CAVIT Cavit today Cavit is a second-level co-operative, in other words a co-operative of co-operatives, which brings together 11 Trentino’s co-operative cellars. Cavit has over 4,500 winegrowers amongst its associate members, who represent 60% of all wine production in Trentino. Both wine and sparkling wine cellars are located in Ravina, just outside Trento, the capital of Trentino. The company’s representative centre is Maso Toresella, an old villa surrounded by vineyards. Founded in the sixteenth century by the Prince Bishops of Trento who used it as a summer residence, it covers a total area of 6.5 hectares on the banks of Lake Toblino and is one of the “masi” (rural estates) with the most history in the whole Trentino. Cavit today operates mainly on three fronts: research, production and sales. Cavit co-operates with the most specialised national wine research institutes to provide its members with support and assistance during the various stages of production, in order to improve the quality of their wines. The best products of the member co-operative cellars are examined and selected in the large facilities in Ravina. Here they undergo strict controls at every stage of the finishing and bottling process in order to guarantee the excellence of every single brand. Lastly, Cavit pays attention to every stage in the marketing of its wines through carefully-targeted marketing strategies and policies. These include entering products into the most important and prestigious wine competitions around the world. Cavit’s commitment is to continuously and consistently strive to produce high quality products and disseminate knowledge about Trentino’s wines and their traditions whilst respecting the environment and supporting the growth of its winegrowers in order to maintain the wealth that this growth generates in, and for the benefit of, the local area. 1 CAVIT S.C. The numbers The turnover for the last financial year, June 2011-May 2012, of 153 million euros, increased by +1% against the previous year; net profits significantly rose to 3.4 million euro, with a further strengthening of Cavit’s financial standing which makes the company even more stable and balanced, confirming its high performance among within the sector . 75% The Cavit Group makes 75% of its annual turnover abroad; its products are exported predominantly to the USA, where Cavit is the number one Italian brand (source: Nielsen data), as well as to UK, Germany, North Europe, Switzerland, Belgium, Austria and Asia, where Japan and China are increasingly playing a leading role. Member cellars Cavit’s capacity comes from the network of the 11 member cellars, which have inherited the values of the Trentino winemaking legacy and are specialised in specific wines from the best areas. CAVIT Some history The image that best represents Cavit, a large co-operative comprising many small traditional producers, is that of the vine that only produces quality grapes if the roots and the other parts of the plant play their part. It all began in 1950, as several vine-growers, fully aware of the unique traits of their land and driven by the desire to learn and fully master the techniques and know-how needed to further develop their production, entered into a partnership and formed a Consortium of co-operative wineries, the original nucleus of Cavit. The history The Consortium was founded with the goal of providing assistance to the associated wineries, creating a uniform “culture” of wine across the region and “training” the Trentino vine-growers to choose the best vine planting and training methods, giving advice on how to defend the crops from bad weather, etc. The goals Only later on did the Consortium decide to adopt a more specifically commercial approach, alongside the delivery of purely technical services; thus, in 1957, it opened a cellar to more effectively cater to the changing and growing needs of its members. The expansion In 1964 the present headquarters at Ravina di Trento were built, and in the years after 1977 the premises were extended to their present dimensions (over 80,000 square metres). CAVIT Trentino region Variety and quality The land in Trentino is very special and totally unique in Italy: in a relatively limited area, completely different microclimates and geographical conformations co-exist and integrate perfectly with one another. These differences have led to the creation and development of an enormous wealth of different wine products: the large number of indigenous varieties, the many different methods of cultivation and the huge number of products available have contributed over time to establishing an image of an area which has a natural propensity to produce fine wines. Land of wine The Region in numbers “In Trentino la vite è vita” (“In Trentino the vine is life”) - landscapes, nature and culture. Trentino indeed has boasted a “wine culture” ever since the times of the Gauls and the Romans and over the centuries has confirmed its reputation as a land that is ideally suited to cultivating the vine and producing wines. The predominance of the DOC appellation Trentino is also noted for its predominance of high quality wines: while 30% of production on average nationally goes making DOC (Denominazione di Origine Controllata) wines, here this figures is around 80%, making Trentino number one in the quality rankings. 