the 25-year-old
winery’s future is bright.
“Eos has established a wonderful foundation in its history,” said Carlson. “I am ready
to take it to the next level to help Eos produce
the most sought-after wines on the Central
Coast.”
Carlson is familiar with the Central Coast,
having been a part of winemaking teams in
both San Luis Obispo and Santa Barbara
counties. Most recently, he oversaw the wine
making at San Luis Obispo’s Tolosa Winery.
His 10 years of experience also includes time
in Oregon’s famed Willamette Valley.
The changes at the winery began in August

2007 when Sapphire Brands purchased Eos.
One of the first priorities of Jeff Hopmayer and
his partners at Sapphire was to launch a $3.8
million, state-of-the-art solar power project.
“At Eos, we believe strongly in producing
our wines in a way that is friendly to the land
and the environment as a whole,” said
Hopmayer. “From the first day, we knew that
investing in a solar power system was one our
highest priorities. Because of the abundant
sunshine, Paso Robles is the perfect place to
harvest solar power and utilize it to create our
award-winning wines.” Eos is the first and
largest winery on the Central Coast generating 100 percent of its energy using solar
power. The system provides the electric and
heat energy for both the winery and the
visitor center.
“Jeff was really passionate about putting
this system in,” said Laurel Rowan, the
winery’s marketing director. “It reflects our
commitment to sustainability and our
commitment to trying to give back and to
limit our footprint.”
Rowan said the installation of the alternative energy system is symbolic of a new
overall energy infusing the winery. With its
stately, Italian-inspired architecture and foun-
tain, surrounded by lush gardens and picnic
areas, and its convenient location just off
Highway 46 East, Eos is a natural stop for
visitors to Paso Robles wine country.
Rowan said the winery has developed a
number of events to enhance visitors’ experience at Eos. Art exhibits, live music and a
series of blending workshops are all part of
the events calendar.
“We’re really trying to feature a theme of
celebrating life,” Rowan said of the winery’s
activities. “Art, music, education. They’re all
part of the overall experience for our visitors.”
There’s also a self-guided tour, which gives
guests the chance to see first-hand some of
the behind-the-scenes action of a winery.
Depending on timing, visitors might see a
bottling line in action or watch grapes being
crushed.
“We’re trying to bring the education
element into the tasting room,” said Rowan.
Additionally, guests can learn about how
the solar-power panels work.
Carlson said the owners’ commitment to
sustainable energy fits naturally with his
personal commitment to sustainable agriculture. As winemaker at Eos, he works with

that are planted primarily to
Petite Sirah, Cabernet Sauvignon,
Zinfandel, Chardonnay and
Moscato.
In 2008, Eos produced nearly
200,000 cases, said Rowan,
nearly double the 120,000-case
production of 2007.
Petit Sirah and Chardonnay
are the flagship varietals at Eos,
and are the backbone of the
winery’s ultra-premium lineup
bottled under the Cupa Grandis
label.
With the introduction of its
“Lost Angel” label, the winery is
offering a mainstream lineup of
quality, affordable wines. Sourced
from some of the finest vineyards
between Paso Robles and Santa
Barbara, the “Lost Angel” wines
are fruit forward. Among the
premier releases of the label are
100 percent varietals Chardonnay and Muscat Canelli,
along with a Cabernet Sauvignon
blended with Petite Sirah,
Cabernet Franc and Zinfandel.
There is also a blend, named
“Mischief,” that features Petite
Sirah, Zinfandel and Sangiovese.
The expansive tasting room
has changed, as well. A “Mediterranean marketplace” features
gourmet foods and a gift shop.
Visitors can choose to taste from
the complimentary list –
choosing four wines from a list
that includes Eos’s popular “Tears
of Dew” Late Harvest Moscato.
Otherwise, guests can sample five
wines from the reserve tasting list
for a $10 fee, which includes a
souvenir glass.
The Eos Estate Winery tasting
room is open daily from 10 a.m. to 5
p.m. (It remains open until 6 p.m. on
summer weekends.) It is located
about four miles from downtown
Paso Robles along Highway 46 East,
off Highway 101, just east of Hunter

