“Scottsdale is an underground mecca for food, and it’s only getting better,” says Beau
MacMillan, executive chef at Sanctuary on Camelback Mountain. “There is a brotherhood
of chefs in Scottsdale. With blue skies nearly 365 days a year, you don’t have bad attitudes.”
MacMillan, who is a native of Plymouth, Massachusetts, found his culinary calling at age 16.
A graduate of Johnson & Wales University in Providence, Rhode Island, he was sous chef
both at the Hotel Bel Air in Los Angeles and Shutters on the Beach in Santa Monica before
being recruited to Scottsdale in 1998. “When I saw Camelback Mountain and the view
from Sanctuary, I knew I had to work here,” he recalls.
Alongside Chef Chuck Wiley, MacMillan opened elements, Sanctuary’s signature restaurant. “Chuck introduced me to his world,” he says. Within a few short years, MacMillan
had cooked at the James Beard House and the Aspen Food & Wine Classic and was featured
in and cooked for Bon Appétit magazine. But celebrity status came when he competed on
the Food Network’s hit series Iron Chef America in March 2006.
“Everyone saw us as the underdogs going in, but I was going to win,” recalls the young New
Englander, who prepared for weeks for that appearance, cooking with his team and sleeping only three hours a night. All the prep paid off when he beat Iron Chef Bobby Flay by
three points: two for presentation and one for flavor.

MacMillan believes he was lucky that Kobe beef was his mystery ingredient. “I knew immediately that I did not want to over-complicate
it, so I reeled it in,” he says. As he does at elements, MacMillan’s five dishes showcased his mastery of simplicity and natural perfection.
“Everything I learned at Sanctuary worked for me,” he says.
The personable MacMillan followed this up with an appearance in December 2006 on NBC’s Today. “That was a blast,” he
confides, adding that he enjoys doing television.
What’s next? “I’m planning to reinvent myself in 2008 at Sanctuary with spa cuisine,” he answers.
As for other passions, MacMillan doesn’t miss a beat. “I used to be an avid hockey player,” he replies. “Now I’m an avid eater.”
Clearly that is hockey’s loss.

A lot has changed in Scottsdale since 1981, but you’d never know it at Don & Charlie’s. Sure,
there are a few more signed pictures and pieces of memorabilia bedecking the walls, and the
TV screens in the handsome bar are noticeably flatter these days. However, from the genuinely
friendly staff and the sports-bar atmosphere (sans the sports-bar food) to the complimentary
chopped liver that’s dropped off as soon as you settle into your seat, Don & Charlie’s still
offers a timeless menu of upscale American comfort foods served in a relaxed yet classy
atmosphere. Co-owner Don Carson wouldn’t have it any other way.
“This is the food I grew up eating in my childhood home on Chicago’s north side,” he says.
In other words, you won’t find exotic offerings and trendy fusion foods on this bill of fare, but
you will find uniquely Midwestern specialties such as frog’s legs, chicken schnitzel sandwiches
and shrimp “De Joghne.” Pronounced like the famed French mustard, this Chicagoan’s answer
to shrimp scampi features shrimp that’s been sautéed in wine, buried in breading, broiled
and then drizzled with a decadent garlic-butter sauce.
Of course, all this is just a prelude to Don & Charlie’s true specialties: house-aged and freshroasted prime rib, char-crusted USDA Prime steaks (don’t miss the heady Roquefort butter
sauce) and fall-off-the-bone tender BBQ ribs – better order a whole slab, or at least pair a
half-slab with a filet, or the sassy wait staff might accuse you of being a lightweight!
Smaller appetites, meanwhile, might want to head straight to the revamped lounge (a.k.a.
Don’s Burger Bar), where $7.95 gets you one of eight fresh-ground burgers (April through
December only) served in a casual atmosphere.
We’d be remiss if we didn’t mention Don & Charlie’s world-class sports memorabilia collection.
Carson, who’s always been a sports fanatic and has turned his restaurant into Scottsdale’s
Spring Training Central, says the collection evolved organically. “We never wanted it to be
forced, like some chain restaurant at an airport,” he says. Instead, this admitted packrat saves
magazines featuring his favorite athletes and personalities, and then simply waits for them to
wander into his restaurant. “They are always amazed when I walk up carrying a 10-year-old
magazine with them on the cover,” Carson says with his trademark grin. “But,” he emphasizes,
“you can’t lose sight of the food. We’re nothing without the food.”