80% DOC Trentino production Since 1970, the appellations Trentino DOC, Teroldego Rotaliano, Casteller and Valdadige have asserted themselves as quality wines. Moreover, the new appellation “Trentino DOC Superiore” was introduced in 2003 for Trentino topquality wines. Another fast-growing segment is the production of spumanti made according to the “metodo classico” (bottle fermentation), and marketed under the TRENTO DOC appellation, with an average annual production of almost 9 million bottles. 9 million bottles spumante metodo classico 5 CAVIT S.C. CAVIT Sustainability In Trentino the concepts of sustainability and protection of the territory and its heritage are not a recent phenomenon but a way of life for the people and business in the area. Cavit has also integrated these philosophies into its company strategy. Certification Global Standard for Food Safety State-of-theart agricultural techniques Energy savings One of the primary elements of sustainability is certification. As a token of the quality and serious-mindedness of the company and its processes, Cavit has over time maintained and renewed UNI EN ISO 9001:2008 certification, which is essential for a company working on international markets in order to guarantee all the aspects of the company system and its actions. In 2006 Cavit attained further major international certification for businesses working in the foods sector with the BRC (Global Standard for Food Safety - British Retail Consortium) and IFS (International Food Standards) certificates. And last but not least, in 2009 Cavit obtained certification in accordance with international standard UNI EN ISO 14001:2004 Environmental Management System. And last but not least, Cavit recently obtained the AEO (Authorised Economic Operator) certification, issued by the Customs Authorities to companies actively exporting their products to non-EU countries. Pursuant to the Customs Code and UE N. 648/2005 and 1875/2006 guidelines, the company is recognized as a trusted and reliable operator within its commercial activities. For over twenty years Cavit has complied with the “Protocol for High-Quality Wine Production in Trentino”. The aim of this protocol is to establish practices and consistently check that all the work carried out in the vineyard works towards achieving fully sustainable agriculture. Moreover, continuous research and technical innovation have enabled Cavit to apply new, modern farming techniques, which have reduced the use of chemical treatments in the vineyard to a minimum. The most important practices are grassing under the vines and using leguminous crops as green manure, which preserve the nutrients in the soil and reduce the need for fertilisers, as well as implementing organic farming techniques to combat parasites and harmful insects. These also protect the environment and the health of both the plants and humans at the same time. Over the last few years the Company has also made investments in order to reduce energy and water consumption. With a view to cutting CO2 emissions deriving from the consumption of electricity in the various production stages, Cavit has installed 3 large photovoltaic panel systems which generate over 800 MWh a year, thereby enabling the Company to cover all its energy requirements using renewable sources. As far as saving water is concerned, the Company is developing an innovative, hi-tech system as part of the PICA Project, which is able to rationalise the water requirements of the vines taking into account the specific features of the location, area and weather conditions, thereby eliminating all water wastage. 6 CAVIT S.C. CAVIT Winemaking research One of Cavit’s distinctive features is its commitment to training and to the improvement of winemaking practices. For this reason the Company works alongside the most important research centres and institutes and most highly qualified specialists available in Italy. In particular, Cavit has collaborated consistently for many years now with the Istituto Agrario di San Michele all’Adige, also known as Edmund Mach Foundation (FEM), a renowned state-of-the-art wine study and experimentation centre and a privileged observation point for the winemaking world and the Bruno Kessler Foundation (FBK), a scientific and technological research centre which has made a name for itself internationally for its studies into information technology and microsystems. PICA Project A new project of great importance for CAVIT is the one known as the PICA (Piattaforma Integrata Cartografica Agriviticola) project, launched in 2010 in collaboration with MPA Solutions and both Trentino’s centres of research into excellence (FEM and FBK). The study is divided into two parts: › The first involves a detailed analysis of the area planted to vine (soil, climate and the vegetative response of the vine in different growing environments), with the aim of selecting the varieties best suited to the particular technical and environmental parameters of a given area: type of land, altitude, exposure, sunlight, etc. › The second aims to create an innovative Information and Communication Technology system, which will allow the oenologists and agronomists from all the CAVIT wineries to receive information, specific to each vineyard, regarding how to nurture the vine during the various stages (how much water the vineyard requires, the weather and climate conditions, how ripe the grapes are, so that the harvest can be organised properly). The main purpose of this part of the project is to orient vine growers towards an integrated management system of the environment, the landscape and the territory, with a view to guaranteeing complete sustainability, to keep the right balance between the ecological, social and economic aspects. 