Clayhouse Opens New Tasting Room in Downtown Paso Robles
The number of wineries in the Paso Robles
viticultural area has more than tripled in the
last eight years. And the reason for the boom
is clear: grapes love the Central Coast.
Cabernet Sauvignon is the most widely
planted variety in the area, but in the last few
years, Rhone varieties have gained in popularity. And then, of course, there’s Zinfandel.
Folks say the reason Zin grows so well in
Paso Robles is because of the hot summer
days. But that’s not the whole story. Sure,
grapes need heat to ripen, but more important in Paso is that the area has the largest
diurnal temperature swings in California –
that’s the change from the daily high to the
daily low temperature. It might be toasty at 3
p.m., but soon thereafter, marine air gets
sucked east from the Pacific, heads through
the Templeton Gap and up the Salinas River,
and cools down the vineyards. Grapes need
those cooler temperatures at night to help
retain acidity, the key to great balance in the
finished wine.
Perfect grape temperature is just one of
Paso’s quality secrets. Another is the soil itself.
Ever since the Franciscan missionaries came
up the Central Coast and planted the first
wine grapes, growers have known that area
soils are something special. Paso Robles has
more than 45 different soil “series,” or types.
Even small vineyards usually contain more
than one type of soil. Additionally, the area
has a predominance of calcareous soils, atypical of other California viticultural ares
(calcareous soils can stay cooler and thereby
help retain natural acidity in the grapes).
All of that diversity in one small area
provides plenty of opportunity for new kinds

of grapes, new wine styles and new ideas to
take root. You’ll find plenty of Cabernet,
Syrah and Zinfandel in Paso, but it’s also fun
to seek out more obscure varietals, like
Picpoul or Tannat. Dry rosés are a special treat
for a picnic in the plaza, and white Rhone
blends really refresh on a warm summer day.
At Clayhouse, one of the most popular
“new” wines is the Zinfandel-based blend,
Adobe Red. It’s made of Zin, Syrah, Petite
Sirah and Malbec. The Zin and Syrah provide
plenty of forward fruit, the Petite and the
Malbec add body and character. Adobe Red’s
companion, Adobe White, contains a grape
variety we’re not even allowed to name (on
the label, anyway). It’s called Princess, and is
a table grape variety that has incredible melon
and tropical fruit character. It’s blended with
Adobe in the Area
The Adobe name, and indeed, the Clayhouse brand name itself, pays tribute to a renovated adobe structure that sits in a vineyard
just east of Paso. In the 1800s when San Luis
Obispo County was settled, many of the structures were made of adobe bricks. Wood – and
trees – were precious and adobe mud was free.
A small adobe structure requires many
bricks. A one-room building could use as
many as 5,000. Some of the original California missions contained as many as 36,000.
Near Paso Robles, some beautifully
restored adobes can still be visited. Groups
like the Friends of the Adobes and other local
historical societies have played a big role in
making sure our early heritage is preserved.

Clayhouse recently joined other area
wineries and opened a tasting room in downtown Paso Robles at 849 13th Street. You can
try the Adobe White and Adobe Red, along
with their other Paso Robles and Estate wines.
The tasting room is open daily from 11 a.m.
to 6 p.m., but on the Friday of ZinFest they’ll
stay open until 8 p.m. for an evening of
Zinfandel, cheese and chocolate pairings
(small fee). ZinFest Saturday will feature
complementary tasting, and a 50% discount
on wine purchases for the first 100 visitors.

Winemaker Profile: Adelaida Cellars

T
erry Culton had no complaints
working as assistant winemaker at San
Benito County’s Calera Wine Co.,
refining his education under Josh Jensen,
one of California’s most respected makers of
Pinot Noir.
But when Adelaida Cellars offered him a
chance six years ago to return to the Paso
Robles region – where he worked as a selfdescribed cellar rat for Wild Horse Winery
in the early 1990s – Culton knew it was
time to strike out on his own.
“It was a chance for me to do my own
thing,” said Culton. “I knew I would have
total creative freedom.”
Plus, he said, it gave him the chance to
work with Adelaida’s HMR and Viking
Estate Vineyards. Paso Robles isn’t generally
noted for its Pinot Noir, but Adelaida’s HMR
vineyard sits more than 1,700 feet above sea
level and is a mere 16 miles from the Pacific.
It is, noted Culton, the oldest vineyard
planted to Pinot in San Luis Obispo or Santa
Barbara counties, having been established in
1964 by Central Coast wine pioneer Dr.
Stanley Hoffman.
“Calera was a great place to learn, but the
opportunity to work with HMR and Viking
vineyards was irresistible.”
Culton believes the austere, calcareous

