Supreme Nachos JTM Products: JTM Queso Blanco (75150) Red Fat & Sod Beef Taco (42620) Instructions: Pre-preparation: Ingredients: Quantity: Cilantro/Onion relish fresh chopped .5 C Guacamole, Fresh .5 C JTM Beef Taco Filling (8 oz/portion) 5.0 lbs. JTM Queso Blanco (4 oz/portion) 2.5 lbs Restaurant-style Tortilla Chips (8 cups) 8 oz Sliced Jalapenos .25 C Sour Cream .5 C Tomatoes, Diced 1C Prep Time: 40 min. 1. Heat JTM Beef Taco Filling and Queso Blanco to an internal temperature of 145°F or higher for 15 seconds; (HACCP) and hold at 145°F or higher (HACCP) until ready for service. Cilantro Onion Relish: 1. Dice 1 sweet onion (1/4" dice) 2. Chop 2 Tbsp fresh Cilantro finely 3. Season with vinegar, oil, salt and pepper Yields: 4 To Assemble Supreme Nachos Platter: 1. Arrange chips on a serving platter, overlapping a few layers. Ladle (4 oz.) queso sauce over chips evenly and (8 oz) beef taco over cheese. 2. Cover the beef taco with (.25 cup) diced tomatoes and (.25 cup) sliced jalapenos. Dollop fresh guacamole and sour cream in the center of the nachos. 3. Sprinkle cilantro/onion relish over nachos to taste. Serve immediately.
