A Word from our State Representative
- Claudette Tidwell
Springtime in Tennessee is my favorite time of the year. I hope you have
enjoyed the spring flowers and the warmer weather, after such a long winter. The
following is a brief recap of the Spring 2014 TN ICES Day of Sharing and
weekend, held at the Comfort Inn & Suites in Lebanon, TN.
I look forward to the challenge of leading our Chapter until our new State
Representative can take office, and working with our members in this new role.
If you have any questions or concerns about Tennessee ICES, or ideas for
demonstrations or classes you’d like to see, please contact me at any time. I

RECAP OF THE SPRING 2014 DOS!
Friday: We enjoyed a Mexican potluck supper. Thanks to Cindy Zoesch for
organizing this social hour. A good time was had by all, and it was a great
opportunity to get to know fellow TN ICES members.
Saturday: Sidney Galpern of Simi Cakes held chocolate classes. The TN ICES
Executive Committee meeting was held. Others enjoyed the Lebanon Outlet
Mall and some visited surrounding hotels for an alternate meeting space.
Sunday: Liz Carson won the Early Bird Drawing. This is a free registration at
the next Day of Sharing. Return your next day of sharing registration early and
you may win the next Early Bird Drawing! Throughout the day Mary Jo Manis
oversaw the Silent Auction. The proceeds from this event will provide financial
assistance for those who will be attending the ICES Convention in Albuquerque,
NM this year. The first order of business was the business meeting. Sidney
Galpren and guest assistant, Jay Qualls, then demonstrated an isomalt hot air
balloon scene. Lunch was provided by Betty Dean and we finished up our DOS
with a mini hands-on workshop - “Easter Sugar Eggs” presented by Claudette
Tidwell & Lydia Spencer.
Monday: We finished off the last day of Isomalt classes with Sidney Galpern.

2014 ICES MIDYEAR
MEETING RECAP
Traveling to Omaha with two lovely ladies, Brenda Harrington, KY Representative,
and Debbie Woodruff, ICES Board Member, was truly a joy. While I was in Omaha, I
attended the Representative Meeting and learned a great deal on how issues, concerns,
and motions are made. This is truly an eye-opening experience for anyone willing to attend
this event. Not only do we discuss important topics regarding our organization, but we get
to enjoy a variety of activities as well.
There are always a few activities to add some excitement to the meetings. One of the
most important activities is being able to tour the convention center for the 2015 Omaha
ICES Convention. At this year’s midyear meeting we participated in two fun activities - one
was cupcake canvas painting and the other was an interactive activity with the Board, Show
Directors, and Reps. called “See no cupcake, Hear no cupcake, & Speak no cupcake”. We
were divided into groups of 3 people, one from each group. Together we had to choose an
“evil” and perform various skills on 6 cupcakes, using only the tools given. I am proud to say
my team won! Although there was no “reward” being chosen by my peers as having the
best decorated cupcakes was an honor.
Next year the ICES 2015 Mid Year Meeting will be held in Mobile, Alabama. So start
making your plans now for a road trip together with me to our sister state, Alabama!

We are on the move! As they say when opening a new business “Location
Location” – it’s very important.
Location
As we grow, we want to reach as many people as we can. Since Tennessee is a very long
state, we want to be sure we cover both ends of the state. This will open up more opportunities
within our organization for expansion and sharing the sugar arts experience. We appreciate our
members and we want them to be able to share their knowledge of the sugar arts.
As you know, we have met at the Cedars of Lebanon State Park for several years now and
this past spring we held our meeting at the Comfort Inn & Suites, at 904 Murfreesboro Road, in
Lebanon. Both locations have been good to us, but there was discussion at the recent Day of
Sharing about the possibility of a change in venue, so we will be meeting in Tullahoma, Tennessee
in the fall, and for the 2015 Spring Day of Sharing and the class with Chef Nicholas Lodge.

DEBRA BITTLE
I have had the privilege of getting to know Debra more with each Day of Sharing I attend and I felt
since she was our newly elected West TN Alternate Representative that she was a great choice for our first
Member Spotlight! Here is her story …
“I've been decorating cakes for just over six years. I took my first Wilton class in January 2008. I
sold my first cake at the end of that class - my "class" cake to one of my classmates. During my second class
(February 2008) I made my husband's birthday cake: a two-tier duck hunting cake that included a modeled
duck hunter holding his double-barrel shot gun, a lake with tall grass around it and ducks in flight. Without
a doubt I would do a few things differently now that I've learned a little more, but I am still proud of that
accomplishment.
My teacher told me I would make a great teacher during my second month of lessons, so I began
teaching the Wilton Method while I was still taking classes myself. I continue to take all the classes that I
possibly can. I love to learn. I love to teach. I love to “play” with sugar! From the first hour of that first
class, I was hooked on cake decorating / sugar arts in a big way. From my first Introduction to ICES, I was
amazed at the sharing and caring that was going on, and wanted to be part of such a great organization.

Chef Nicholas Lodge
Little did Nicholas Lodge know that when he
started training to become a pastry chef
where this path would eventually lead him.
The field of sugar art has transported him
around the world, introduced him to Royalty
and celebrities and has opened numerous
doors to exotic locations that most people
only dream about.
The author of over a dozen books and fifteen
instructional DVD’s, Nicholas teaches and
demonstrates his unique skills around the
world. Over the years his teaching tours have
taken him to twenty-six different countries,
and he has introduced sugar art into unlikely
places such as India, China, and Fiji. He is internationally known, not only for his unique skills in
sugar art, but also for the quality of his demonstrations and classes, at which he inspires
enthusiasm in everyone who attends. This reputation has also involved him in judging sugar arts
events around the globe and as one of the original judges of Food Network, “Challenges”
television series.
The base of operation for Nicholas is Atlanta, Georgia where his classroom, warehouse and
retail gallery are all located under one roof.
When Nicholas was inducted into the International Cake Exploration Societe (ICES) Hall of Fame
in 2001, he was the youngest person ever to receive this honor.
Nicholas is a Chef Instructor at the French Pastry School in Chicago where he is part of the
faculty teaching the sixteen-week cake decorating program, “L’Art of Gâteau.”
Currently, Nicholas is a spokesperson for Albert Uster Imports, and conducts product
demonstration road shows throughout the United States.
In 2010 Nicholas was honored to receive both the Top 10 Cake Artists and Top 10
Pastry Chefs in America Awards. He is the only person to have received both awards in
the same year.

ICES Annual Meeting – Elections and Bylaws Changes
As you know, the elections for your ICES Officers and Board of Directors will be held at
the annual meeting in Albuquerque, New Mexico, on Friday, August 1, 2014. There are
some Bylaws amendments being proposed at that time as well.
If you are unable to attend this meeting, you can still let your voice be heard. You can
use the proxy form below to allow someone who is attending the meeting to cast your
votes. Also below is a list of Tennessee members who are attending the Convention.
You can send your written proxy to any of these members. Make sure you have

About Our Organization…
The Tennessee ICES Chapter started as a sharing group in 1986, and we
have met twice a year in the Middle Tennessee area since then to share the
sugar arts experience.
We hosted the ICES Convention in 2002 with a lot of help from our ICES
neighbors, and became an ICES Chapter in 2003. One of our members,
Leah Langford, has served on the ICES Board of Directors and as ICES
President.
We continue to bring you opportunities for caring and sharing in March and
October every year.