soils of the vineyards produce superior
grapes.
Upon arriving at Adelaida, which was
purchased in 1991 by the Van Steenwyk
family, Culton made some immediate changes.
One of the first steps he took was scaling
back on the use of oak.
He switched from American to French oak
barrels, with only about 25 percent new oak.
Oak should spice the wine, said Culton, not
overwhelm it.
“I want our wine to give you something
from the beginning of your palate to the end
of your palate,” said Culton. “I want people to
taste our terroir, not cover it up with oak.”
Under Culton’s guidance, Adelaida
reduced the yields of its sustainably-farmed
vineyards, producing fruit with more concentrated flavors. Culton also uses only native
yeasts during fermentation and the wines are
unfiltered.
“I believe in minimalist handling,” he said.
Culton didn’t grow up thinking he would
become a winemaker. He graduated from
Humboldt State University with a psychology
degree, but changed careers after moving to
Paso Robles in 1991 so his wife could attend
Cal Poly.
He wound up working for Wild Horse
Winery, where owner/winemaker Ken Volk
gave him the job of cellar master. It was there
that Culton first worked with Pinot Noir
grapes from HMR Vineyard, which Volk
purchased.
Volk, said Culton, was “an incredibly
gracious man” who became somewhat of a
mentor to Culton and others working at Wild
Horse (including Jon Priest, now the winemaker at Napa’s Etude.)
“He’s responsible for a lot of us being where
we are today.”
Culton continued learning his craft during
stints in the Anderson Valley and Oregon’s
Willamette Valley, before landing at Calera.
Besides Pinot Noir, Culton is producing
Rhone-style reds and whites that are gaining
fans and generating positive notices. Culton
said 85 percent of the grapes he uses are
estate-grown and he expects Adelaida to be
100 percent estate-grown within a few years.
And Culton is happy to be back in Paso
Robles, which he said retains the close-knit
feel among winemakers that was present 15
years earlier, when only a handful of wineries
existed.
“I think that’s what makes the Central
Coast so special.”

Located on Higuera Street with its patio sitting luxuriously above San Luis Creek, Novo restaurant is fusion
cuisine with a local heart that has captivated this Central
Coast town.
The menu is a stunning blend of flavors from around

fusions. Chef Justin Gabbert has teamed with owner Robin
Covey to create a Tapas selection along with a few large

“new,” is large and features a vast selection of local Central
Coast wines.
Seating more than 160 people, if necessary, the large
patio, the inside dining room and the basement dining
room are all simple and stylish with inviting warm colors
and intimate settings. The building itself is one of the original San Luis Obispo turn-of-the-century brick structures
with a full-sized basement and hardwood floors.

COSTA DE ORO WINERY

T
he first three requirements of real estate,
they say, are location, location and location. If that’s the case, then Costa de Oro
Winery in Santa Maria has mastered real
estate school as well as crafting beautiful
Central Coast wines.
The Costa de Oro tasting room simply
cannot be missed. Whether driving north or
south on the 101 freeway through Santa
Maria, the little building that serves as the
winery’s tasting room as well as a gathering
place and a place to experience some of the
Central Coast’s best produce, sits right next to
the Main street off ramp on Nicholson
Avenue.
The unique location and the home-style
atmosphere is what winemaker Gary Burk
and his family have been emphasizing since
the production of Costa de Oro’s first wines in
1994. Burk, a trained musician who got
bitten by the wine bug after a chance meeting
and following friendship with Jim Clendenen
of Au Bon Climat, produced one barrel each
of Chardonnay and Pinot Noir under Clendenen’s guidance. Now, almost 15 years later,

