THE CHEF’S CORNER
by Michael Parker, Food & Beverage Manager
Fall 2004
I would like some help from you on updating and improving our menu in the Cypress Grill. We have some very popular burgers
named after our first neighborhoods, Lemongrass, Blue Sage, Indigo and Camellia. Rapid growth at Graywood has added several new
neighborhoods and we would like them also represented on our menu. Additionally, we would like to add items to the menu that are
favorites of our residents, members and guests.

If you haven’t been to Graywood lately, come take a
casual drive one weekend and see how much we
have grown.
Two major new neighborhood developments are
under way. Sawgrass is a luxury neighborhood
combining water and golf views. The infrastructure
is being installed and should be complete later this

to open late this year. Over half of the lots are
already under contract.
CHRISTUS has announced plans for their 40-acre
Senior Residential Community called Christus

trigger the construction of the new Graywood Main
Entrance at Big Lake Road. The plans are being
finalized and we will start construction this fall and
complete the entrance in late 2007 or early 2008. The
entrance will be heavily landscaped with native
flowers and trees, rolling grass mounds, sidewalks,
and a fresh water feature with traditional water
foliage, surrounded by Graywood white fencing.

Graywood is the only Master Planned Community in
Southwest Louisiana and our residents have really
welcomed the concept. A Master Planned
Community is governed by a set of covenants that
regulates construction and maintenance of all
properties located within the development. The
covenants of Graywood were in place before the first
home was built, and will always remain in effect to
protect property values.

ADJUSTING PLAY TO
THE SEASON

CypressGrill

Warm temperatures and rain will produce
thicker Bermuda grasses. Shots not in the
fairway and not on the green this time of year
require more thought and planning. From the
fairway, use the GPS to find your yardage to
the front of the green. Select a club that will
clearly cover the front of the green and the
average shot will finish in the front third or
the middle of the green. From this position,
you should be able to two putt. Green side
rough requires wedges with 56 degrees or
more. Practice hitting down toward the ball
to achieve the height and spin needed to
control your pitch shot. Take into
consideration a line into the green that will
give you the best chance to stay on the putting
surface, rather than have a pitch shot from the
rough with very little green to work with.
Hybrids and new wedges designed to help
you in these situations are available in our
ProShop. Talk to me about the right fit.