7 CAVIT S.C. Maso project Maso Toresella is the heart of the cutting-edge oenological research carried out by CAVIT. The sixteenth-century farmhouse and the bishop’s villa, overlooking the Lake of Toblino, are surrounded by a six-hectare vineyard and are the centre of the company’s research activity - it is from this vineyard that the Maso project developed. Since 1988, oneologists and agronomists from CAVIT have been working on this project, with the collaboration of the prestigious Oenological Institute of San Michele all’Adige (FEM). The aim of this project, which today covers 185 hectares of vineyards in all Trentino territory, is to create wines of outstanding quality by identifying all the ideal production conditions. 8 CAVIT S.C. CAVIT The main brands Altemasi A range of sparkling wines produced using Metodo Classico and with the prestigious Trento DOC appellation: Altemasi Riserva Graal, Altemasi Brut Millesimato, Altemasi Brut, Altemasi Rosé and, more recently, Altemasi Pas Dosé. The first is the highest expression of Cavit’s sparkling wine cellar. A millésime produced only with the grapes (70% Chardonnay and 30% Pinot Noir) from the very best vintages and disgorged over sixty months after tirage. The result is a top quality sparkling wine characterised by excellent texture and elegance. Altemasi Millesimato is produced using only the best Chardonnay grapes; disgorging occurs not earlier than twenty-four months as indicated by Trento DOC regulations. A wonderfully balanced, elegant and refined wine that will grace any table. Altemasi Brut is also made from 100% Chardonnay grapes. It has an extremely fine perlage, a straw yellow colour with greenish nuances, a fruity nose with hints of yeast and a well-balanced, full, crisp and lingering flavour. Altemasi Rosé Metodo Classico is a prestigious and balanced cuvee of Chardonnay and Pinot Noir grapes grown on medium-high hillsides at altitudes ranging from 450 and 600 m a.s.l. Altemasi Pas Dosé is a new TRENTODOC, prepared without any dosage and made through a careful selection of grapes which are highly linked to Dolomites territory, where the substantial temperature range between day and night lets grapes have a superior acid content. 9 CAVIT S.C. Lunetta and Accento Produced using the Charmat method, Lunetta sparkling wine is available in two styles - Prosecco and Rosé. Lunetta Prosecco DOC is a lively, light-bodied sparkling wine with a fine perlage presenting luscious fruit flavours reminiscent of apple, pear and peach. Lunetta Rosé with its bright shiny pink colour, intense aroma of berries and elegant palate is the ideal accompaniment to any occasion, from romantic evenings to relaxing moments in the company of friends and family. Another sparkling wine produced using the Charmat method worth mentioning is Accento, a well-balanced blend of Chardonnay and Pinot Bianco, with a fragrant nose and voluptuous palate. I Masi Trentini This top-end-of-the-market, high quality range is the result of research carried out with the aim of identifying the most favourable eco-systems and meticulous vinification techniques. This range also comprises the Maso Toresella Chardonnay aged in barrique, the Maso Toresella Cuvée, produced from a special selection of white grape varieties, Teroldego Rotaliano Doc Maso Cervara, which has also been awarded with the Gamero Rosso “Tre Bicchieri” prize, Marzemino Maso Romani and Pinot Nero Masi Trentini. 10 CAVIT S.C. I Millesimati This range is exclusively for the ontrade and comprises wines with Trentino Superiore DOC status only: Marzemino d’Isera Vaioni, Müller Thurgau Zeveri and Rosso Quattro Vicariati, a typical Bordeaux blend and historic Cavit label produced since the nineteen sixties. Bottega Vinai This range, reserved for bars, restaurants and wine shops brings together a vast assortment of red, white and rosé wines. These exclusive, prestigious products all have DOC status: Pinot Grigio, Müller Thurgau, Chardonnay, Nosiola, Sauvignon Blanc, Gewürztraminer, Schiava Gentile, Cabernet Sauvignon, Pinot Nero, Marzemino, Teroldego Rotaliano, Lagrein Dunkel and Merlot. 11 CAVIT S.C. Mastri Vernacoli This collection has recently been the subject of an in-depth image restyling and a major advertising and communications project. It encompasses all the winemaking heritage of Trentino and includes wines such as the aristocratic Teroldego Rotaliano, Gewürztraminer, Müller Thurgau and Marzemino. Sweet wines The following complete Cavit’s fine dining range: Arèle Vino Santo, Amula Moscato Rosa, Rupe Re Vendemmia Tardiva and Sanvigilio Moscato Liquoroso. Produced exclusively with fully-ripened Nosiola grapes grown in the Valley of the Lakes at the foot of the Dolomites, Vino Santo boasts a history in Trentino that goes back centuries. After selecting only perfectly healthy bunches of grapes, the winegrowers lay the grapes out on traditional racks called “arèle” in the local dialect. These are then left to dry out in naturallyventilated drying rooms and vinified in spring, traditionally during the Settimana Santa, the week leading up to Easter, hence the name Vino Santo. And it is precisely the combination of these tried and trusted processes that enables Arèle Vino Santo, a product capable of revealing the charm of tradition and imparting all the flavours and exquisite sensations of Trentino, to be created. 12 CAVIT S.C.