Costa de Oro consistently rates scores in the
’90s with Robert Parker and James Laube as
well as Gold Medals from all over the state of
California including the Santa Barbara and
Orange County Fairs.
Apparently, though, the already unique
tasting room, a veritable Central Coast landmark for wine lovers from across the United
States, wasn’t quite enough for Burk. “We
want to provide a little more of a lounge feel,”
Burk says. “We want folks to be able to sit and
relax a little more and enjoy a glass of wine
and maybe some cheese and crackers or
snacks.” Until now, there have been no seats
in the tasting room, only the circular bar at
the room’s center. But an experiment last
summer with bringing musicians in on Friday
nights to perform live and share an evening of
relaxation, wine and entertainment, went
over well with customers, so Burk is making
changes.
“We call them ‘Friday night wine downs’,”
says Burk. “It’s a chance for folks to hang out
a little and have some fun.” The events start
at 4:30 and go to 7:30 p.m. Wineries aren’t
known for their late night hours. Since Burk’s
first love was music, he gets a chance to bring
his two passions together and has even been
known to play a bit on Fridays himself, Burk
is an accomplished guitarist.
The New Year is seeing great things for
Costa de Oro’s wines as well. The ’07 vintage,
which was, by all accounts, a quality harvest,
is being released and among the most impressive of the line up are Burk’s Santa Barbara
County Pinot Noir and Chardonnay. Burk will
also release two estate reserves wines which
include Reserva Dorada, which means
“reserve gold” Chardonnay and Oro Rojo,
which means “red gold” Pinot Noir. Both of
these wines see more new oak than some of
the other wines and are given a bit more time
to age.
2009 holds a great many promises for
Costa de Oro and the Burk family, but of
course, it’s all the more promising for those
who stop by one of the most unique tasting
rooms in Santa Barbara County, pull up a new
chair, listen to some great music and uncork a
classic bottle of Costa de Oro.

Paso Robles Zinfandel Festival Features Classic American Varietal

The 2009 Paso Robles Zinfandel Festival, presented by the Paso
Robles Wine Country Alliance, is slated for March 20-22. Tickets are

Zinfandel vines were planted in Paso Robles beginning in the

known as America’s Heritage Wine Grape, a varietal as diverse as

Carina Cellars Opens New Paso Robles Tasting Room and Winery

C
arina Cellars is a young winery, starting really in 2002 and
picking up steam to become one of the most renowned
producers of Central Coast Rhone varietals, and its youth might
be the key to how the winery is expanding and growing.
Owner David Hardee, wine maker Joey Tensley and the crew of
Carina have lurched northward and have opened Carina Cellars’ Paso
Robles winery while maintaining the Los Olivos property and growing
it as well.
The new Carina Tasting room is so far a couple of barrels and a slab
of wood between them, but that will change as a new tasting room is
in the works as well. Carina’s Los Olivos tasting room continues to
pour their hearts out while showcasing talented local artists and
providing customers with a glimpse at what Tensley has called
“hands-off winemaking.”
“I like to let the vineyard speak for itself,” says Tensley. “It’s all about
the resources.” Tensley must have convinced Hardee of this as well
because the result is a 76-acre estate in Paso Robles with 30 planted
acres of vineyard with all of the Carina favorites.
“We’ve got Syrah, Grenache, Mourvedre, Cabernet Sauvignon,
Viognier and some Rousanne and Marsanne planted so far,” says
Carina’s special events coordinator Carolyn Turner. “Joey is still our
head winemaker but he has an assistant, Ryan Saccomano, who
helps Joey out and will spend more time in Paso Robles as well.”
The Paso Robles winery is slated to be fully open by late February,
though it has been open for sometime by appointment only. The
wines are all made Tensley’s way, allowing the vineyard to do the
talking and creating flavorful, nuanced and complex wines focusing
mostly on Rhone varietals, but with a few twists as well. Carina’s
Viognier continues to be among the best selling Rhone white varietals on the Central Coast and Tensley is widely known now for
making New World wines using Old World techniques, like
blending a bit of Viognier in with Syrah to create a more balanced

