Happy New Year, Everyone.
May all of your dreams come true in 2016. I’d like to take this opportunity to thank all the community
members for making the Hamlet Windwatch the premiere community on Long Island. As we begin the
New Year, we at the Windwatch can look forward to twelve great months of community-style living. The
community has never looked better, the camaraderie has never been stronger, and the future has never
been brighter.
Phase I of the Verizon FIOS installation is just about complete. The conduits have been run and they’re in
the process of hot-patching the street cuts that were made in order to facilitate installation. Next up is the
splicing of fiber optic cable. Following that, we should get some word on an availability date, plans, and
pricing. Stay tuned.
You may have noticed that the entrance section of road off Motor Parkway was recently patched. Just an
FYI, those repairs came out of Holiday Corp’s pocket and not ours. Yay! It’s a small victory, but a moral
one nonetheless.
It’s sixty-degrees outside my window as I compose this message. I can’t forecast the rest of the month but if
we avoid snow through the end of the year we’ll have a nice chunk of cash to add into our reserves. Looking
down the road, the community will require road resurfacing in the not too distant future, so it’s important
that we sock away all the money we can.
All is quiet on the Holiday Towers project at this moment but, with a planned spring groundbreaking date,
I’m sure there will be news to share with you in the near future.

Thinking of Selling Your Home or Condo…
Although we live in this beautiful community, eventually residents want to sell their home or condo. There are some very
important steps you must take before leaving us:
2 weeks before your move contact Fairfield Properties 631-499-6660 and inform them of your move. At that time they will
ask you for a $500 refundable deposit just in case there is any damage done by your moving truck. If all is ok, you will be
mailed a check after the move. Remember: No trucks over 35’ will be permitted to enter the community. Please share this
information with your realtor so that they can inform the purchaser of your home/condo as they will have to pay the $500
for their truck as well.
There is also an administrative fee to move out: $250 to HOA for a home or condo. $750 to Condo Board for condos. This
can be paid ahead of time for a seamless transaction, or can be collected at the closing table.

What if a family member is or becomes allergic to the family companion?

The most common pet allergens are proteins found in old •
skin shed constantly and in saliva. Any type of animal can •
trigger an allergic reaction, but cats seem to cause a stronger
reaction. Some pets can be less irritating to people who suffer
from allergies, but this varies case by case. Generally, people
who are allergic to pets can simultaneously be allergic to other
irritants such as mold, dust and pollen which are often found
inside the home. Some families choose to improve their
environment rather than remove the pet from the home:
• Create an allergen-free room by preventing your pet
from entering the room

furniture with cotton sheets and wash them frequently
Vacuum and dust more often.
Use an air purifier with a HEPA filter
Use low dust kitty litter in a closed litter box.
Use anti-allergen room sprays.
Designate a non-allergic family member to bathe, brush
and comb the pet and use a product formulated to
prevent dander flaking into your home environment.
Check your pet's skin for evidence of dermatitis which
can accelerate skin and fur shedding.
Wash your hands after touching your pet and choose
clothing to be worn only when you are in close contact
with your pet.

Let’s fill in the pages and write the best book ever!
We were very busy this past year with many new and old
activities.
The year went out with a bang with the holiday party. This
year we had a record number of people attending. Although
many snowbirds were not around, we had over 100 people
there. Brenda Mollins did a fabulous job choosing the menu,
collecting money, and helping to work out all the details.
The food was fabulous. The cocktail hour included some
old reliables like fried calamari and assorted raviolis as well
as some new dishes including an Asian salmon. The filet
mignon was fabulous as was the stuffed shrimp. The desserts
were to die for. As usual, the centerpieces were classy and
beautiful thanks to Eileen Cohen and Deirdre Kline. Happy
feet of happy friends filled the dance floor. Many newbies
attended.
December was pretty quiet at the Hamlet other than our
usual activities of yoga on Tuesday nights at 7:30 p.m. and
Zumba on Sunday mornings at 9:30. Both instructors are
wonderful. They’re great at showing you what to do if you
need to modify. Try out a class. I assure you, you will want
to go back for more.
Our annual winter dine-around is at San Marco Ristorante,
658 Motor Parkway, Hauppauge on Sunday, January 24 from
6-9 p.m. Join your neighbors and friends for a 3-course
dinner including soft drinks for $38 per person including
tax and tip.
Dinner buffets are planned for Wednesday, February 17th
and St. Patty’s Day, Thursday, March 17th. We will probably
be collecting the money for the buffets in advance to try to
do away with the lengthy wait for the checks and payment
at the end of the evening. On the night of the buffet, only
drinks from the bar will need to be paid for.
Looking ahead to the rest of the year, we hope to have
another Casino Night and Halloween party. They both a lot
of fun and well received and people are already asking about
next year.
The Social Committee is having a good time brainstorming.
I should have acknowledged the committee in last month’s
newsletter for all their help and dedication. I will instead
start off the year by saying “thank you”! If anyone would like
to join the committee or just sit in on a meeting here or there,
or just help out with a party or dinner, you are welcome.