and full-bodied wine.
Carina is offering proof that even in tough economic times, there is
still room for expansion and growth. Indeed, it’s what makes tough
economic times a thing of the past. The Hardees and winemaker
Tensley along with the Carina employees have created wines that are
in demand for all the right reasons. The new winery is located at 2325

or most people, baseball is
nothing like wine. But for
Tom Hinkle, the two are
interrelated. Tom was a former
Major League Baseball scout,
visiting high school, college and
semi-pro games, searching for the
best young talent out there. “But I
never really had time to taste
wine,” Tom said. He was busy
scouting, though occasionally
he’d stop by wineries in Napa just
to look around. He planted vineyards on his property in Paso
Robles in 1997 and began the
wine game while still scouting
across the U.S.
Having since retired from 28
years of scouting, Tom and his

wife Carol now spend their
time farming, making and
selling wine and running the tasting room.
The tasting room is a red barn with a trellised patio covered with grapes
that provide shade. The views from this covered porch are vintage Paso
Robles; gentle rolling hills, punctuated with mature oak trees, brown grass
and glimpses of nearby vineyards. Tom sprayed the interior walls with a
protective coating to help keep it cool inside and set up a functional, if
modest, tasting area. The wood bar is all hand made, worn and full of character.
In addition to the wines, Tom produces olive oil from trees on his 63acre property. He just likes the challenge of something new. Rio Seco is a
hands-on winery with Tom and Carol doing just about everything themselves. That includes Tom learning the art of winemaking. “Do I have formal
training? No,” Tom grins. “Hours on the crush pad? Yes!” Tom’s a believer
that you learn by doing, something he picked up at college at Cal Poly
Pomona. “Making wine isn’t rocket science,” Tom says. Plus there’s the
advantage of having a supportive winemaking community near him. And
perhaps the toughest part of making wine? “You ruin a lot of clothes,” he
says.
The wines run the gamut from a light Roussanne to a hefty white blend
called VIO RIO, a blend of Orange Muscat and Viognier, which the Hinkles
affectionately call “mama’s moonshine” because of its 16.6 percent alcohol.
Rio Seco is especially known for its Cabernet Franc as well as Syrah,
Cabernet Sauvignon and their award-winning Zinfandels. Their reds are all
mild tannin wines, meant to be consumed soon. Four times a year they offer
a Texas Hold ’em tournament where the grand prize is a free one-year wine
club membership.
“Not only do we have Texas Hold ’em … we are best known for our Friday
Night Concert Series,” Tom adds. “Live music, barbecue and wine for $8 – all
summer long. We’ve been doing this for six years now. It’s family friendly and
really great music!”
The tasting fee is $5 and is applied towards any wine purchase. No wines
are off limits, so if it’s open, the Hinkles will pour it. Rio Seco Vineyard is

These tastings have evolved to become the premier wine event
in Southern California introducing wine lovers to the newest,
“hottest” wines being produced in the county while also
providing opportunity to secure allocations of established
favorites. Attendees will enjoy sumptuous hors d’oeuvres
prepared by Wine Cask executive chef, John Pettitt, formerly
from the 2-Star Michelin restaurant Mélisse.

Cantara Cellars is a local
winery producing a broad selection of award-winning red and
white wines right here in Ventura
County. Grapes were sourced
from the Lodi appellation in
Northern California to produce
premium wines.
Cantara Cellars began as a

small winemaking hobby in the
garage of Mike and Chris Brown’s
Moorpark home. With their
home located in the “Cantara”
section of the Serenata development it only seemed fitting to
name the garage-sized winery
“Cantara Cellars.”
Beginning with 250 pounds of
Chardonnay hand harvested from
Mike’s parents’ vineyards in Lodi,
California, they fermented their
first 18 gallons of wine. Over the
next four years they carefully
selected additional wine grape
sources, increased their knowledge of winemaking, refined their
wine style, expanded grape varieties and increased production.
This culminated with the opening
of a public tasting room in
October 2007.
Their 2300-square-feet production, cellaring and wine
tasting facility is open each
weekend from 11 a.m. to 5 p.m.
and other times by appointment.