under Taylor. Fillmore did not meet Taylor until after they were elected.
When he moved into the White House, it didn’t have a Bible. He and his
wife, Abigail, installed the first library. He installed the first bathtub and
kitchen stove in the White House. Fillmore could not read Latin and
refused an honorary degree from Oxford University, saying a person
shouldn’t accept a degree he couldn’t read.
William McKinley: January 29, 1843 - Attended Allegheny College. On February 15 1898, the U.S. battleship Maine was
blown up in Havana harbor. On April 25, the U.S. declared war on Spain. May 1, Admiral George Dewey led a major U.S.
victory over Spain in the Battle of Manila Bay. February 6, 1899, the U.S. Senate approved the Treaty of Paris, ending the
war. Spain ceded the Philippines, Puerto Rico and Guam and agreed to the independence of Cuba. September 6, 1901
Leon Czolgosz shot McKinley twice in the chest at point blank range while visiting the Pan-American Exposition in
Buffalo, New York. He died on September 14 whispering his favorite hymn “Nearer my God to Thee.” He was the first
president to use the telephone while campaigning. He is thought to hold the record for presidential handshaking - 2,500
per hour. McKinley exercised very little. Had he been in better shape, his doctors said he might have survived his assassin’s
bullets.
Franklin Delano Roosevelt: January 30, 1882 - Graduated Harvard College (1903) Attended Columbia Law School.
In 1933 Roosevelt launched the "New Deal" relief measures, revived the banking industry, and delivered the first of 30
“Fireside Chats.” In December the 21st Amendment, ending Prohibition, was ratified. In 1935 the Social Security Act was
passed and the Works Progress Administration (WPA) was passed. In 1936 he was reelected in a landslide over Alfred M.
Landon. In 1939 Germany overran Poland and war was declared in Europe. In 1949 reelected to an unprecedented third
term. December 7, 1941 Japan launched a surprise attack on Pearl Harbor. Congress declared war against Japan the next
day. June 6, 1944, D-Day, Allied forces landed on the Normandy coast of France, the turning point of the war. . He was
related by blood or marriage to 11 former presidents. In 1921, at the age of 39, Roosevelt contracted polio, which left him
without the use of his legs. A stamp collector, he received the first sheet of every new commemorative issue. In, 1939, he
became the first president to appear on television. Died in office on April 12, 1945.
Richard Milhous Nixon: January 9, 1913 - Graduated Whittier College (1934) and Duke University Law School (1937).
Vice President under Eisenhower. July 20, 1969 Neil A. Armstrong became the first man to walk on the moon. April 30,
1970 he announced that U.S. troops were being sent into Cambodia to destroy enemy sanctuaries. Nixon visited China in
February of 1972 becoming the first president to visit a country not recognized by the U. S. June 17, 1972; five men were
arrested for breaking into the Democratic National Committee headquarters located at the Watergate Hotel. The Vietnam
cease-fire agreement was signed January 1973. October 10, 1973 Vice President Spiro T. Agnew resigned and pleaded
guilty to one count of income tax evasion and Nixon appointed Gerald R. Ford to replace him. August 9, 1974, effective at
noon, Nixon resigned as president, becoming the first president to ever voluntarily leave office. This was a direct result of
the scandal created by attempting to cover up the “Watergate Affair.”

Parmesan Tomato & Spinach Tortellini Soup
Prep Time: 10 minutes Cook Time: 20 minutes Servings: 4
Ingredients
2 tablespoons tomato paste
8 ounces cheese tortellini
1/2 cup parmigiano reggiano
(parmesan), grated
10 ounces spinach, coarsely
chopped
1/2 cup heavy/whipping
cream or Greek yogurt
salt and pepper to taste
1/4 cup basil, chopped

2 cloves garlic, chopped
red pepper flakes to taste

1/4 cup flour (rice flour for
gluten free)
3 cups vegetable broth or
chicken broth
1 (28 ounce) can diced
tomatoes

Directions
1. Melt the butter in a pan over medium heat, add the onion
and cook until tender, about 5-7 minutes.
2. Add the garlic and red pepper flakes and cook until
fragrant, about a minute.
3. Add the flour and cook for another minute.
4. Add the broth, tomatoes, tomato paste and tortellini, bring
to a boil, reduce the heat and simmer until the tortellini is
tender, about 10 minutes.
5. Add the parmesan, let it melt, add the spinach, let it wilt,
add the cream, season with salt and pepper to taste,
remove from heat before adding the basil.
Optional:
1. Puree some or all of the diced tomatoes.
2. Add 2 cups of cooked and shredded chicken or 8 ounces
of cooked Italian sausage to make it even heartier.
3. Replace the fresh basil with 2 tablespoons basil pesto.

Chicken Noodle Soup
1 tablespoon oil
1 onion, diced
2 carrots, diced
2 stalks celery, diced
4 cups chicken broth or stock
2 cups cooked chicken, cut into small
pieces
1 teaspoon poultry seasoning
2 cups egg noodles
salt and pepper to taste
1 handful parsley, chopped
Directions
1. Heat the oil in a large stock pot over medium-high heat, add the onions,
carrot and celery and cook until tender, about 8-10 minutes.
2. Add the chicken broth or stock, chicken and poultry seasoning, bring to
a boil, reduce the heat and simmer for 5 minutes.
3. Add the noodles and simmer until just tender, about 5 minutes.
4. Season with salt and pepper to taste and mix in the parsley.

Winter Woes: Dry Eye More Prevalent in Cold Weather
(BPT) - Our
wardrobes aren't the only things that change when
the weather turns chilly. Our bodies are often affected not
only by the outdoor changes, but inside changes as well.
The body part that receives most of the brunt from winter
weather is our eyes.
While it is difficult to avoid dry eyes altogether during the
winter months, there are several steps that you can take to
ensure your eyes stay soothed while indoors this season.
Help for the home
During the frigid winter months, a home's humidity level
can easily dip below the 30-55 percent range required for
our eyes to stay lubricated. Offset this dry air by using a
humidifier in your home. An alternative is leaving off the
exhaust in your bathroom while you shower.
Also, refrain from using a ceiling fan while sleeping at night,
as drafts can also exacerbate symptoms. To keep this culprit
in check, light a match in the room you are in to find where
the draft is located.
Fill up on fluids
Even mild dehydration can negatively affect how dry your
eyes feel, as cold temperatures can dampen the body's thirst
mechanism and artificial heat hastens tear evaporation.
Keep eyes hydrated by sipping water throughout the day.
Also, increase your intake of fluid-rich foods like soup, fruits
and veggies. Adding a cup of hot tea or water with lemon can
not only keep you cozy on a chilly day, but ensure proper
hydration as well.
Nourish your body
Many clinical studies show omega-3 fatty acids, which are
considered essential fatty acids, may protect adult eyes
from dry eye syndrome. Omega-3s support healthy tear
production and keep eyes moisturized. In addition to
omega-3s, other ingredients like Vitamin A, D3, green tea
and evening primrose oil can significantly accelerate the
time it takes to feel relief. A formula like EyePromise EZ

Watery eye help
In cold and windy conditions, many complain their eyes
water more than normal. Typically the symptoms of watery
